Unity in diversity. 🪷

Long before there were borders and nation states, there was the Indus civilisation, a place with room for us all. I hope we’re finding our way back to that spirit.

Our region is richer when we celebrate one another, when we’re curious about each other’s histories rather than divided by them. Yesterday I learnt so much from the incredible women I had the privilege of sharing a panel with, @lornanandagangotra and @smokeandlime.

Thank you, @mecca.ibrahim and @women_in_food_industry @theconduitlondon @catherine_a_uk . Every conversation reminded me that food has always been our common language. It softens difficult conversations, builds bridges, and reminds us that we have far more in common than we’re often led to believe.South Asia is home to hundreds of languages, thousands of dishes, and culinary traditions that stretch back millennia. Many of the techniques now being repackaged and sold back to us as trends, Ayurveda, fermentation, nose-to-tail cooking, biomass cooking, seasonal eating, have long been part of everyday life across our region.

I’m deeply aware of my privilege: to have a platform, to live in the West, and to be surrounded by a community of open-minded people who are willing to listen and learn. 

With that privilege comes a responsibility: to amplify the voices of those who can’t, to humanise our region, and to keep creating space for conversations that bring us closer together.

In my home, every month is dedicated to South Asia. But South Asian Heritage Month is an invitation for everyone else to discover a region that has given the world so much: its food, its ideas, its languages, its art, and its people.

I’m still reeling from what an incredible experience it was. It reminded me that healing doesn’t come from avoiding difficult conversations; it comes from having them with curiosity, compassion and, whenever possible, around a shared table. 🍛 taken in The Conduit London by @3rdculturekat

Every home has its own still life.

A vase that has travelled further than expected. A favourite cup, chipped but cherished. A newspaper that belongs to another chapter of your life. A gift from a friend that quietly becomes part of your everyday, until you can’t imagine your table without it.

When @a1azra began illustrating this world, I realised she wasn’t going to be drawing objects. She was going to be drawing a life. My life. 

My grandmother’s vase holding my favourite flowers. My beautiful plates from Multan via @drmehlaqa. My everyday newspaper, because I spent years in the Netherlands sounding out unfamiliar words over slow cups of coffee. The truck art coasters @naadiyakm gifted me, always beside my mug, a small reminder that friendship can have a permanent place at the table.

When I created @tckcondiments, I wasn’t making something for a single cuisine, a single meal, or a single moment. I wanted it to belong everywhere, to become part of everyday rituals, carrying a little piece of Pakistan out into the world.

I dreamt of jars that quietly become part of your life.

Beside your eggs on sleepy Sunday mornings. Passed around noisy dinner parties. Alongside late night cheese boards, hurried weekday lunches, summer picnics, and the meals you cook when someone you love needs a little comfort.

For all your occasions and a companion to your everyday.

This print feels like an homage to all of that, the places we’ve lived, the people we’ve loved, the things we’ve carried home, and the rituals that turn a house into a home.

Because our condiments have never just been about what’s inside the jar.

They’re also about everything that gathers around it.

DHAMAKA means a blast 💥💥💥

And this dish really earns its name.

The spatchcock chicken gets a dry rub of aamchur, cumin, cracked white pepper and black salt before it’s grilled over fire. Literally burnt my house down. 💢

Then it gets finished with a mango sauce made with chilli, lime, maple syrup, and a medley of mint, coriander and chives. Oh and that drizzle of Kashmiri chilli oil @tckcondiments that never misses to impress.

It’s smoky, sharp, sweet, fresh and just a little bit chaotic in the best way. Every bite does something different.

I don’t know what day it is but I do know I’ve been busy mini recap of the last few weeks. 

1. We launched our Multani Mango Chutney officially @wholefoodsuk! Go grab a jar it’s on SALE! 
2. An entire weekend at @lowerstablestreetmarket loved meeting so many of you and hearing all the family stories. 
3. Attended my very first @breadjamfest and like a crazy person went to the big stage and pitched infront of a live audience. 
4. Designed our trade packs (all TCK design work you see it’s me and my laptop in the back) 
5. Mission Kitchen’s 5th birthday 🎈 so fun!

Aam Ki Zamen Part 2: NEW DATE! The supper club is now on Sunday 26th July! If you couldn't make it before, maybe now you can!

When putting this together, we brainstormed so many dishes and ideas because for the both of us, the world of Aam is limitless. For the King of Fruits, the line up had to be as special and versatile as the fruit itself.

No Blockbuster is complete without the heroes, so we had to cast Chaunsa and Kesar without a doubt. For the supporting roles, we delve deep into South Asia and have handpicked some local superstars to cast a special role. We have Neelam, Sindhri, Anwar Rettol, Mallika and our hero from the South; Karthakolomban!

We’re really excited to have @wholegood as our produce partner, who will be providing the freshest organic produce to compliment each of the courses.

What do we miss when we only see the finished dish?

Our Together project is exploring the rituals, ingredients, objects and stories that bring us to the table. Through it, we are honouring Palestinian, Sudanese, Kashmiri and Rohingya communities: people whose lives are too often reduced to headlines, while their cultures, knowledge, foodways and relationships with land are overlooked.

‘Before It Reached the Table’ is the conversation series within that project. Through these interviews, we are speaking with chefs, farmers, growers and people working closely with food and land, allowing each person to speak from their own experience rather than asking one voice to represent every place or community within the project.

