This rosemary focaccia is one of my favorite things to bake. It’s crispy on the outside, soft and airy inside, and ridiculously easy—just requires some patience. The magic happens after at least 24 hours in the fridge, but if you can wait 48, it’s even better. If you don’t have time for a long ferment, don’t bother making it.

What You Need:

4 cups (512g) bread flour (I use King Arthur unbleached, unbromated)

2 teaspoons instant yeast

3 teaspoons Morton kosher salt

or 4 teaspoons Diamond Crystal kosher salt

or 2 teaspoons table salt

2 cups (480ml) lukewarm water

3 tablespoons good Italian cooking olive oil (like Trader Joe’s Italian Reserve—rich, buttery, and made from 100% Italian olives)

3 tablespoons chopped fresh rosemary (or 1.5 tablespoons dried)

2 teaspoons flaky salt (for sprinkling)

2 tablespoons unfiltered Italian extra virgin olive oil (for finishing)

How to Make It:

Stir together the flour, yeast, salt, and rosemary in a big bowl. Add the water and mix until combined—no need to knead. Coat with oil and stick it in the fridge for at least 24 hours, preferably 48.

Oil up a 9x13-inch pan and scrape the dough in. Gently stretch it out, then let it rise at room temp for 2–4 hours until puffy.

Heat the oven to 425°F (220°C). Poke dimples all over the dough with your fingers, drizzle with olive oil, and sprinkle with flaky salt and a little extra rosemary if you’re feeling fancy.

Bake for 25–30 minutes until deep golden brown.

As it cools, drizzle on 2 tablespoons of good, unfiltered Italian olive oil—the rich, buttery kind, not the peppery stuff. It soaks into the top, balancing out what pooled at the bottom and adding extra flavor.

The olive oil is the star here, so check the label—most grocery store olive oils are too peppery for this recipe. If you're deliberately going for a black pepper foccacia, go ahead and use whatever oil and crack some peppercorns over the top (maybe add some parm too?) —but otherwise, buy the good stuff with 100% Italian olives.

#mozzarella taste test!
I bought #freshmozzarella at the supermarket from 2 #newengland companies to put on #margheritapizza and also try plain.

Narragansett creamery:
Firmer drier, and more elastic, almost like it was between a very soft fresh mozz and a dry mozzarella
Good flavor
Melted well and browned easily on the pizza
Maintained some chewiness

Maplebrook farms:
Soft, wet cheese similar to one stored in brine
Strong creamy, milky flavor
Melted well and tasted amazing on pizza
Didn't add too much wetness to the pizza, less than a brined ball

Winner IMHO:
