⬇️ French Toast

2 eggs
2 tbsp milk
1/4 tsp vanilla
1/2 tsp cinnamon
Pinch nutmeg
1 tbsp sugar
4 slices sourdough bread
Butter for frying 
Shredded Gouda cheese
Honey, for serving 

In a pie plate, whisk together eggs, milk, vanilla, cinnamon, nutmeg, and sugar. Set aside. 
Heat a cast iron skillet over medium heat. 
Melt butter. 
Dip bread in egg mixture. Fry until golden brown. Flip. Sprinkle with cheese. Top with a slice of French toast. Serve with honey.

⬇️ Bora (Bodi)

1 onion, finely diced
2 wiri wiri peppers, minced
4 garlic cloves, minced
2 lbs bora or bodi (Chinese long bean), ends removed and cut into 1/2-1” pieces
2 Roma tomatoes, diced
1 tbsp tomato paste
1 potato, peeled and cut into quarters lengthwise and then sliced into 1/4” pieces 

Heat 2 tbsp olive oil over medium high heat. 
When oil is shimmering, add onion. Sauté 5 minutes. Add garlic and peppers. Stir until fragrant, 30 seconds. 
Add bora, tomatoes, tomato paste, potatoes, and salt & pepper. If needed, add 
1/4 c of water. Cover with a lid and sauté 20-25 minutes, stirring occasionally, until beans and potatoes are tender. 
Serve with rice or roti.

⬇️ Trout & Potatoes 

For Potatoes:
2 1/2 lbs potatoes, scrubbed, rinsed and sliced into 1/8” rounds
1/4 c olive oil
1 tbsp onion powder
1 tbsp paprika
2 tsp dried rosemary
1 tsp garlic powder
1/2 tsp cayenne
Salt & pepper, to taste

For Fish:
3 lbs rainbow trout fillets, rinsed and patted dry
Old Bay Seasoning 
Jeera (roasted cumin)
Red pepper flakes
Salt & pepper
Olive oil
Lemon slices

Preheat oven to 400 degrees F. 
Add all ingredients for potatoes to a large 
bowl and mix well to combine. Set aside. 
Grease a large rimmed baking sheet. 
Spread potatoes onto baking sheet. 
Roast 40 minutes. 
While that’s cooking, season fish with all ingredients and set aside. 
Remove baking sheet from oven and lower temperature to 350 degrees F. 
Top with fish and bake 20 minutes. 
While that’s cooking, heat a small nonstick skillet over medium heat with olive oil. 
Add parsley and garlic and sizzle for 1 minute. 
Remove baking sheet from oven and squeeze lemon over fish. Serve.

⬇️ Chicken Soup

1 whole chicken, chopped into pieces 
Onion powder
Garlic powder 
Paprika 
1 large onion or 2 small onions, diced
3 carrots, peeled and diced
3 celery stalks, diced
2 zucchini, peeled & diced 
2 bay leaves 
6 garlic cloves, minced
1 scotch bonnet, minced 
3/4 c moong dal, soaked overnight & drained
12 c water
2 medium potatoes, diced
1/2 cabbage, cored, quartered, thinly sliced 
Handful parsley, minced
1/2 lemon, juiced

Season chicken with onion powder, garlic powder, paprika, and salt & pepper, to taste. Set aside. 
Heat a large Dutch oven or stock pot over medium heat. 
Lightly coat with avocado oil. 
Add half of the chicken and sauté 4 minutes 
per side. 
Remove and set aside. Repeat with remaining chicken. 
If there’s no oil in the pot, add two tbsp olive oil. Add onions, carrots, celery, zucchini, bay, and salt & pepper, to taste. Add a little water to deglaze the pot and sauté 10 minutes. 
Add garlic and stir. Add chicken, any juices, and dal . Pour in water and use a wooden spoon to scrape up the bits from the bottom of the pot. Bring to a boil and reduce heat to a simmer. Remove breast after 12 minutes and set aside. After 20 minutes, remove remaining chicken and set aside. 
Skim off the fat. Carefully add potatoes and cabbage. Simmer 15 minutes. While that’s simmering, carefully remove chicken from the bones and dice. Set aside. 
Carefully add diced chicken, parsley, and lemon juice. Stir to thoroughly combine. Serve.

⬇️ Mashed Sweet Potatoes with Ginger & Garlic

2 lbs sweet potatoes, washed well
1/2” ginger, grated
1 garlic clove, minced
2 tbsp butter
Salt, to taste 

Boil whole sweet potatoes in salted water for 20 minutes or until fork tender. Drain. 
While that’s boiling, combine ginger, garlic, and butter in a small bowl. Warm for 30 seconds in the microwave until melted. Set aside to marinate. 
When potatoes are cool enough to be handled, peel and place in a large bowl. 
Add butter mixture and mash to desired consistency. 
Taste and adjust salt, if needed. 
Serve.

