Living in the New Braunfels area definitely has its perks, especially when it comes to rainbow trout fishing on the Guadalupe River. When trout season hits, it really does not take much to have a great day on the water. We keep it simple and focus on time outside, cold water and tight lines.

One of my go-to pieces of gear is the waterproof YETI Cayo backpack. It keeps everything dry and organized and is easy to throw on and go. For tackle, a small Plano box is more than enough for what you need on the Guadalupe.

One easy way to level up your chili game is give it a light smoke. Cook your chili on the stove like you normally would, then move it to the smoker for the last hour to hour and a half. Set your smoker to 250 degrees and let it pick up a light, smoky flavor without overpowering the chili. 🌶️ 💨

The cooler weather is here, which means the outdoors and cooking just got a whole lot better. It’s November, the perfect time to start testing Thanksgiving recipes. This pecan-smoked turkey breast was cooked low and slow to lock in flavor, timing, and texture for the holiday season. 🦃

✅ Used a 7-pound H-E-B turkey breast (skin removed)

✅ Brined for 12 hours in Williams Sonoma Autumn Fruit and Spice Brine

✅ Rubbed with mustard to help the seasoning stick

✅ Seasoned with Rudy’s Rub and Spanglish Asadero All-Purpose Seasoning

✅ Injected garlic butter throughout the breast for extra flavor

✅ Set up an offset smoker using H-E-B charcoal briquets, H-E-B pecan wood chips, and cut-up pecan logs for steady heat and rich smoke

✅ Placed a foil pan filled with pecan beer beneath the turkey to keep moisture in the pit

✅ Smoked at 250–275°F; total time varies with pit temperature, so plan on 25 to 35 minutes per pound. Our 7-pound breast took about 3½ hours until the internal temperature reached 160°F.

✅ Wrapped in parchment paper with butter and let rest for 30 minutes

And your result is a tender, juicy, pecan-smoked turkey breast, just in time for Thanksgiving season.

People always ask why we’re such die-hard UNT fans, crazy enough to showcase it at our wedding. They say, “Why are y’all UNT fans at all?” and I simply reply, “Why not?” UNT isn’t just where I got my education or met lifelong friend; it’s the place where I met the love of my life, my wife. That makes representing UNT so much more meaningful to us.

We’re huge sports fans because the UNT community is something special. We’re always the underdogs, never the ones expected to win. Like John F. Kennedy said, “We don’t do it because it’s easy; we do it because it’s hard,” and that’s exactly what it’s like being a UNT fan. It’s never easy, but when we win, it’s something truly special. With all that said, all I have left to ask is, can I get a “Go Mean Green!”? #GMG by @wilsonhaynes
