S'mores!

Camp tradition roasting marshmallows over a camp fire. I normally use dark chocolate covered digestives so the chocolate is nice and melty but it gets a bit sweet so we have 1 chocolate digestive and one plain digestive.

It's always so satisfying when you roast it to be point where the inside is perfectly soft and melty with a crispy outer shell.

Biscoff Star Bread 🌟

Another treat in the school baking gifts. I made 2 smaller bread stars about 10 inches each (so they could fit in the cake boxes I have.

The recipe I used was from @preppykitchen star bread and split it in half. The bread smelt amazing coming out of the oven and it was so easy to work with.

Notes for myself: spread the filling all the way to the edges and take the time to seal the star points as they would come apart as it was resting. Oh and do not microwave the biscoff. I added milk and microwaved it to make it easier to spread but it made it lumpy. Might try warming it up in a bowl of hot water next time.

Mini Oreo Cheesecakes

Part of my massive baking effort before we left for our trip. Happiest moment was when I found a perfect sized tool to tamp down the Oreo crumbs 😆. They came out perfectly creamy and full didn't crack or sink.

Note to myself: Archive recipe. Baked for 12 mins at 160 °C and no water-bath.

Matcha Okara Cookies with ruby chocolate chips

Whenever I get around to making soy milk I save the soy bean pulp to make these Okara cookies. They're so moreish and healthy! The pulp still retains a lot of nutrients and goes well in sweet or savoury dishes.

I made these mini sized in an attempt to portion control but I'm sure the little one ate at least 10+ cookies and kept coming back for more.

Recipe is from @alldayieatlikeashark

Instead of white chocolate I added Ruby Callebaut chips and I used butter the butter recipe. The recipe suggests using walnuts which is love too, so will have to keep that in mind for the next batch.

Giant smoked pork katsu

Made these a little while ago, freezer ready so we could enjoy them whenever we felt like it. It was slightly overdone unfortunately but luckily not too dry. We've just finished the last of the batch so next round we'll need to make sure they're a little underdone and ready for reheating.

The pork was first smoked, then coated and egg/flour/panko and deep-fried.

This is my very last submission this month's @cooktotheme challenge #5MinutesMeals. Obviously this didn't take 5mins start to finish but when I am making quick meals I like to have things like this on hand so we can be eating in around 5 mins. Microwave and a quick re-crisp in the air fryer and we're ready for dinner!

Thanks to the @cooktotheme host for another fun and challenging theme this month.

Brown butter matcha cookies 🍪

Procrasti-baking at its best. Made these a couple weeks ago while I was trying to take a break from work responsibilities 😆.

I used @callebautoz ruby chocolate instead of white chocolate chips and it turned out so amazing. They were a bit rich for me but I'll adjust the sugar levels next time I try these.

Zhongzi! 粽子

Sticky rice pudding we only get to eat once a year.
I look forward to eating these every year and this year mum taught me again how to wrap them! Last year I tried but couldn't get the tying off technique right and they kept coming apart. I finally got it and it's actually so simple I'm not sure why I couldn't do it last year 😅.

The filling inside is sticky rice mixed with split mung beans, marinated pork belly, shiitake mushrooms fried with garlic and oyster sauce, a slice of lap cheong, a chestnut, salted egg yolk, peanut and another nut but I can't remember the name in english. I think this is a Teo chew style Zhong.

In Teo chew we call this Jang so I could have entered into the last challenge from @cooktotheme which was the theme 'J ' but I was a little under the weather.

It was fun making these with my parents it's definitely more fun making these with people, there are so many things that need to be prepared then wrapping the Zhong, boiling them and then hanging to dry. Let alone washing up afterwards.

Minions assemble!

I've had these tic tacs in my pantry for a long time and I kept them since it was so adorable but they had obviously expired a long time ago now.

The little one was asking almost everyday to eat them so we turned it into a craft activity. A bit of #foodart which she has enjoyed going over to look at 🙂.

Now I get to enjoy look at them too ❤️

Brown butter chocolate chip cookies 🍪

Deliciously crispy on the edges with a soft centre. I used regular eating chocolate on the top of these but it didn't melt as much as I was expecting so will need to experiment with other chocolates next time.

Oh Baby!

Lychee cake with a lychee buttercream.
This cute Winnie the Pooh themed cake was our latest cake adventure for my besties baby shower. Can't wait to welcome the little man!

It was super fun making the little fondant bees and decorating with the honeycomb cut outs. Another fun night of baking, cake decorating and late night ramen.

This is my contribution to this month's challenge #cttspring . Spring always brings new life and I hope this new season of my friends life is a wonderful and bright experience.

Thanks to the hosts @cooktotheme @ainz_gourmet @28nankinstreet @happywowohappy for the fun theme this month.
