WHAT IS PASTURE REARED?

The definition of Pastured is just that - chickens are raised outdoors on open fields. Pasture raised defines where the animals live and that they make use of the pastures provided for them. Pastured chicken meat are not 'grass fed', not in the truest sense of that term because chickens cant survive on grass alone. Chickens are omnivores and that means that like you and me, they need a varied diet that consists of a nutritionally balanced feed that includes fibre, energy and protein along with essential vitamins and minerals.

Chickens are omnivores and their ancestors were originally forest dwellers. Chickens raised on pasture do eat a lot of grass and also get a lot of their nutritional needs from the soil but the main reason for calling them pastured is to best describe how they live their lives while on farm. Pastured farming means always having access to grazing, living in open paddocks with plenty of room and fresh air, no feedlotting and no overcrowding and definitely no indoor confinement.

Our chickens have access to fresh unfiltered mountain spring water all day {and night} along with non gmo feed and ample fresh air from day 1!

Four ethically sourced chicken thighs stretched across a full pot of butter beans, wilted spinach and a lemony broth worth mopping up with some sourdough. Crispy skin on top, all the good stuff underneath.

Gooseberries get treated as a snack, a garnish, or something to scatter over a pavlova. Almost never as the thing that makes the sauce.

This is one of our first collaborative recipes, made in partnership with @foodclubhub , and we cooked it with gorgeous produce from @veldtreared

Glazed gooseberry chicken with charred fennel. Sear the chicken until it is properly golden, blacken the fennel in the same pan, then build a sticky sauce around shallots, a spoon of apricot jam, a dash of white wine and a punnet and a half of gooseberries reduced until it clings to everything it touches. Wild, sticky and slightly tart.

The chicken here is the smaller half of the story. The fennel, the spinach and the fruit are doing most of the work on the plate, and the meat is there in fewer, better pieces rather than as the whole point of dinner. That is mindful meat, sourced with care and plated alongside everything else instead of crowding it out.

Our chicken won double gold! For both @safoodbeverage and @auroratastechallenge !

We knew our chicken is the best tasting BUT now we all know!

When we started we just wanted to grow chickens like your Tannie on the farm did. Chicken that you can taste the difference and chicken that needs no fancy sauces, brines or elaborate recipes to get exceptional flavour!

As we would prize our wholebird as a winner but an entrant only gets a set cooking time with a sprinkle of salt! Wholebird definitely would not work so we chose our prize Deboned Thighs Skin On - and it didn't dissapoint!

Thank you for every customer that has supported us and making it possible to keep growing chickens on pasture and regenerating our soils!

You probably wondering, WHY AM I SEEING CHICKEN POOP?!?!?!?

Well this poop tells us the chicken is healthy and doing great.

This poop also act as a slow release fertilizer for our soil. A vital part of the regeneration process of the pasture and veldt. Our greatest base.

Chicken manure is high in nitrogen, phosphorus, potassium, calcium, magnesium and trace minerals.

They provide what the pasture grasses needs for strong leaf growth, root building and resilience against pests (pests the live chickens also help with!)

Our pasture is an ecosystem where all the inputs make this a thriving nutrient dense system. The way it should be!

PASTURE a big part of what we do!

We cleared an area to expand our pasture for our chicken mobiles. Previously we took the time for the natural grasses to return but this time we had a more planned approach and got @the_pasture_poet to help and formulate a seed mix for us.

@barenbrugsa seeds kicked ass! Mobiles is aproaching this new section and they will love this lush growth!

A lot of you have been asking me about @foodclubhub

For now, here’s a little teaser.

Thanks to @theneighboursfarm for being awareness to the fact that most farmers just don’t get fairly compensated for their hard, regenerative labour.

But i truly believe with enough movement from you and me we can slowly change this and transform South Africa into a nation that is not only regenerating the land and animals; but our own bodies, spirits and communities too.
