At 17, Vicky Singh left Bandra for England and took his first job delivering pizzas for Pizza Hut. He trained at St. James' Court, a Taj property in London, then at Grosvenor House on Park Lane. He returned to India in 1996, ran a catering company, and took on the catering contract for the USI Club before opening his first restaurant, Out of the Blue in Pali Hill, three years later, a 30-seater among the first outside the five-star hotel circuit to serve fondue. Not everything held. A boutique hotel he planned in Goa never got built, and a restaurant he opened in London's Soho shut down when the pandemic hit, sending him back to India to start over. More than two decades on, he's a partner behind Slink & Bardot, Banng, Mezcalita, and the Koliwada Cocktail Club. "I've tried to innovate and do things my own way, which is part of why, despite being Indian, I've never opened an Indian restaurant; it felt too obvious a choice," he says. The same person who once delivered pizzas in England now builds restaurants across India, and he still hasn't opened an Indian one.⁠

Vik Singh (@vikbardo), the man behind Slink & Bardot (@slinkandbardot), Koliwada Cocktail Club (@koliwadacocktailclub) and Banng, is someone who has spent two decades in Indian hospitality and believes that if you get the room right, the night will take care of itself.

The kitchen and craft cocktail bar Slink & Bardot, located in Worli, has become one of the city’s most-loved late-night rooms, steered by Singh, who is a partner in the business, and his team.

At one point of the evening, it’s a dining room elegantly designed with candlelight, small plates and innovative infusions, suited for conversation at a normal volume. Stay past 11 pm, though, and you’ll watch tables get folded away and the checkered floor turn into a dancefloor with a DJ console wedged into the crowd rather than raised above it.

Music has been a lifelong passion for BALDI. Long before stepping behind the decks, he was drawn to the process of discovering new sounds, exploring different genres, and understanding how music shapes atmosphere, emotion, and energy.

While his professional career led him into hospitality, eventually becoming Executive Chef at Slink & Bardot in Mumbai, music remained a constant creative outlet. As his role evolved from daily kitchen operations into leadership, he finally found the time to pursue DJing seriously and began learning under the guidance of Slink’s resident DJ. Since then, he has dedicated himself to refining his craft through consistent practice and regular opening sets, developing a style rooted in patience, progression, and thoughtful track selection.

The story begins long before the first sip.
Kadak Nimbu Sharbat is our tribute to Mahua, one of India’s oldest spirits, wrapped in folklore, ritual, and a little mystery. Inspired by one of Ravi Raj’s signature serves from Bandra Born, we’ve reimagined it with lime, mosambi oleo and black salt. Then comes the trick. A squeeze of lime turns the cocktail a deep, blood red, a nod to the legends that have followed Mahua for centuries.

Some drinks change colour. This one changes character. by @vikbardo