We wanted to begin with Saliha @3rdculturekat because she understands both sides of the story.

She is a Pakistani chef, culinary artist, writer, activist and Founder of Third Culture Kat, creating condiments, merch and supper clubs that bring people together around the finished dish. She is also the daughter and granddaughter of farmers, raised in South Punjab with a close understanding of what happens long before food reaches the kitchen.

In conversation with SPINDLE, Saliha reflects on Multani mango orchards, seasonal labour, farming uncertainty, regional ingredients and what diaspora conversations can sometimes overlook.

This is the first of our interviews we have lined up, including conversations with farmers who will share their own experiences of land, harvest and the people behind what reaches our tables.

Pakistan isn’t an add-on to South Asian history. It is one of its foundations.

Before there were borders, there was the Indus Valley Civilisation. Before there were nation states, there were cities, scholars, traders, farmers and poets. The branding may have changed 79 years ago, but the legacy of the people who have called this land home stretches back thousands.

People migrated here. People migrated elsewhere. Borders shifted, flags changed, and identities evolved. But one thing remains true: we built this culture, this legacy and this region together.

My grandfather used to say, “We can’t ever unite if we don’t see the value in each other. If we trace back our steps we are all connected.”

This South Asian Heritage Month, I hope we do exactly that. I hope we learn each other’s stories with curiosity rather than competition. The diaspora has a unique opportunity to mend wounds we didn’t create, to build bridges where others built walls, and to celebrate what connects us without erasing what makes us different.

Divide and rule was powerful.

I was asked again recently, “What’s your strategy?”

I’ll be honest, I always find that question incredibly flattering. It makes me think I must be doing something right.

The truth is, there has never been a master plan.

I don’t come from a business or finance background. I had no network. I arrived as an immigrant—an expat, whichever word you prefer, as a complete stranger, and somehow inherited this beautiful community.

Was there luck? Of course. There always is.

But there has also been relentless work.

I spend 15–18 hours a day building this business. I move from one pitch to the next. Accelerators galore, I read constantly. I write constantly. I stay curious. I try to stay focused. 

From the very beginning, I believed these products had to travel from one community to the next. I never wanted them to live in one aisle, one cuisine or one audience.

So I put them everywhere. In desserts. In drinks. In curries. At barbecues. At supper clubs. I wanted people to experience the possibilities, not just hear me talk about them. I wanted to lead with ideas.

I knew, if I wanted to see a premium Pakistani brand on the aisle, I had to build it myself.

I’ve never wanted to hide behind how difficult the journey has been. You’ll often see me smiling and sharing joy. The truth is, I’ve missed birthdays, weddings, Eids and countless moments with the people I love. But I’ve always believed the glass is half full. Every day here feels like a privilege, and I want to make the most of it.

I’ve had to learn fundraising, events, creative direction, writing, recipe development, operations and everything in between. Every day I meet people with advantages I don’t have. Stronger networks. More capital. Family nearby. The freedom of not worrying about rent.

There will always be someone with an edge.

And that’s okay.

Because the only thing I can control is what I build, how hard I work, and whether I remain curious enough to keep learning.

Maybe that’s the only strategy there really is in this wonderfully chaotic life of building a food business: stop comparing your starting line, lean into your strengths, and keep showing up. 💖 taken in London, United Kingdom by @3rdculturekat

Tamarind is proof that the best flavours refuse to stay in one lane. Or even have a lane.

It is sour before it’s sweet. Bright before it’s mellow. It stretches from the kitchens of Pakistan to Mexico, Thailand to Egypt, carrying memories wherever it goes.

For centuries it has found its way into chutneys, curries, barbecues, drinks, sweets and street food. One ingredient. A thousand identities. All equally fabulous.

That’s what I love most about it. Tamarind doesn’t ask where you come from. It simply becomes part of your table.

Maybe that’s why it feels so Third Culture Kat.

Because the most beautiful things in life aren’t confined by maps. They travel, they adapt, and somehow they still taste like home.

When we created our Lahori Tamarind Chutney, we wanted to honour that journey. Chef-crafted from tamarind at its source and layered with thoughtfully chosen spices, juices and aromatics, it’s designed to balance brightness, depth and complexity in every spoonful. Sweet, tangy, savoury and endlessly versatile just as tamarind was always meant to be.

When we put together Aam Ki Zameen in the summer of 2025, we knew it wasn’t just another supper club, it wasn’t just another collaboration. Imagine, two women with vastly different upbringings, even languages and family history, yet so deeply connected over our love for mangoes. 

For Chef Saliha, it is ingrained in her DNA, in the story of her family as a daughter & grand-daughter of farmers. She has grown up with the Chausa orchads back home in Multan, Pakistan. For Chef Punam, Kesar is the smell of summers, from keri no raas to mango srikhand, it’s that connection straight to Kathiyawad in Gujarat, India. 

It was almost elemental than that as summer rolled around, we would get to work, and begin producing the sequel to the original: Aam ki Zammeen Part 2!

The only suitable recipe for these temperatures? Heat Wave ☀️🌶️

Fill a high ball with crushed ice and add 25ml Jalapeño Ginger, 50ml coconut water and 100ml Mexican lime soda. Finish with a cucumber ribbon.

The ultimate middle-of-the-day hydration. You can add a pinch of salt at the end for even more hydration!
