IT’S A THEME POST:
SAUMUR SLAM ‘26

We’ve been Saumuring down, looking for exceptional examples Chenins running the gamut between capital L Live acidic electric factories to more rounded, layered dare we say thinking man’s wines and boy, have we found a few (plus a bonus rouge)

1. Domaine Guiberteau Saumur Blanc Brézé 2021
Coming from the same hillside in Saumur as the previously posted BSW Brézé Chenin, we were very intrigued to compare the two wines, immediately the level of refinement and elegance of Guiberteau’s wine stood out. It has all the same sharpness and mineral power with complex layers of pear and floral notes reminiscent of super prestige burgundy. This was an incredibly high quality wine.

2. Domaine Guiberteau Saumur Blanc Brézé 2014
Shortly afterwards, we found ourselves at @casanova_carmel in Carmel by the Sea and after pouring over their phenomenal list were very excited to see a 2014 vintage of the same wine.
With the additional age it had only gotten deeper, more intense, more mature with a very pleasant subtle oxidation that gave the wine an additional layer of savoriness that paired it phenomenally with the Dover Sole Meunière

3. Domaine Du Collier Saumur Blanc 2012
Our experience with the ‘17 vintage of this wine at Noble Rot had us expecting an even more oxidative borderline funky expression at nearly 15 years old, but we were surprised to encounter a wine in the ‘12 that was incredibly clean, bright, energetic and utterly delicious with just the faintest degree of that sort of umami quality that we find so irresistible in these styles of white wine. It was a fitting and gratifying reunion with Domaine Du Collier after their wine had really triggered this desire to more deeply explore Saumur back in March.

4. Clos de l’Ecotard Saumur Rougue 2022
We’ve got to also show some appreciation for the red wines of the region, and here on a night out at Bar Martina we paired this bright, juicy, vibrant Cab Franc with some cheese and charcuterie and drank it fast - as felt right with this one. Easy and highly drinkable, wine should be that!

WHAT WE DRANK LAST NIGHT

Friday night, you need awesome interesting natural wines, where do you go

@lescaveswinebar is back and doing it right, so there’s your answer. Vibes and wines immaculate, here’s what we had

1. @grapeink Damigiana Creation #11
Savagnin/Chard made in the Willamette Valley, aged in Italian glass. We’re seeing more and more Oregon producers growing Jura grape varietals and are always excited to try them. But this one, this one here is really the first example we’ve tried that has fully captured the Jura experience.
It’s got that almost briny Tony Bornardesque quality that makes you say oh hell yeah this winemaker is a freak(complimentary), we love it and we’re very excited that this kind of thing can be made right here in Oregon.

2. Les Matheny, Arbois Blanc Chardonnay Vieilles Vignes 2018
Old vine chard from Montigny-lès-Arsures made from both topped up and sous-voile barrels, giving it a strong influence of oxidative funk while retaining intense freshness and acidity. Kind of a perfect representation of the different directions you can go with a white Jura. Weird enough for the freaks, crispy enough for the normies, probably our desert island genre of wine.

3. Anne et Jean-Francois Ganevat ‘J’en Veux Encore’
An old friend, this wine was our intro to Jura at @ok_omens , a co-ferment of Fleurie Gamay and native Jura red varietals that change vintage by vintage
It’s juicy red fruit, rustic earthiness, stony mineral crushable stuff - plays every time.
Like the label says we want more

WHAT WE DRANK THE OTHER NIGHT

Brendan Stater West Saumur Blanc Brézé 2023

We’re on the Chenin wave right now, it’s a zesty one

A distinctly non French name attached to this French wine, the winemaker is originally from Eugene, OR (scoducks) and moved to Paris to teach, fell in love with wine and eventually started making some absolute bangers.

His Chenin Blanc is an excellent example of the caliber of wine coming from the Brézé vineyard site with its limestone and silty soil lending a crispy minerality and wet stone note with a capital Z zippy sharp acidity with green apple and lemon coming thru

In short: it bangs, and we’ll open a bottle when the Ducks win the natty this year

WHAT WE DRANK OVER THE LAST COUPLE WEEKS

We are back stateside and looking back over the last handful of bottles enjoyed from London to Scotland and now down in Southern California, here’s what we’ve been putting down

1) PYCM “Au Boute Du Monde” Hautes-Côtes De Beaune 2023

We love to see the off white wax capsule of a PYCM coming, zesty lemon, white peach with a super live acidity and a rocky base note alongside a long elegantly resolved finish that sets it apart from some of the other high acid mineral driven wines we love, its white burgundy made by a pro, so good.
Tremendously paired with some oysters at @clarksoysterbar Malibu

2) Jean-Francois Ganevat Savagnin “Antide” 2020

Our guy, our OG JFG, back again with another exemplary ouillé Savagnin.
A beautiful yellow in the glass that got a surprised reaction from the somm at the rather red wine and game heavy St Andrews restaurant we brought this one to, this wine kind is pretty unmistakably Ganevat, super flinty on the nose, palette headlined by that licking a wet rock flavor (high compliment) but retaining complexity with a long salty finish. Super Savagnin, picked up at @hedonism_wines in London

3) Matassa Rouge 2023

We all know the drill with this one, delicious easy drinking 100% Carignan from Roussillon.
Leads with red fruit which gives way to that very pleasantly rustic light-tannic quality. A hit every time, in this instance alongside some rarebit and crab on toast from @st.john.restaurant Marylebone

4) Bénédicte & Stéphane Tissot Savagnin Ouillé 2022

We are on a bit of an acidic mineral white kick if you can’t tell.