⬇️ Stew Cabbage & Chicken

1 onion, finely diced 
6 garlic cloves, minced
3 wiri wiri peppers, minced
3 Roma tomatoes, diced 
2 lbs boneless skinless chicken thighs, diced
1/2 tbsp paprika
1 head cabbage, cored and thinly sliced 
Handful cilantro, minced 

Heat a large skillet over medium heat with 2 tbsp olive oil. 
Add onions and sauté 5 minutes. 
Add peppers and garlic. Stir until fragrant, 30 seconds. 
Add tomatoes and sauté 10 minutes, until tomatoes have started to break down. 
Add chicken, paprika, and salt & pepper, to taste.
Increase heat to medium high and simmer until chicken is cooked through and most of the liquid has cooked off, stirring occasionally. 
Add cabbage and salt & pepper, to taste. 
Lower heat to medium and sauté until cabbage is just wilted, about 10 minutes. Do not cover the skillet. Covering it will cause the cabbage to release liquid and it may become soggy. 
Add cilantro and stir. 
Remove from heat and serve with rice or roti.

⬇️ 14-Minute Instant Pot Chili

1 onion, finely diced
2 bell peppers, finely diced 
2.5 lbs ground beef
6 cloves of garlic, minced
3-5 wiri wiri peppers, finely diced
3 canned chipotle peppers, minced (3 tbsp chili powder can be substituted)
1 tbsp ground jeera (roasted cumin)
1 tbsp ground coriander 
1 tbsp paprika 
1 tsp dried thyme
1 bay leaf
28 oz can crushed tomatoes
2 tbsp low sodium soy sauce
15.5 oz can black beans, drained & rinsed
15.5 oz can kidney beans, drained & rinsed 
2 c water
10 leaves bhandhania (handful cilantro can be substituted)

In a Dutch oven, heat 2 tbsp olive oil over medium heat. 
Add onion and bell peppers. Sauté 5 minutes. 
Add meat and salt & pepper. Sauté until browned. 
Add garlic, pepper, chipotle peppers, jeera, coriander, paprika, thyme, and bay leaf. Stir to combine with meat. 
Add remaining ingredients, and salt & pepper, except herbs.
Put lid on. Make sure the vent is turned to sealing. 
Set your Instant Pot to Manual on High Pressure for 14 minutes.
Release pressure naturally for 10 minutes.
Carefully release any remaining pressure and remove lid. 
If you want it thicker, simmer it a little until it gets to your desired consistency. Serve.

⬇️ Orzo Pasta Salad

16 oz orzo, cooked per package directions 
1 bell pepper, diced
10 oz grape tomatoes, halved
1 English cucumber, seeds removed and diced
15.5 oz can beans of your choice, drained and rinsed well
1/4 red onion, finely diced
1 clove garlic, minced
3-5 oz black or Kalamata olives, sliced
Handful fresh parsley, minced
Salt & pepper, to taste
8 oz habanero or pepper jack cheese, cubed
For Dressing:
1/2 c olive oil 
1/4 c rice vinegar 
2 tbsp honey 

Combine all ingredients for dressing in a mason jar. Close tightly and shake well to emulsify. Set aside. 
In a large bowl, combine remaining ingredients and dressing. Stir well to thoroughly combine. Toss. Serve.

⬇️ Fry Black Eyed Peas

1 tsp cumin seeds
1/2 onion, finely diced
4 cloves garlic, minced
2 wiri wiri peppers, minced
1 medium tomato, diced
2-15.5 oz cans of black eyed peas, drained and rinsed
1 1/2 tsp ground jeera (roasted cumin)
1/2 tbsp tomato paste 
1 bouillon cube (optional)
Hot water
10 leaves bhandhania (shadow beni, culantro), or cilantro, minced

Heat 2 tbsp olive oil in a skillet over medium heat until oil is shimmering. 
Add cumin seeds and onion and sauté 5 minutes. 
Add garlic and pepper. Stir until fragrant, 30 seconds. 
Add tomato and sauté until tomato softens and starts to release liquid, about 10 minutes. 
Add peas, jeera, tomato paste, bouillon cube, and enough hot water to just cover peas. If using the bouillon, go light on the salt. 
Cover with a lid and bring to a boil. Reduce heat to simmer and cook uncovered 15 to 20 minutes (adding more liquid as you need it) until the liquid has been absorbed and the beans are tender, stirring occasionally. If there’s still liquid left in the pan, remove lid and sauté until liquid has cooked off to your desired consistency. 
Sprinkle over bhandhania and stir. Serve.
