Hell of a ride!! This is goodbye to Girl and the Goat LA. What a rush. Great to be part of the og team as well as the new. Thankful to have been able to chef and work with some awesome folks.
Now it's time to create my own p*nis showing game (to those who get the reference).

Bring on the next adventure, cheers!!!

Become a chef they said, it'll be fun they said...and it is!! But my cuts, burns and bruises are nothing in comparison to my chefmates. Beauty is pain? No. Cooking is pain 😆😆

Chicken casserole not casserole

-Neutral oil to a stock pot at medium high heat

-Add cut up chicken thighs or breasts and salt. Brown but don't cook all the way through (about 3min)

-Remove the chicken but leave any oil or fond (brown stuff left behind from cooking the chicken)

-Add in veggies of choice and a bit more oil to cook for about 4min

-Add 1/2 cup of flour and stir about

-Add partially cooked chicken back in, season how you like (I added fermented mustard seeds, garlic, and seasoning)

-Squeeze in the juice of half a lemon

-Pour in hot veggie or chicken broth and bring to a gentle simmer

-Place the other half of the lemon in the pot, cover, and chuck in the oven at 350F (180c) and don't touch it for 45min

Suggested wine pairings? Fat Chardonnay or another oaked white wine. The lemon flavor and acidity in both will be brilliant.

Freaking delicious wine to come home to after work. Nevermind the late hour, this left bank Bordeaux always delivers!! Over 50% Cabernet Sauvignon, packed with pronounced black fruit flavours, earthy, cedar but not overwhelming, a touch of vanilla and baking spices, tobacco, dried plums, and the usual hint of mint. Full bodied and this 2018 would easily sit for another 10 years!

Also thought it funny to share just one of my tweezers in action because I can 😆

January is one hell of a month so far (the world is on fire). And fuck ICE, they're murderers and kidnappers.

Midnight snack post shift with none other than Ridge Lytton Estate Petite Sirah! She's still young and probably could stand up to another 10+ years, but I'm hungry and thirsty and deserve a treat. Pairs great with comida leftovers and some saltines 😆

We may look tired but we still find ways to have fun every time even during a double. And check it out! Made food for the six degrees man himself!

Pulled 13 out of 14 days on with two days of glorious rest and back at it again. Have I mentioned how much I enjoy my job? Thank you to all of my chefmates for always making it worth it (snapping towels included... sorry Mark heheh)

Friendsgiving in Long Beach!! First I was a wolf pack of one, then there were two...then there were 5! Awesome way to spend the day off. You all rock super socks 😍

Ps, the wine induced dance party with cheezits was epic.

Only 3wks left in culinary school, already working full time at Girl & the Goat LA (loving it!!) and today was banquet. Our dish was crispy skin salmon, potato pave, roasted zucchini with maple teriyaki spiced glaze and beet lime puree.

It's been one hell of an advanced program and a pretty decent team of cheffies to work with for sure. The final countdown!!

Beach day! Needed a little break before the madness ensues. Have accepted not one, but two chef positions! And we still have 6wks left in class with another final tomorrow. Last push.

Cap off this weekend with a mega tasty St Laurent from Burgenland, Austria. Had a glass at @tabularasabar the other night and it's full of refreshing red plums, red cherries, and just a touch of chocolate.
