大闸蟹 • hairy crab season is a special one for anyone who has lived in shanghai, the most anticipated time of the year for food. hairy crabs from 阳澄湖 • yangcheng lake are prized for their sweet roe, which ripens annually in september (females) and october (males). it’s such a prized delicacy that there are counterfeit crabs everywhere, and the lake’s crabs are even logged in the blockchain to validate their authenticity.

because the crabs are small, it’s a lot of work to crack and deshell for a small amount of meat. to be honest, i didn’t love them when i first tried them… and then i found cerjerdary.

蟹家大院 • cerjerdary serves one thing: hairy crab. in a bowl of noodles that runs $50 usd, the kitchen will shell exactly 12 hairy crabs, removing the laborious parts of eating the crab to use its tastiest parts for the most luxurious bowl of noodles to exist. it’s like eating otoro from tsujiki, or osetra caviar: decadent, buttery, special, something to look forward to every fall.

重庆碗杂面, the taste of home - chongqing noodles with tender chickpeas, pickled mustard greens, and 半汤 (less broth, so the noodles really grab onto the sauce), this little noodle shop downstairs from where my family lives is usually the first breakfast my mom and i have when we come back home to chongqing 🫂

set amongst the backdrop of longjing mountain is 龙井草堂 dragon well manor - a 20 year old restaurant that weaves confucian and taoist food philosophies into its farm to table cooking approach. there are different tiers of a dynamic menu that changes with the seasons—today’s highlights included the old duck soup, hearts of 毛毛菜, a regional vegetable, crab legs, and peach and pear jelly soup.

i came here in 2019 and confirmed today that this is likely my favorite restaurant in the entire world: intentional, flavor-forward, intricate, traditional, technical (but not so abstract that the focus is lost). it’s well worth the train + taxi ride from shanghai, and easy as a day trip or weekend getaway. the grounds are stunning, a garden designed on traditional chinese garden principles of harmony and balance, with 9 private dining rooms tucked away in secluded corners. til next time, dragon well manor 🥰

i’m going to miss summer produce so much 🥺 used @justonecookbook ‘s chawanmushi recipe (took a shortcut on the dashi heh) and added some sautéed baby corn from the farmers market sautéed with @madebymusashi ‘s smoked tomato oil which gave it a really subtle tomato note. the flowers were just aesthetic 😆 but this is one of my fave things i’ve made all summer and it was the perfect “see you next year” dish 🌽 ps almost everything was from @grownycgreenmarket :) #chawanmushi #corn #japanese #cooking #farmersmarket taken in Union Square Greenmarket by @zuzudreamsof
