You can’t visit Texas without getting great barbecue. I’m here at @terryblacks_bbq in Austin specifically for their legendary beef rib.

A perfectly smoky bark, and 1.5lbs of seriously juicy, tender meat… it practically melts in your mouth. I rounded out the tray with a couple of sides, grabbed a banana pudding to go (I couldn’t take one more bite), and of course a cold beer to wash it all down. 🍻

Texas barbecue did not disappoint!!

No photo or video can truly capture what it felt like to rappel down a cliff face over 120 feet high, surrounded by Moab’s red rock canyons. 🏜️

Heights aren’t exactly my thing, but that was part of why I booked this canyoneering adventure using the GetYourGuide app. I wanted to challenge myself, and this experience 100% delivered. 🧗🏻‍♀️

My adventure with Moab Cliffs & Canyons started with a hike to beautiful Longbow Arch before a series of four rappels. My guide, Porter, made me feel comfortable, safe, and informed every step of the way. Stepping backward over the edge was easily the hardest part. Then I found my footing, took in the views, and realized I was actually having so much fun! There’s something pretty incredible about doing something that scares you in a place this beautiful. 😱

You don’t need a big kitchen to make yummy meals! This recipe is just as good at home as it is in my RV. (Although my phone snaps aren’t as pretty 🤳🏽)

Crispy chicken thighs and roasted baby potatoes with a creamy honey mustard cream sauce. 🤤

My Zuppa Toscana with White Beans will be on your roster all soup season long - hit the save button so you don’t lose the recipe below! 🥣

Creamy broth, spicy turkey sausage, tender potatoes, white beans, and kale, finished with crispy bacon and Parmesan. I don’t have an Olive Garden near me so I need to make my own unlimited soup/salad/breadsticks.

Ingredients
4 bacon slices, chopped
4 hot Italian turkey sausage links, casings removed (you can use mild if you want)
1 yellow onion, diced
2 carrots, chopped
6 garlic cloves, minced
1 lb baby yellow potatoes, cut into small chunks
1 (15 oz) can white beans, drained and rinsed
1 bunch kale, stems removed, chopped
⅓ cup dry white wine
4 cups chicken broth, plus more of you want it brother
1 cup half & half (use cream for a heavier soup)
1 tsp dried thyme
½ tsp dried rosemary
Optional Parmesan rind and red pepper flakes
Salt, pepper, and grated Parmesan

Instructions

1. Cook bacon in a large pot until crisp. Remove and reserve for topping, leaving 1 tbsp fat.
2. Brown sausage in the same pot, breaking into crumbles. Add onion and carrots; cook until softened. Add garlic; cook 1 minute.
3. Add wine, scraping up browned bits. Simmer 2 minutes.
4. Add potatoes, broth, herbs, optional rind and pepper flakes. Simmer partially covered 15 minutes or until potatoes are almost tender.
5. Add kale; simmer 5 to 10 minutes until potatoes and kale are tender. Add beans during the last 5 minutes.
6. Reduce heat to low. Slowly stir in half & half and warm without boiling. Add more broth if desired. Remove rind, season, and top with bacon and Parmesan.
Optionally- a tiny squeeze of lemon at the end really brightens things up 🍋

Any potato works! Yellow and red hold their shape; russets make the broth thicker. 🥔

I’m just a humble servant here at the pleasure of Their Majesties. Long live King Loki and Queen Hela. 👑 🐾

I’m just here to drive and serve dinner. Opposable thumbs are my only qualification. 💁🏻‍♀️

My bison chili is a recipe I come back to again and again, especially when the weather starts to turn and I’m craving something warm and comforting. My family loves it and so will yours!

Bison is naturally leaner than beef, with a slightly sweet, earthy flavor and a richness that doesn’t feel heavy. It has a clean, savory taste that pairs beautifully with smoky chipotle peppers and warm spices. It’s not nearly as gamey as some people might expect, and you can absolutely substitute ground beef if that’s what you have on hand.

I like using both light and dark red kidney beans for a little contrast in color and texture. Chipotle peppers in adobo bring a deep, smoky heat, while a touch of cocoa powder and cinnamon adds richness, warmth, and another layer of flavor. 🌶️

It’s hearty, full of flavor, and easy to make in one pot. Load it up with shredded cheese, sour cream, scallions, fresh cilantro, and avocado. And my favorite finishing touch… a handful of crunchy Fritos!

While this may not be the best example of my photography skills, prime rib is one of my absolute favorite foods, and the prime rib at @sunset_grill_moab was simply excellent! 🥩

Located in the former home of a uranium millionaire who helped put Moab on the map in the 50s, Sunset Grill has been serving guests since 1993, and it feels like not much has changed since then, in the best possible way! Old school dining with classic appetizers like escargot and shrimp cocktail, steaks, hearty pastas, and seafood dishes. 🍤

An added bonus… sweeping sunset views of the Moab Valley and genuinely friendly staff. 🏜️

Dead Horse Point State Park is one of the most spectacular places to visit in Moab! Perched 2,000 feet above the Colorado River, the park has incredible panoramic views of deep canyons, dramatic cliffs, and the surrounding desert landscape. Unlike the nearby national parks, the trails here are dog friendly! We hiked a beautiful 5 mile loop along the canyon rim, stopping at scenic overlooks along the way. Incredible views around every corner and definitely a must visit when in Moab!

Loki has been here a few times and he loved showing Hela and my sister @n1njababy this great trail! 🐾
