***** Pie of the Weekend - Chocolate Banana Cream Pie!! *****

We normally make our last pie shakes at the bakery on Labor Day weekend, but we made a few too many cups of our ice cream so we want to use them up this weekend! Stop on by during the hours below and we'll be making pie shakes at a discount ($6 for a medium and $8 for a large, normally $10 and $13). You choose your flavor of pie or mini pie and we'll blend it into our homemade Tahitian Vanilla Bean ice cream. Maybe last weekend would have been a better choice when it was almost 90 degrees outside, but I don't check the weather often enough haha. Only while supplies last!
Another pretty exciting development is that we finally cracked the code on making our Chocolate Banana Cream Pie recipe freezable! It took some experimentation on the right level of thickener to use so that it is just as good fresh or frozen, but I think we nailed it. Check out the decription below and you can preorder yours as either Ready To Eat (fridge temp) or Thaw & Serve (frozen).

For this pie we fill the bottom third of our graham crust with our Tigerstripe Chocolate Cream Pie filling. We then saute bananas in butter and steep them in simmering milk to extract all the banana flavor, then throw away the used banana chunks. We use that banana-infused milk to make a banana pastry cream that we spread on top of the chocolate filling and top it all with whipped cream and chocolate curls. We think there's more than enough banana flavor in this pie without having banana slices in the filling, that way you don't have to worry about the banana slices turning brown or mushy after a few days in the fridge.

Sorry for the late notice, but our Pie of the Weekend coming up is Mississippi Mud Pie! We found out that this pie does freeze really well, so we'll have the option for you on the preorder form to order it Ready To Eat (refrigerated) or Thaw & Serve (frozen). This will be our last batch of Mississippi Mud Pie for the year, so you might not want to miss this one!

For this pie we make brownie batter using Ghirardelli dark chocolate and pour it into our Oreo crumb crust. Once that bottom brownie layer is baked, we make a rich middle layer with more Ghirardelli dark chocolate, heavy cream, egg yolks, brown sugar, and bit of espresso powder to bring out the chocolate flavor even more. We then top it with whipped cream to cut through the richness a bit, making this a chocolate lover's dream pie!

We have another new flavor to release...Seven-Layer Bar Pie! If you've never had Seven-Layer Bars at a Minnesota potluck, you need to start attending potlucks more often. The indulgent Seven Layer Bars you grew up with, but now in pie form! The seven "layers" are traditionally graham crackers, butter, chocolate chips, butterscotch chips, walnuts, shredded coconut, and sweetened condensed milk. We prefer the flavor of toasted pecans to walnuts, so we swapped those out and doubled the ratio of nuts in the recipe. We also subbed in evaporated milk for a portion of the sweetened condensed milk to help cut down a bit more on the sweetness. It's still a decadent pie, but not so sweet that you can't finish a piece or two in one sitting!

***** NEW FLAVOR ALERT - LEMON SUPREME PIE!! *****

Sorry for the short notice, but we just finished up a new recipe to release for this weekend: Lemon Supreme Pie! I have had a few customers ask for this pie over the years -- I think Baker's Square used to make it and there are a few recipes floating around the internet. Through some trial-and-error I made a version that we really like here! The filling is not too different than our Raspberry Pretzel Pie, a whipped cheesecake variation, but it has a higher ratio of cream cheese so it's a bit richer and then you fold in whipped cream to lighten it. The topping is lemon cream, which is the same filling we make for our Lemon Meringue Pie. A combination of fresh-squeezed lemon juice, egg yoks, sugar, salt, and cornstarch to thicken it. We like it a bit tart, but not over-the-top tart, so give it a try if that sounds good to you!

***** Pie of the Weekend - SUGAR CREAM PIE!! *****

I'm working on the schedule for the remainder of the year for our Pie of the Weekend flavors, and there just aren't that many weekends left it seems! Some flavors that we've made this year already won't get made again until next year, but some flavors will get one more opportunity to shine.
This week we'll be doing our Sugar Cream Pie! It's one of those pies that is very unique and is a must-try if you've never had one before. Check out the full description below and click on the preorder link if you are so inspired. Hopefully we'll see you soon!

Sugar Cream Pie - Baked Fresh
Regular - $38
Also known as Hoosier Pie, this is a very popular flavor that tastes much like creme brulee in pie form. We make a simple vanilla custard type of filling and sprinkle on a bit of cinnamon-sugar that gets hit with a torch until there is a thin layer of sugar-glass on top. The day we make the pies you can shatter the sugar topping with your fork! If any pie survives for the next day, the sugar topping softens overnight which some people prefer even more.

We're adding another pie flavor to our rotation -- Haupia Pie! I had never heard of this pie until a few weeks ago, but if you like coconut and chocolate you're gonna love this pie. This is our take on a popular Hawaiian pie that traditionally uses half coconut milk and half regular milk, along with a bit of chocolate, to make a beautiful layered pie. We thought the coconut flavor wasn't coming through strongly enough though, so we use 100% coconut milk. We add in Ghirardelli bittersweet chocolate for the chocolate layer, top the pie with whipped cream and toasted coconut, and nestle it in all inside our graham cracker crumb crust. The flavor reminds me of a certain chocolate-covered coconut candy bar that I used to trade for on Halloween night when we'd get back from trick-or-treating 🙂
