I'm still learning.

My go-to recipe (21g in, tight bloom, ~1:2.2 ratio) works great on most washed high-altitude coffees, but every bean has its own story. This Honduran Comsa from @cloud_picker is honey-processed, lower altitude, and made from disease-resistant hybrid varieties I've never dialed before. Cloudpicker's own espresso recipe was tighter than usual (1:2.06 instead of their normal 1:2.2+). That was a clue about what this coffee actually wanted, which I missed.

After 8 shots I landed on 21g in, 50.5g out in 15 seconds and it's delicious. Turns out chasing a finer grind for my expected extraction time was fighting the coffee, not dialing it. When a roaster's recipe looks different from what they usually publish, that's worth listening to before assuming your standard approach will work. Sometimes the lesson isn't in the grind size; it's in reading what the coffee is telling you from the start. ☕️ by @verytallcoffee
