@chateaurayak , situated in the historic town of Riyaq in the Bekaa Valley, stands as a living testament to Lebanon’s natural winemaking heritage.

Fifth-generation winemaker Elias Maalouf tends to his family’s vineyards, which stretch across the western Bekaa at the geographical heart of Lebanon. Standing among the vines, one can see all five major mountain peaks that define the country’s landscape - a humbling sight to behold.

His terroir benefits from a unique microclimate and deep red clay soils that nurture a wild yet carefully managed biodiversity - an entire ecosystem partially encircled by prehistoric limestone formations. These natural structures shield the vineyards from the whims of the weather while providing mineral- and nutrient-rich water for irrigation.

Elias’ deep understanding of - and symbiotic relationship with - his land embodies the first and most essential principle of natural winemaking: let the terroir fully express itself. Whether cultivating international or indigenous grape varieties, they are allowed and encouraged to exist and evolve in direct relationship with the ecosystem that sustains them.

Château Rayak’s wines do not exist in a vacuum; they are shaped by the social and cultural context from which they emerge. Each bottle carries a story, echoing the nostalgic chapters of Riyaq’s chaotic yet glorious past:
“Rayak 43,” a tribute to the abandoned Riyaq airfield and its mysterious missing planes.
“Station,” honoring the long-abandoned and crumbling railway stations that once connected our world.
“La Belle Époque,” recalling the glamorous era when the town was celebrated for its prosperity and progress.“Generations,” named for the enduring transmission of indigenous viticultural traditions.
And most notably, the “Château” bottle — embodying the family’s uncompromising defiance and resilience in continuing to make wine through times of war as well as peace.

Just bottled this tiny little microcuvée, and I couldn’t be more delighted with how it turned out! Nadia and I had grabbed a few clusters of Pinot Noir while processing WAJD this year and decided to run a small home experiment. We went whole berry, destemmed, and fermented cool. After two days of maceration (just look at that color), we pressed off and let it complete both primary and malolactic fermentation in glass.

Fast-forward to last week, when a bout of late-night mania took over and I decided to blend the Pinot with about 5–10% of the fig leaf metheglin I started a few months back. The result is this beautifully perfumed, ethereal light red, bursting with bright red fruit, sweet almond, potpourri, and vanilla. A wild, unexpected mélange of aromas and texture that somehow just works!
