Souptober 🍂 Week 2 is officially in session!

This week we did chicken tortilla soup.
This one comes together easily, is loaded with tender shredded chicken, sweet corn, and black beans.

Quick Steps:

🍂Cook chicken slightly not fully.
Sauté onions, garlic, bell peppers, and jalapeños.

🍂Simmer bone broth, fire-roasted tomatoes (or I cute my own), beans, and corn with whole chicken breasts right in the pot.

🍂I made my own taco seasoning but you could just add a packet to make it easy. (Garlic, paprika, chili, cumin, salt, and my favorite st Elmo seasoning.

🍂Shred the chicken, then stir in a half of cream cheese and fresh lime juice for the ultimate creamy finish.

Top with all the crunch, sour cream, jalapeños and dig in!

Save this post for your next cozy night in, and tell me in the comments: are you team sour cream or team avocado on your tortilla soup? 👇

If you’ve been curious about what’s really going on beneath the surface from hormone balance to overall body composition. Getting the actual data changes everything. It was such a great experience exploring my wellness and working with the team @synergenxhealth that makes the process so seamless and approachable.

If you’re ready to check in on your own health goals, definitely look into your local SynergenX!

Welcome to Souptober! 🍂

Every week this month I will be whipping up a cozy, delicious, and comforting pot of soup to kick off sweater weather the right way.

🍲 Week 1: Cozy Lasagna Soup

1 lb ground beef
1 medium yellow onion, diced
6 cloves garlic, minced
1 tbsp tomato paste
1 can Raos Can
4 cups Kettle and Fire bone Broth
1 tsp Italian seasoning
1/2 tsp cumin
1 tsp basil
1 tsp St Elmo seasoning
Salt and black pepper to taste
8 oz lasagna noodles, broken into bite-sized pieces
1 cup heavy cream (or half-and-half)
Fresh parsley and basil for garnish

For the Cheese Mixture (Ricotta Topping):
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
A pinch of salt and black pepper

Instructions

🍂In a large Dutch oven cook the beef and diced onion until the meat is fully browned and the onions are translucent. Drain any excess grease.

🍂 Stir in the minced garlic, seasonings and tomato paste

🍂 Pour in Raos, broth, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 10 minutes.
🍂 Add the broken lasagna noodles directly into the pot. Cook uncovered for about 8 to 10 minutes, stirring occasionally, until the noodles are tender.

🍂 Reduce the heat to low and stir in cheese, parsley, basil and heavy cream. Let it warm through for 2 minutes.

🍂 In a small bowl, combine the ricotta, mozzarella, Parmesan, parsley, salt, and pepper.

🍂🍂🍂 Serve the soup into bowls and top with a generous dollop of the cheese mixture and fresh parsley. Watch it melt into the soup and enjoy!

What kind of soup should we make for Week 2 of Souptober? Let me know your favorites in the comments! 👇

We got the 9FT New Kensington Pre-Lit Tree and it is beautiful. I love that we have an option between the white twinkle lights and colored twinkle lights for the kids.
