Happy Yugadi to Everyone!!
.
As part of Yugadi lunch, I kept it simple with dishes highlighting the chief guest being Holige or Puranpoli😊. But meal became extra special because I had help from tiny hands working along with me to have this meal prepared on time.
.
For Yugadi special lunch today:
🌿Bevu Bella(mixture of neem and jaggery-symbolic for troubles and happiness in life).
🌿 Rice

Which coloured alien are you today? 😊
Thankfully, I am still looking like me post Holi so many may say that then that's not a well played Holi but still I managed to enjoy Holi of 2022.
How was yours?
.
I ventured to make some thandai for Holi using some homemade Thandai syrup and somehow in the spirit of Holi, I decided to make something else as well and that's how my vermicelli bird nest with flavoured shrikhand came into existence. I tried to keep the colours natural for my flavoured shrikhand and do you like what you see here?
.
Flavours you see in these cute vermicelli nests are:
- rose flavoured but beet coloured.
- mango shrikhand
- kesar shrikhand
- thandai flavoured.

Festival that is known by so many names accross India but the soul of the festival being same - Celebration of Harvest.
.
As we enter new phase of the year with this festival, I wanted to come back to my passion of cooking and to this Insta fam with a festive meal.
If you observe the meal prepared accross India around this time and this festival, what we see is inclusion of new harvest, food that will give us natural oil and strength. I am sticking to the traditional dishes today with an inclusion of a dish that was introduced to me by my colleague from up North😊.

My attempt at Bihari lunch..
.
Indian cuisine always is near to my heart and India has a lot to offer. One cuisine which I had always heard about but never tasted was bihari cuisine. Litti chokha being the most famous of all. When I couldn't find a place which would offer true taste of Bihar, I decided to try my hand at making them at home. Sunday thali turned out to be a very fulfilling one. On my thali:
🌶️ Sattu stuffed Litti
🌶️ Aloo(potato) chokha
🌶️ Garlic Chutney
🌶️ Puri
🌶️ Aloo (potato) sabzi (no onion no garlic version)
🌶️ Besan laddoo
.
I loved the flavour of mustard in sattu filling and aloo chokha and when teamed with garlic chutney, it was simply amazing.. what I loved most was the simplicity of these dishes but packing a punch with its flavour. Looking forward to try other dishes from this region😊

Patrode..
.
Rainy season and when mostly we look for something fried, my mom used to make this seasonal healthier snack of patrode. We were far from our home somewhere in North and sometimes it was difficult to get these colocasia or arbi leaves but she used to hunt for those stores and be friends with them so they can inform her when they get the stock. Then begins the process of making the right balance masala and then beautifully layering those leaves with masala. But it doesn't stop there.. then it went into steamer and cut into pieces and roasted on tawa and we used to get these slightly crispy edged leafy part and perfect blend of masala in layers for evening snacks. I would like to think I inherited love and patience to make multi step and time consuming dishes form my mother. And when I was craving to eat these recently, she patiently explained me steps and here I am now sharing the final product.😊

Jackfruit Holige or Puranpoli
.
Yup.. one more dish out of ripe Jackfruit..My mom tried this one and just by looking at it from the pictures she sent, I wanted to try myself and here I am with new variation of holige or Puranpoli.
.
If you love jackfruit, you will definitely like this. Paired with good amount of ghee on crispy and at the same time soft Puranpoli is match made in heaven..😊

Jackfruit seed pakoda
.
Yup, you heard it right.. after savouring ripe jackfruit, the seeds usually are kept to make sambar or sabzi but this time I took inspiration from my friend's recent post on jackfruit seeds bonda and tried pakoda with same. And it turned out so delicious.
.
Swipe to checkout basic ingredients I added in for pakoda.
.
Ingredients:
Boiled and chopped jackfruit seeds
Onion thinly sliced
Dill leaves
Capsicum - finely chopped
Besan
Rice flour- 1-2 tbsp
Ajwain- 1/4 tsp crushed
Chilli powder
Jeera powder- 1/2 tsp
Salt as per taste
Mix using water to the dropping consistency.
Drop in hot oil and fry in medium flame.
.
These pakodas turned out delicious and I absolutely love to use every part of vegetable or a fruit as much as possible. I hope you give it a try.😊

Jackfruit Payasa..
.
I know Jackfruit is not everyone's cup of fruit but in my household it's loved a lot.. usually you would have seen jackfruit idli but I have been little busy to venture out and do that 😊. During this lockdown, when I go for my weekly grocery, this is one fruit that's a must but this time it was not sweet enough for my kid and I ended up with a lot in my fridge. So, today decided to make Jackfruit Payasa with some sago in it.

What is mango season without mango ice-cream I say!!
.
My kiddo has been after me to prepare some mango ice-cream which I have been putting off for sometime as I was busy at my job and finally had to agree that I will do it on Friday. Friday came and made some ice-cream and let it freeze overnight but my son was quickly losing his patience and finally decided the time to check on ice-cream and have it to be on Saturday mid morning. after so many days, decided to style it and click some pics but his patience running out, I could only capture couple of pics before he decided to put his hand and take out the bowl🤦. I could capture that as well 😂.
