To sustain. A confounded concept right? Here is a meal created for sustenance on a day of celebration, but it is created to give, and willingly so.

Sustainability exists as an idea that to conserve is a preemptive aphorism of a sort of profound legacy, at least in our minds, but likely and rightly so, it should exist as a right to give in abundance and in some selfish truism.

So this meal on this day of thanks? Wellington, our second try. Slightly under-seasoned, and ever so burnt. But still, and homage from and to those we selfishly care for.

Spicy Taiwanese Fried Chicken Sandwich

Double fried with five-spice breading, topped with sweet and spicy homemade pickles and fried basil on a sweet and buttery brioche bun.

In our opinion, no need for a sauce and yet better than most beef burgers, which says a lot coming from us. Although, we may need to make an A5 version of this to compare!

Side of spicy smashed cucumbers to help cleanse the palate.

If we presume for a moment that a purposefully accretive investment is in some way resultant in a subsequent or substantive corollary, then there should exist a form of said deduction, resultant to our didactic legacy. Some imprinted response to what we know to be true.

In this context, exists a love of ours.

A Resident Evil inspired cocktail with multitudes of references to the antecedent material. Something of a joy for us.

Infused sidecar vials, botanically accented liquor and rare mixer accents.

The unfaltering of the expounded upon cadence isn’t what is obviously remarkable in it of itself. It is that there is a driven intention to proceed.

As usual, an overabundance of produce led to a uniquely delicious meal. The chard is growing like crazy and led to a delightful twist on the classic palak paneer. And, what is an Indian spread without a delectable spicy dish?

An apt segue into something we venerate without delineated supposition. Yet it still is, as we all might, or should aspire to be.

An array of momentous elations.

From scratch: Sourdough cheese-onion bread, baguettes, sourdough crackers, pickles, cheesecake with gingerbread-cookie crust glazed with blueberry and whiskey compote (the components, gingerbread, whipped cream etc, made from scratch).

Homegrown: Purple broccoli, 4 varietals of tomatoes and all edible flowers.

Truffles to enhance.

An established yet transient verisimilitude of our cadence, for the enjoyment of.

If there is a truism that lives in the presumed expectation of our actions, then it should be willfully guided.

Said determined waypoint, even if gilded into place, should not necessarily dictate a purposely mandated path. So why be content as a lemming to any herald?

Abalone, trippa, offal and certified A5 bites that included tongue. The latter, a rare first for us. We’re still not sure how it was even sourced in the states.

I may only have a distant Irish heritage but I'll use any excuse to celebrate with food!

Here, a home-braised corned beef with roasted potatoes, cabbage, carrots, leeks and fennel. Beef aside, all of the components were from the garden, of course. We skipped the verdant pint.

Realistically, what is more foundationally fundamental than a baseline understanding of what our truisms are? Not some thing that is deliberately presented to us, but a truism earned. If that isn’t meaningfully substantive, then who could presume what is?

Subsequently, shouldn’t our consumption match that fervor for a corollary life? Not because it need be, but because it may serve as, at minimum, a paradigm of ubiquity.

So we created this. You’re already familiar with components. Not obligatory, just a thing to try to challenge our senses and perception of what a substantive bite should be. by @xiougyu
