Hello Kitty cake 🎂

My eldest turned 7 🥳💞 and she wished for a Hello Kitty theme. I made the cake topper (fondant baby!) and it was easier than I anticipated. The cake is covered with raspberry buttercream and filled with raspberry compote and vanilla cream. Happy birthday darling! 💞

Cheeky monkeys 🐒

My little girl just turned one 🥳 I made her this monkey-themed birthday cake as she always reminds me of a baby monkey - cheeky, playful, humorous, full of energy and always on the go 🥰 It was a sponge cake with pineapple filling and frosted with chantilly. Fondant cake toppers.

Happy birthday, my love ❤️

Birthday cake 🥳

It was my birthday earlier this week so I just knew I needed to make a Portuguese sweet egg cream cake (bolo de doce de ovos) 🎂🎈

No matter how many cakes I try, sweet egg cream cake will always be my favourite cake of all time. It is also the most traditional birthday cake in Portugal, albeit decorated buttercream cakes have become trendy in recent years.

So what is sweet egg cream? It’s a traditional cake filling made of mainly egg yolk and sugar. It’s used in many, many different pastries in Portugal but I’ve never really seen it in any other country.

I topped the cake with a fondant dinosaur - I feel that at the ripe age of 38, a dinosaur fits the cake perfectly 😄👵🏼

Strawberry & cream cake 🍓

It’s been a minute since I’ve baked a cake since I’ve been super busy, but a special party calls for a special cake 🎂🥳

This is a typical Swedish strawberry cake with whipped cream 🍓 Recipe by @lindasbakskola

Mini almond cakes 🥰

These mini almond cakes are gluten & lactose-free and made with four ingredients only. Simple but delicious and really moist… Even though they stayed in the oven a couple of minutes too long ✨

Chocolate chip brownies 🥨

I made this for a friend’s bake sale. I’m really pleased with how they turned out. And of course mini pretzels never fail to make everything look cute 🥰

With Halloween season coming to an end I made a very simple vanilla cake with vanilla mascarpone cream and fondant toppers (except the pumpkins, those are from @flyingtigerse) for my 6 year old’s playdate with friends 🎃

How to resize baking pan 📏

Baking pan too big for what you want to bake? I recently tried this hack and it worked like a charm. You do need to make sure that the foil “wall” is sturdy so it doesn’t collapse due the weight of the batter. Use a generous amount of foil and fold it several times 👆🏻

I do love a good baking hack! What’s your favourite? by @vispatklart

The Halloween crowd 👻🎃

I made these cake toppers in fondant for my daughter and friends. To make the ghosts, I used marshmallows underneath the fondant. These were fun to make! by @vispatklart

Pineapple, coconut & rum 🍍🥥🌴

I made this cake for a friend. Not to brag but it was delicious ✨✨ and I am definitely going to make it again!

It was a vanilla sponge (recipe by @emmafontanella - delicious and super moist even after a couple of weeks in the freezer!!). I used the wonderful pineapple, coconut and rum spread by @hafi_delikatess as a filling. I topped it all with a simple whipped cream and coconut chips dipped in dark chocolate. by @vispatklart

Like Christmas Eve for a 30+ mom 🤶😅

Sharing some of my latest baking acquisitions 😍 Nowadays my money pretty much goes to baking stuff and childrens’ clothes. I’m very excited about my cake ring, that allows me to bake cakes in different sizes without having to buy a bunch of pans. Can’t believe it took me so long to invest in one!
