Just a few beets left in the ground along with perennial herbs. This year was my biggest garden yet and I am thankful.
I cut off some tomatoes to save for next year. These "suckers" will make for strong beginnings. And I may over winter some peppers. Otherwise, its a wrap!

BBQ beans- COLD PROCESS
Remember- cold food, cold water in canner.
Grab yer' favorite BBQ sauce, seasonings, bean variety and lets go! For my BBQ beans I use a combination of several beans. Drain and dumo beans into a large bowl. I use white navy, pinto, black beans, white cannelli beans and sometimes red beans. For my sauce I used 1 pint jar of cowboy candy syrup and 1 large jar of homemade bbq sauce. I added 1 cup brown sugar, 2 TBS garlic powder, 2 TBS black pepper. 2 TBS smoked paprika.
Cut and fry 1lb bacon. Add 2 chopped onions and several jalapenos and green chilis. Sautee a few minutes until onions sweat. Add to beans and combine together.
Fill jars with beans to 1.5 inch headspace. Debubble, wipe rims and add hot lids and bands.
Load into canner and add water. Processing time begins once water comes to a boil.
Waterbath time is 3 hours.
Pressure Canning time is 90 minutes.
Enjoy!
