When was the last time you spent two hours savouring lunch?

Last Friday, @intuitivechefkate @sheepdrove @tribezerowaste and I ran our first day experience, combining nutrition, exploring the connection between soil health and gut health, bread making and a long autumnal lunch.

This special environment, Kate's gorgeous food and a meeting of strangers around the table combined to create a long, lingering lunch. We enjoyed slowly fermented focaccia spiked with herbs, vegetables, nigella seeds and membrillo, (Kate gently reminded us to use what we have in our cupboards), bowls of white bean and miso soup with fermented plums, plates of delicious roasted cauliflowers with rose harissa and pasture raised roasted chicken with chermoula. 

At one point, Kate brought out a beetroot and carrot slaw literally bursting with colour as a palate cleanser. This turned out to be an ingenious idea as vegetables became the main event and were devoured before the roast chicken arrived.

These fresh crunchy vegetables, the cauliflowers and the bread all bring opportunities for chewing, which trigger a number of processes that our body is cleverly designed to use to support digestion and our appetite. (I write more about this in my newsletters.)

I’m not for one moment suggesting that a long table lunch is a daily occurrence, but rather a reminder to take our time to eat. A long lunch with friends is something to be savoured and so too are the meals we eat alone everyday.

Adding some crunch to your meals and taking a break to savour food you’ve prepared is a small act of delicious rebellion.

Hands-on 🍞The simple pleasure of making bread by hand, small moments of mixing, stretching, folding, then tucking it away in a warm space to prove without you needing to do anything. Simply flour, water, salt, olive oil and time. taken in Oxfordshire by @1joissa

Flour blending 🌾🌱 

One of the joys of learning about making bread is creating flour blends at home. 

In my days of learning to make a loaf from a Bero recipe book, churning out perfectly good tin loaves with strong white bread flour to now. Flour blends turning out chestnut brown loaves filled with flavour and texture. 

A base of stoneground white flour with spoonfuls of rye and spelt flour. The grains are grown with care and with regenerative principles in mind to restore the nutrition in the soil. 

Milling in a handful of oats, split peas, flax seeds and oregano and rosemary dried over the summer brings different nutrients and flavours. 

Finally, adding some chopped fresh rosemary and oregano to the dough fills the kitchen with smells of summer past. All I can think about are bowls of soups to dip hunks of these gorgeous loaves into.

When work doesn't quite feel like work....

A magical day of slow eating, seasonal abundance, taking grain to our plates, warm conversation and connection to our food and the land. A brilliant day brought together with @intuitivechefkate @sheepdrove @tribezerowaste @kickstandcoffee @sophialysaczenko Some conversations I overheard during the day... "I've never spent two hours having lunch." "I haven't looked at my phone once."... "I saw rice and lentils on the menu, but I never expected them to taste so good." 🥾I firmly believe that nutrient dense whole food supports our health and I always encourage clients I work with to begin here.

But it’s not only food.

It’s getting outside in nature, getting natural light, making movement an everyday habit. 

A walk in the hills does all this.

Incidentally, more exposure to the outdoor environment can reduce stress and may alter your microbiome. 

One small scale study explored the impact of nature-related activities on pre-school children and found an increase in beneficial gut microbes 🦠 (Sobko, T., et al)

I think we can all agree that slow can be a very good thing. And especially when it comes to how we nourish ourselves: good food - from the grain to the plate - doesn’t happen fast. In a world that’s relentlessly realtime, the magic is in the beat we take to consider where we source our food from and how we prepare it. @1joissa and I invite you to explore that magic with us and @tribezerowaste at @sheepdrove on 18 September. And I’m particularly excited to unveil the menu I’ve created, to bring the slow, quiet life to the table:

Sourdough focaccia, three ways
Naturally neon Bromham pickles
Velvety miso-white bean soup, plum umeboshi

Pasture-raised roast chicken, chermoula
Whole roasted Bromham cauliflowers with rose harissa, green tahini sauce
Mujadara (Middle Eastern rice, lentils and caramelised onions)
Whipped feta, raw and roasted tomatoes, smoked almonds
Heritage carrot and beetroot slaw, ginger-cider dressing
Local leaves, figs, black garlic vinaigrette

Apple and rosemary sorbet

So looking forward to bringing the softest, mellowest tones of early autumn to the table in every plate 🌾🙌

🍇From the parching heat of August in Oxfordshire to  cooler days in North Yorkshire. Sunny spells, cloud cover and occasional showers — all in one day. 

Passing through moorland villages I’ve spotted fruit laden trees, blackberries making their first appearance but right now there is an abundance of plums.

Here, I’ve simply roasted plums with some honey, orange juice and vanilla beans, spooned over Greek yoghurt and kefir and topped them with blackberries and walnuts. 

Making the most of seasonal fruit (and vegetables) is one easy way to bring more diversity to the foods we eat. The diversity means we’re supplying our bodies with a range of nutrients and while we’re at it, we’re feeding our gut microbes. The more diverse our gut microbiome, the better it works for our health.

🧳 MOVING

Moving is unsettling. Making bread is something that is now so habitual that getting my hands in dough again feels so familiar. 

It’s the dough I have made weekly for two years so the recipe is committed to memory. The process is now so familiar that even half awake, in a matter of moments, the bread can be mixed and rested, while the coffee brews. 

The ingredients are simple:
Wholemeal flour @henry_bruernfarms 
Rye flour @hodmedods 
Strong white bread flour
Salt
Water
Starter 

The flour changes everything: incorporating wholemeal and rye with the strong white bread flour brings diversity, fibre, flavour and improves the nutrient density of the bread. by @1joissa
