Chêne Vert Crozes-Hermitage Rouge

Aging: 12 months in Burgundian barrels for added complexity
Domaine du Chêne Vert’s Crozes-Hermitage Rouge is a rich, intense red with a vibrant ruby color. It opens with sweet spices, and as it aerates, it reveals an elegant violet note. The palate is finely tannic, smooth, and fresh, with coated tannins and a beautiful length, without any heaviness. This wine will gain more complexity with a few years of aging. The winemaker recommends to pair it with a rib of beef from the AOC fin gras du Mézenc either with a caillette as an aperitif or with a Valrhona chocolate coulant heart.

Background: Vinos López is a family winery that was founded in 1970
by their paternal grandfather. Belonging to the IGP Valdejalón and
located in Epila, Zaragoza, at an altitude of 500-600 meters above sea
level. Vinos López is the only certified winery in the entire IGP
Valdejalón. Vineyard manager and winemaker, Mario López,
completely dispenses with herbicides and phytosanitary products.
Their regenerative agriculture practices reflect the family’s respect for
the environment and create exceptional wines of place.
Grapes: 100% Garnacha Tinta. From the Bodegaza vineyard (planted
at the end of the 1960s).
Soils/Climate: 500-600 meters elevation. Deep and stony soils,
where clays and silts predominate. Primarily continental climate, but
routinely cooled by the northwestern Cierzo wind.

Viticulture: Certified organic and regenerative agriculture. Dry farmed and hand harvested from bush vines (en vaso) in the 50+ year- old Bodegaza vineyard.

Winemaking: Hand harvested in 20kg containers to avoid crushing the grapes. Partially destemmed and gentle press with a pre-fermentative maceration of 5 days. Spontaneous fermentation in stainless steel with gentle daily punch-downs for 30 days. Transferred to 600L French oak barrels and aged for 8-10 months before bottling.

Victor Rousse, son of Wilfrid Rousse is lead by his desire to create wines completely respectful of the environment, and pure product of what nature could give us.

“I set up the domaine in August 2020 when I finished my studies.
Today, I farm the equivalent of 4 hectares in the Chinon appellation.
I use organic farming methods and work with natural winemaking, using as few inputs as possible.”

“I attach particular importance to respecting the living organisms in the soil, and I rely on auxiliary fauna to regulate the ecosystem of my vines: the planting of hedges and controlled grassing enables me to achieve this objective.”

2023 LAVA CAP TECTONIC ZINFANDEL

Originally launched as a Rhône-style blend, “Tectonic” was initially produced for just one vintage due to limited vineyard availability. In 2023, we were fortunate enough to secure additional vineyard sources, enabling us to revive the “Tectonic” name. Given Lava Cap’s enduring connection to geology and tectonics, we enthusiastically reintroduced the name, this time not as a single wine but as an entirely new series designed to highlight wines of exceptional character, depth, and age-worthiness.
Vineyard Notes

The 2023 Tectonic Zinfandel is an equal blend from two exceptional vineyard sites we’ve sourced fruit from for many years—one located in Camino at 3,000 feet elevation, and the other in Fairplay at 2,400 feet. The organically farmed Camino vineyard, rooted in deep volcanic soil, was harvested first, delivering vibrant acidity and stunning aromatics of fresh fruit and brambleberry. Approximately a month later, we picked the Fairplay site, characterized by warmer temperatures and well-draining granitic soils, yielding tiny berries rich with concentrated, ripe fruit.

Winemaker Notes
Throughout barrel aging, these two vineyard lots stood out distinctly, each showcasing intense aromatics and impressive structure marked by bright acidity and deep, layered tannins. When trialing the blend, we were particularly struck by how beautifully the expressive aromatics of Camino complemented the dense, fruit-driven character of Fairplay. Aged in 100% French oak barrels (30% new), this wine represents the inaugural release of our new “Tectonic Series,” which highlights special barrel selections from our favorite vineyards. It promises graceful aging for years to come and pairs superbly with grilled meats—especially Tri-Tip.

- Pinot Gris: Heringer Vineyard (Clarksburg) / Brown clay shale, siltstone, sandstone
- Pinot Noir: River Road Vineyard (Russian River Valley) / Sandy loam
This is our idea of a good time in a bottle. The Pinot Gris was foot-stomped and left on the
skins for 48 hours to build color, energy, and texture, then blended with Pinot Noir for extra lift
and depth. At 11.8% ABV, it’s fresh, juicy, and dangerously easy to drink.
Think crunchy red fruit, citrus zip, and a soft, playful finish. There’s brightness from the Gris, a
little backbone from the Noir, and a whole lot of fun in between. It hits that rare spot between
chillable red and skin-contact white, but doesn’t care what you call it.
This is red wine for the rosé crowd, rosé for the red crowd, and a perfect match for anyone who
just wants something fresh, fun, and totally unfussy. It’s light-bodied, alive, and ready for
anything: spring hangouts, summer afternoons, fall dinners… basically, California in a glass.
Unfiltered, unfined, and unbothered. Serve it cold, drink it fast, or take your time. This one
doesn’t follow rules, it just tastes good.

2023 Stirm Wine Co.
Wirz Vineyard Zinfandel
Cienega Valley

The old Wirz Vineyard was originally planted around 1900 to “mixed blacks” as Pat Wirz, the longtime farmer/owner likes to call them. The mix is the typical field blend of vineyards in the Diablo range that consist of Mataro, Carignan, Zinfandel, and the oddball Cabernet Pfeffer. However, in 1964, about 45 acres of white Riesling were planted. The San Andreas Fault runs through the vineyard, which sits at the base of the Eastern flank of the Gabilan Mountains. There are several different soil types found here. The Riesling is mostly planted on deep granitic sand, and some is on the darker clay loam that’s weathered from limestone. Dry farmed, own rooted, head trained, and organic.

Winemaking

The grapes were picked by hand on October 7th, 2023 and sorted in the field. At the winery the grapes were sorted into a redwood fermenter, whole cluster, with 10% Riesling grapes added into the field blend. Pumped over once daily, pressed after a 17 day fermentation. Elevage in old (10 years) barriques for 22 months on fine lees. Racked to stainless steel one month prior to bottling. Unfined, unfiltered. Bottled August 19th, 2025. 184 cases produced.
