Day 17 of making someone’s day with my art! Friday night called for comfort food so I hit up @winsonbrooklyn - a restaurant that feels like a second home to me. Peak dinner hours means the restaurant was packed, but service moved quickly as usual! Salt bittern tofu with foraged garlic mustard relish and fermented black bean; scallion-oil noodles with Taiwanese soy paste and ramps; stir-fried stinging nettle; glutinous purple rice; ai yu jelly with maple syrup and basil seeds. 

These dishes, featured on the menu of our Taiwan Farm Dinner last week, connect two worlds—the farms of the Catskills and the artisans in Taiwan—as a way to pose a question: what does international solidarity in food and agriculture look like, and what can we do to participate in it? 

This was the essential question of the night, at a dinner hosted by @winsonbrooklyn, @progressive_hedonist, and @yunhaishop to benefit the @catskillsagrarianalliance. Thank you to @trigg.brown and @brian.girouard for the menu; @starroutefarm and @the607csa for the produce; and @yds_amberiver, @dongheoil, and @siangkhaulu for the Taiwanese larder.

In a panel moderated by Dana Cowin, speakers Kim Chou @taiwanfoodandfarmtour, Amanda Wong @starroutefarm and @lisa.cheng.smith emphasized the importance of growing culturally appropriate food in the Catskills, participating in the creation of a healthy food system that can sustain its people as well as its farmers, and the hidden value of importing rice from Taiwan to support local foodways that are increasingly undermined by pressure from international trade.

Together, we raised over $3,000, equal to two days labor on Star Route Farm. We’re so grateful for everyone’s generosity at the raffle and beyond. Proceeds from the tickets also helped us offer affordable seats to members of the CAA community — farmers and food workers who steward our land year-round.

We are very excited to invite you to our first-ever Taiwan Farm Dinner, benefitting the good folks at Catskills Agrarian Alliance and Star Route Farm. Together, we’ll be celebrating the intersection of Taiwanese culinary tradition and locally grown produce.

Presented by @progressive_hedonist and @yunhaishop, and hosted by @winsonbrooklyn, the night will benefit @catskillsagrarianalliance and @starroutefarm, an agricultural nonprofit working with local farmers across upstate New York to increase food access and build a healthier, more just food system.
 
Chef @trigg.brown of Win Son will present a coursed meal with spring produce sourced from @starroutefarm, alongside preserves, grains, and ferments from Taiwanese farmer-artisans, provided by Yun Hai. Together, these ingredients become a lens into how food moves around the world — and what local, global, and migratory food systems have to do with the climate crisis.

The evening will be punctuated by a roundtable discussion moderated by Dana Cowin of Progressive Hedonist, an event series committed to building resilience while sharing climate friendly practices through food and joy. Joining us for that will be Amanda Wong, head farmer at Star Route Farm, and @kimberchou, co-organizer of @taiwanfoodandfarmtour.

Each ticket will include a coursed dinner featuring produce from Star Route Farm, Taiwanese artisanal ingredients from Yun Hai, and paired beverages. Seating is limited at this 50-seat dinner.

To pack even more of a punch for our good farmers upstate, there will also be a raffle with prizes like a complete Tatung 11-Cup set, gift cards to Win Son and Yun Hai, and merch from CAA.

Wed, Mar 25—Join us for a special night featuring Trigg Brown, founder of Win Son, for our next Chef Mixtape. 

Trigg started cooking at a country restaurant in high school and continued through college while majoring in English literature at the University of Virginia. There, he met his mentor Pei Jen Chang, a Taiwanese-American chef in the kitchen at Keswick Estate. When Chang moved to local restaurant, TEN Sushi, Trigg followed, learning the techniques and flavors of Japanese cuisine.

After graduating in 2011, Trigg moved to NYC to join the team at Colicchio & Sons. It was around this time that he met his current business partner Josh Ku at a barbecue in his backyard. Although Josh, a Taiwanese-American, worked in property management, the two discovered a common love for Taiwanese cuisine. Keeping in touch over the years, it was finally in 2016 Trigg and Josh opened Win Son in East Williamsburg. 

For one night only, Trigg brings his love of Taiwanese American to La Compagnie Centre Street with flavors such as popcorn oysters, xian bing pork dumplings and chicken wontons. It will be a feast for the senses. Book through Resy to secure your spot.

Delicious meal at @winsonbrooklyn on a negative degree day warmed me up real quick!
 🥞Best pancake I’ve ever had. Crispy buttery edges with a soft fluffy interior, sitting in this butter brown sugar syrup and comes with cinnamon whipped cream. It was incredible. 
 🍲 Xi fan: Congee, warm savory rice porridge, with a soy egg, pork floss, with braised pork. The flavor combo was very satisfying. 
  Scallion pancake with a soy chili dipping sauce. Always a must from @winsonbrooklyn  @winsonbakery 
 🦐Shrimp egg bun, scallion, with this sosu type sauce, on a soft burger bun.

We’re honored to host @minghpu for a collaborative Taiwanese menu on Thursday 1/29.  Ming has been a friend of the house since the early days so this has been in the works for a while, and perfectly coincides with a restaurant opening he’s been working on for a long time. 

Chef Ming, his wife @cmariepu and beverage director @hibiki.smalls are opening @tanalouisville this spring. 

Tana will be a Taiwanese New-American restaurant in Louisville KY. 

Menu to come closer to the date, but get a reservation in advance thru @opentable 🫡
