Since I work from home, I’m usually trying to fit lunch in between everything else on my schedule. Some days are just busy, and I don’t have much time to think about what to make. But today, I was craving something warm, and I knew exactly what I wanted: my favorite @18chestnuts soup, Tuscan Tomato. 🍅

So I headed to @thefreshmarket , grabbed a jar, and brought it home to warm up.

And, this is definitely not your typical tomato soup. The Tuscan Tomato blend includes sweet potato, red bell pepper and artichokes, and it’s gluten-free, low sodium, and contains no added sugar. Plus, I love that it comes in a glass jar.

I served it with one of my pre-prepped snack plates with grape tomatoes, sliced cucumbers, olives, hummus and crackers or dry roasted edamame for an extra protein boost.

This makes for a quick and filling meal, and it was so good. 🌱 A reminder to keep some jars on hand for busy days!!
