🇮🇹 Visit Molise — Italy’s best-kept secret
🍝 Food • Wine • Culture • Nature
🤫 Shh… don’t tell the tourists
POSTS STORIES REELS TAGGED
Here’s how it’s different 👇🏻

📍 @cafedeparis_colliavolturno (Colli a Volturno) 🇮🇹

We all know and love Sicilian cannoli — but not all cannoli come from Sicily.
In Molise, in a small town called Colli a Volturno, there’s a lesser-known version called the Cannolo Collese.

Instead of ricotta, it’s filled with custard (crema pasticcera) and whipped cream (panna), and made with fried shortcrust pastry, creating a completely different texture and experience. by @visit__molise

Recipe for Affunnatielle

SERVES 2

Ingredients

4 eggs
8 oz of shishito peppers
½ onion (thinly sliced)
5 tomatoes on the vine (roughly chopped)
1 tbsp of chopped parsley
4 basil leaves
2 tbsp olive oil
salt and pepper to taste

Method

1. Wash the shishito peppers and remove their stems.
2. Heat 2 tbsp of olive oil in a frying pan on medium/high heat.
3. Add the onion and gently sauté them for a couple of minutes. When it starts to turn translucent, add the peppers, mix well and cook for a couple of minutes.
4. Add the chopped tomatoes, chopped parsley, and basil leaves. Season with salt and pepper. Turn the heat to medium/low, cover with a lid and let simmer.
5. After a couple of minutes of simmering, remove the lid and add 1 cup of water. Stir well and cover again with the lid. Cook for 10 minutes, stirring from time to time to avoid sticking the sauce to the pan.
6. At this point the sauce starts to thicken. With the help of a spoon, create 4 wells in the sauce, crack the eggs one by one and place them in the holes you just created. 7. Sprinkle a little pinch of salt on each egg.
8. Place a lid on the pan and let cook for about 3 minutes, until the egg white sets but the yolk is still runny.
9. Serve immediately, in the pan, accompanied by some good slices of bread.

A little different from my usual hair content, but I wanted to share a piece of me. 🇮🇹❤️

Everyone shows you the Positano Coast, Rome and all the beautiful places Italy is known for… but not many are fortunate enough to know and experience the real, everyday life of a tiny village tucked away in the mountains of Italy. In the smallest region of Italy that they claim “doesn’t exist.” Ma esiste eccome.

Both of my parents immigrated to America from Molise Italy—my dad from Longano and my mom from Isernia. Growing up as the daughter of Italian immigrants, Italy was never just somewhere we went on vacation. It was part of who I was. I’ve spent so many summers here, and that love and connection has only gotten stronger as I’ve gotten older.

Longano will always hold an especially important place in my heart. It’s simple, quiet, slow (sometimes a little too slow 😂), and one of the only places that truly forces my busy mind to slow down. My morning walks here, the familiar faces, the mountains, the simplicity of everyday life… there’s a peace I find here that I can’t really explain and I can’t find anywhere else.

And now, getting to bring my own kids here—to walk the same streets, experience the same little village and stay connected to where their grandparents came from—is something I’ll never take for granted.

So yes, this may not be hair… but it’s a little piece of the person behind the hair. 🤍🇮🇹

Longano, Molise. Forever a piece of me. ❤️

What makes a great pizza dough? Sometimes, the secret is simply time. 🍕🇮🇹

A 48-hour fermented pizza dough is allowed to rest and develop slowly, giving the yeast more time to work while enzymes break down starches and proteins in the flour. This long fermentation helps develop deeper flavor, better texture, and a beautifully structured crust.

When properly prepared and baked, the result can be a pizza that’s crisp on the outside, light and airy inside, with the complex flavor that you simply can’t rush.

Long fermentation is a great reminder that good pizza isn’t just about the toppings. Flour, water, yeast, salt, technique—and time—all matter. by @visit__molise

St. Anthony, watching over everyone who passes through. Because even driving through a tunnel in Italy comes with a little extra protection. 🇮🇹🙏😂 by @visit__molise

Hidden in the mountains of Molise, Pietrabbondante is one of those villages that reminds you how beautiful Italy can be when you slow down. 🇮🇹

Standing high above the town is a cross overlooking the valley, offering breathtaking panoramic views of the surrounding mountains and the peaceful villages scattered across the landscape. It’s the perfect place to pause, take in the scenery, and appreciate the beauty, faith, and tranquility that define this corner of Italy.

While many visitors come for the ancient Samnite sanctuary, the village itself is just as memorable—a place where history, nature, and tradition come together in a truly unforgettable setting. by @visit__molise

Can’t beat that view! 💯

Perched high in the mountains of Molise, Pietrabbondante is a village where breathtaking views, history, and faith come together. 🇮🇹

From the streets of the historic center to the cross overlooking the valley, every step offers a reminder of the deep connection between the people, the land, and their traditions. From this panoramic viewpoint, you can admire the rolling mountains and scattered villages that make this corner of Italy so unforgettable.

While many visitors know Pietrabbondante for its famous Samnite archaeological site, the village itself is a hidden gem worth exploring—quiet, authentic, and surrounded by some of the most spectacular scenery in Molise.

Places like this remind us that some of Italy’s greatest treasures aren’t found in the busiest destinations, but in the small villages that continue to preserve their history, culture, and identity. by @visit__molise

The patron saint of Campomarino (Molise) is Santa Cristina and has been for centuries. ⛪🇮🇹

Each year on July 24, the town comes together to honor her with a solemn procession through the streets, celebrating a tradition of faith, community, and local heritage that has been passed down through generations.

It’s moments like these that remind us how deeply faith and tradition are woven into everyday life in Italy. by @visit__molise
