Our students worked so hard these past two weeks preparing thousands of blondies to pass out at the Taste of Santa Ana food festival! From weighing and measuring their mise en place to baking, portioning, and packaging, we appreciate the hard work, dedication, teamwork and career ready skills they demonstrated during this big project. This week, Valley Culinary’s Food Truck program rolled up to the Homecoming Carnival to serve a Friday Night Lights menu complete with Pulled Pork Sandwiches, Buffalo Chicken Sandwiches, and Raspberry Lemonade! Thank you to all of the students who volunteered their time to help prep and run the truck! We also loved seeing all of our Valley Culinary alumni stop by, thanks for staying in touch with us and checking out the new truck menu. Our Falcons are THE best, both within and beyond the nest!! by @valleyculinary

The Food Truck program did some very tasty work this Friday! Chef Robert and our Academy students did a great job serving up their scratch made carnitas tacos with salsa roja and cucumber agua fresca at the Valley football game last night. It’s so great to see the Food Truck in action and to see the all recipes come together! From recipe r&d in the classroom to launching the results for customers, they put a lot of hard work into their menu and setting up the truck. Good work team!!

A special shoutout goes out to the students who are among the first food truck event crew participants and who volunteered their time to help!!

One of our graduates and former Prostart competitors Stephanie Minera (class of ‘25) participated in this year’s Culinary Clash competition with the California Restaurant Foundation.

Stephanie was paired with the BJ’s Restaurant and Brewhouse team and worked with them to create an appetizer dish for the competition. She also earned the Golden Cleaver award for her knife skills! Swipe to read more about what inspires her to cook on the next slide!

According to the California Restaurant Foundation, the Culinary + Cocktail Clash is where creativity, competition, and mentorship come together for a great cause.

In the Culinary Clash, restaurant leaders are paired with talented ProStart student sous chefs for a two-month mentorship experience. Together, they develop an original menu item using required ingredients, then bring their creation to life at a high-energy tasting event.

Meanwhile, the Cocktail Clash showcases the artistry of the bar, with restaurant teams crafting signature cocktails that compete for attendees’ votes and bragging rights.

Over the past 15 years, Culinary + Cocktail Clash has raised more than $1.1 million to fund enrichment opportunities for culinary arts students in California public high schools!

Stephanie is currently enrolled in the Orange Coast College culinary program and is continuing her culinary journey there. Great job to Stephanie, the @bjsrestaurants team, and all the students, chefs and industry professionals who came together to raise money for this great cause! by @valleyculinary

Behind the scenes of today’s filming with the @high_school_inc team capturing some footage of our incredible Culinary Academy students! We can’t wait to see the final video. Today was part food styling, part food media, part cooking, and a lot of teamwork! Thanks to the students who helped with our video and a special shout to the Seniors for being interviewed. Cooking food for media projects is a really unique part of our career pathway and we’re glad these students had the chance to experience it. Greta job Falcons!! by @valleyculinary