This one is sort of all captured in the name, it’s Tissot (banger) it’s Savagnin (#1 on our grape power rankings) it’s Ouillé (spring has arrived in London). One of those wines in the right context that kind of lets you go on auto pilot like, okay wine is sorted this is gonna taste insane with anything, now what are we eating?? And the answer to that question was a bunch of really fire plates at a new London favorite, @tempo___restaurant

That’s all for now back soon

WHAT WE DRANK EARLIER

Domaine Du Collier Saumur Blanc 2017

Sometimes as lovers of super mineral, oxidative and oxi lite wines it’s hard not to just flip to the Jura section of a wine list and call it a night.
But then you sit down at an establishment and talk to someone who so thoroughly knows their shit that they steer you toward something like this.

We found it to be entrancingly floral and honeyed on the nose, with a pretty immediate white fruit punch that gives way to deep deep layers of minerality and a lightly oxidative savoriness.

Strongest descriptor that comes to mind is for this one is really fucking elegant, delicious wine.

WHAT WE’VE BEEN DRINKING

Nicolas Carmarans Josette 2023

Minimal intervention carbonically macerated 100% Fer Servadou grown in schist soil in Aveyron, France

But mostly just a really really fun and delicious wine that captures everything we love about natural winemaking. Strong mineral character, expressive fruitiness, terroir driven earthiness and a sense that this wine is very much alive in the bottle

Haven’t had much Fer Servadou, but this one slaps

Thoroughly enjoyed at @ntmrkt by @wine.dossier

WHAT WE’RE DRINKING NOW

Maison Evenstad Aloxe-Corton 2022

Digging one out of the cellar for a little elevated wine and chili Wednesday

Deep red fruit, leather and a little spicy clove on the nose.
Loooong elegant finish typical of Grace Evenstad’s Oregundy fare. The Domaine Serene crew just make really really good wine and we love them. Join their wine club and get some of this

WHAT WE’RE DRINKING NOW

The penultimate bottle of 2025, a preconception challenging biodynamic Syrah from the Northern Rhône.

Maison Stephan Syrah 2023
From the jump this wine presents as a lovingly, organically made wine.

Super fresh aromatic nose, just a touch of effervescence on the palette indicating no added sulfur in the wine making process, they let this one rock all natural in stainless steel tanks yielding a wine that hits you with bright berry notes, peppered spice, a light floral touch and a mid-tannic flinty finish.

This drinks like exactly what it is, an energetic young wine from young vines. Super fun and invigorating expression of Syrah.

Enjoyed in Santa Monica @wallysofficial and you do not have to spend a Maserati to get a bottle yourself. taken in Santa Monica, California by @wine.dossier

WHAT WE DRANK IN COMO

Occhipinti SP68 Rosso 2023

Ariana Occhipinti is a very rad winemaker making biodynamic minimal intervention wines in Sicily, we like what she’s doing a whole big bunch, as does the man who served us this bottle at a little lakeside restaurant/wakeboarding school in the town of Lezzano. We were as surprised to find it there as he was that we had heard of it.

This one is made from Frappato and Nero d’Avola grapes, with a light red fruity palate with a touch of herbaceousness and fresh acidity.

A wine that you can taste is made by someone who really loves making wine. And we love to drink it

Drink it overlooking an ancient lake with a whole lot of bread

WHERE WE’VE BEEN

A swing through Santa Barbara necessitates a stop at @bibijisb, one of our favorite spots to eat and drink in the US, you’re just not gonna find a cellar like this pretty much anywhere that will also serve you dal makhni - and if you know us you know that’s as good as it gets in our opinion.

It’s also run and staffed by some of the raddest people in the industry, incredibly passionate about wine and food, will pull up a chair and geek out about producers they love and give you a restaurant rec in Europe, immaculate vibes always.

We had the chance to taste some deep Jura bangers on this last visit and were floating by the end, the lineup:

Michel Gahier “Les Follasses” Chardonnay 2019:
Nice acid zing on this one that’s well balanced by its dry minerality and just a touch of that Jurassic hazelnutty thing, easy pick, could drink this any time

Anne et Jean-François Ganevat “De Toute Beaute” Rouge 2016:
One of the cuvées that got us into Jura and Ganevat in the first place, a wine exemplary of JF’s kind of mad scientist genius thing: Gamay from Fluerie, Cote Rôtie Syrah, Pinot from Alsace and Mondeuse from Savoie make this crazy vibrant, tart, lush blend you just wanna keep swishing around your mouth to make sure you don’t miss anything. Always gonna be a special one for us

Benedicte + Stephane Tissot “En Spois” Vin Jaune 2016:
All’s there is to really say about this one is it’s an absolute banger of a Vin Jaune and we took a while to finish our glasses cause we wanted to keep huffing it like it was an inhalant. 10/10 multi sensory experience

Big shouts to the folks at Bibi ji we will miss you til next time

WHAT WE’RE DRINKING NOW

Tony Bornard “La chamade” Ploussard 2022

We drink a lot of Jura. We love it, it’s a wine region with a remarkably high standard for quality and character, but within that group of producers there are a special few who really get the heart rate up, and this is one of those.

It’s always a treat to be able to get our hands on a few bottles from one of our favorite wine freaks, Tony Bornard, and our best advice is if you ever see this little orange fox in the wild just buy it. Buy two (if they’ll let you.) White, red, yellow, whatever: it’s gonna be fire, and this la chamade ploussard is no exception.
A little briny on the nose with a rocky backbone, it immediately announces itself known as something different, then it throws a curveball. A rich equestrian leather hits the palate first, followed by a mild peppercorn spice and incredibly clean finish, and you know this is some freak shit.

We don’t know how Tony does it but we don’t need to know, we’re just gonna keep drinking it like we did tonight, with some red meat gazing out over the Pacific Ocean. by @wine.dossier
