Meet Chef Regan.
If you've eaten here and were still thinking about it on the drive home, that was him.
Regan is Culinary Director at Zest, which is a tidy way of saying he's the one who decides what ends up on your plate, and then makes sure it arrives that way every single time. He writes the dishes. He cooks them. And then he does the part nobody photographs: he teaches an entire kitchen to cook them exactly as he would.
Menus don't just appear. Somebody stands over them for months.
