🍞✔️. FOCACCIA IN A PANASONIC RICE COOKER. 🍞✔️

Ingredients:
4 cups (500 gm) Bread flour or OO flour
2 cups warm water
1 packet of dry yeast (2 teaspoons)
1 teaspoon white sugar
2 teaspoons salt
2 tablespoons extra virgin olive oil

Toppings:
1 tablespoon garlic olive oil
Capsicum, Cherry tomatoes, basil leaves, dried dill

Method:
▪︎ In a large bowl, mix the flour and salt together.
▪︎ In a separate bowl, add the warm water with the sugar and yeast and stir well together.
▪︎ Pour the yeast liquid into the flour bowl mixing well to ensure there is no flour left in the bottom of the bowl.
▪︎ Using the 2 tablespoons of olive oil, coat the inside of the Panasonic Rice Cooker bowl. Then add the focaccia mixture and a drizzle of olive oil over it. Cover the bowl tightly with cling wrap and put it in a warm place to rise for about 3 hours. It should triple in size at this stage.
▪︎ After this time, using oiled hands, press your fingertips firmly into the dough creating little dimples all over.
▪︎ Add a drizzle of the garlic olive oil and decorate with the desired toppings.
▪︎ Close the lid of the Panasonic Rice Cooker and select the "White Rice" cycle. The focaccia should take the 43 minutes to cook.

To serve:
A classic pairing of olive oil and balsamic vinegar, any herb oils, hummus, pesto or a whipped ricotta that has been mixed with honey. chilli flakes and a pinch of salt.

Bishop's Crown Chilli. A mild chilli. A chef's shape, about 3-4cm long and 5-7cm wide. My organic gardener and friend @franckej5 gave me some seeds a while ago and the chilli plant has never stopped producing. Such a bright pop of colour in the garden.

Made some delicious, light, airy, fluffy focaccia.
I used a simple focaccia recipe from Cooking with Ayeh @cookingwithayeh including her recipe for herb oil.
I also added cheese in the middle and used garlic olive oil instead of just olive oil.
The decoration of red onions, dill and sage leaves was an inspiration from my most admired and most inspiring Instagram account Linda Lomelino @linda_lomelino

Our Beautiful Judy Pallett @judy3838 passed peacefully on the 25th of April, aged 88. Her lovely granddaughter Kendra Ann @canadiangirl_abroad notified me of her passing. She was such a lovely friend to us all in Instagram. Judy and I shared a love of sewing and embroidery and we exchanged gifts with each other. Will miss her very much. Bless you, Judy.
