Found some lovely velvet shanks last week and had them with some shiitake in a miso broth, with salmon and udon 😋
Velvet shanks are the same mushrooms as the white bunches of enokitaki that you find in the supermarket but those are grown in a dark room and these are wild! #velvetshanks #velvetshank #enokitake #enoki #foraging taken in Isle of Wight by @vanessaspirobilton

Had to be really careful where I trod! Beautiful winter chanterelles underfoot, so well hidden in the leaf litter. #winterchanterelles #cantharellustubaeformis #craterellustubaeformis #foraging #isleofwight taken in Isle of Wight by @vanessaspirobilton

A wonderful night at The Terrace in Ventnor, where @tomfahey_iow turned a simple basket of mushrooms into the most stunning dish! Now to just try and replicate it at home… 🤦🏻‍♀️🥴 @the_terrace_ventnor #theterraceventnor taken in The Terrace Rooms & Wine by @vanessaspirobilton

Went out again yesterday, think I need to get a bigger basket!
Ceps with sage and potatoes 😋
I found a mixture of ceps including summer ceps and dark ceps. All lovely.

Yesterday’s little haul. Too beautiful to cook, carpaccio of porcini with a little shaved Parmesan and a drizzle of olive oil 😋 Already ate half before I thought to take a photo! ☺️ #boletus #boletusedulis #cep #porcini #pennybun #fungi #isleofwight taken in Isle of Wight by @vanessaspirobilton
