Mediterranean Meets India Over Live Fire

Tonight’s dish brings together two of my favorite culinary traditions with the unmistakable flavor that only a hot plancha can deliver.

French-cut lamb chops were marinated in a fusion of Mediterranean herbs—fresh rosemary, thyme, garlic, and lemon—layered with warm Indian spices including cumin, coriander, Kashmiri chili, smoked paprika, garam masala, turmeric, and finished with a touch of tamarind for a subtle sweet-tart depth. Seared on the plancha over high heat, the lamb developed a beautifully caramelized crust while staying tender and perfectly medium-rare.

The lamb rests on a bed of silky, buttery potato purée, accompanied by fire-roasted shallots and charred Brussels sprouts, with vibrant basil herb oil and a smoky tamarind reduction adding brightness and balance. Fresh microgreens finish the plate, bringing a crisp, peppery note that ties the entire dish together.

A celebration of live-fire cooking where the freshness of the Mediterranean meets the bold, aromatic soul of India—elegant, rustic, and unforgettable.

How about shrimp and grits for dinner. Im tapping into my southern roots and pulling out the stops by marinating the shrimp in a black garlic paste and then they’re sautéed with shallots and more garlic butter. The stone grits are packed with flavor. I’m letting this sit under the smoke dome for additional layered flavor.#homechef #favchef #grits #shrimp #eatwell #happyfoodie #foodies #foodfromaroundtheworld #goodfoodforgoodpeople #goodforthesoul #southernfoodie by @zblkcat

Slow-roasted pork ribs glazed to a rich, glossy finish and kissed with caramelized spices. Tender, juicy meat pulls gently from the bone, finished with a sprinkle of fresh herbs and a hint of rosemary for a rustic touch. Bold, savory, and slow-cooked to perfection—every bite is pure comfort. 🔥🍖#pork #ribs #chef #foodfromaroundtheworld #igfoodporn by @zblkcat

This three-layer enchilada casserole brings big flavor with seasoned beef and lamb, sofrito, sweet corn, green and black olives, and melted Mexican cheese. Serve with a fresh salad, crispy homemade tortilla chips, and a dollop of sour cream. 😋

From that little girl with a pose to the woman I am today… I’ve always had a little style and a whole lot of personality. 😂💃🏽

The outfits changed, the hairstyles had their moments, and my confidence grew with every chapter. Looking back, I still see that same girl—having fun, dressing up, and making it her own.

Young and fly then… grown and still giving it my own flavor now! 😉✨

We’re going to India today—one delicious bite at a time! 🇮🇳✨

From my kitchen: fragrant chicken biryani with tender, marinated chicken, saffron-kissed basmati rice, and warm spices layered with love. Served with cooling cucumber yogurt raita, crisp cucumbers, pickled radishes, and a squeeze of fresh lemon. 🍋🌿

My own finishing touch? A golden Parmesan tuile for a little crunch and a little drama. You know I love some height on my plate! 👩🏽‍🍳🔥

Pull up a chair—there’s always room at my table. Who’s joining me? ❤️

Southern comfort meets Spanish-inspired flair on my breakfast table! 🍳✨

Pork jowl seasoned with my signature El Pollo blend, served over creamy Parmesan grits with a soft poached egg, whole-wheat English muffin crisps tossed in Italian seasoning and achiote oil, and a silky Dijon-cider butter sauce.

A little crunch, a soft yolk, and bold flavor in every bite. This is breakfast, Chef Jenee style! 🐆👩🏽‍🍳 by @zblkcat
