Welcoming Palm & Pedal to the Simon Family! 

Camden is a cyclist (road racing, track, and time trial), and I'm a triathlete. Together we have fun stories to share about races and experiences. Plus, we can't to share our favorite places in Greenville, South Carolina for food and drink. Along with our favorite gear, recipes, and more. 

Camden has been working on climbing the ranks with road racing and time trials. He recently discovered the joy of track cycling with new sights to build strength for long-term goals and dreams. He is excited to share his experiences and favorite gear. 

I'm personally in a REDs recovery pause with more bandwidth than usual to build Palm & Pedal. I never lost my passion for triathlon despite my year long pause away from racing in the sport to focus on recovering from Severe REDs with the help of my medical and athletic team. This is part of my comeback story to race and train healthy and encourage others to do the same.

RED-S (Relative Energy Deficiency in Sport) can affect male and female athletes of all sizes. I thought I was fueling well because I was fueling during my workouts. What I didn’t realize was that fueling training isn’t the same as fueling your body. My overall daily carbohydrate intake wasn’t enough to support both my fitness level and the basic physiological processes that keep hormones healthy.

The result? Sluggish workouts. Fatigue. Dizziness. A body that was trying to tell me it needed more support.

Weight gain often comes with feelings of shame, but sometimes it is a necessary part of hormonal healing. One of the hardest parts of recovery has been letting go of that fear and intentionally fueling my body so it has the resources to repair.

Recovery isn’t about rushing back. It’s about trusting the process, even when progress feels slow.

Yesterday, my endocrinologist reminded me of something I needed to hear: hormonal recovery is intentionally slow because hormones need time to adapt and recalibrate. Healing isn’t behind schedule—it’s following biology.

This second photo is from the middle of my REDs recovery journey. My story isn’t fully written yet, and I’m excited to continue to turn each page to find out what happens next. 

I still have no doubt that one day I’ll cross an Ironman finish line. My heart and soul simply loves to swim, bike, and run. The difference now is that I’m choosing to fully support my body along the way, so that finish line becomes a celebration of health, resilience, and everything my body made possible.

Camden started track cycling in June at the advice of Kent Bostick with Team MACK. He wasn’t sure if he would like it, so he borrowed a bike from Andrew Crater with Supra Performance Cycling Team to see if this might become a passion.

And not just any bike, Jake Hill’s bike. That makes it even more special, creating a loving memory that Jake’s spirit continues to ride on.

It took just one experience on the track for Camden to become hooked. Since then, he’s been making the drive to Rock Hill at least once a week to practice, put in the work, and see where this new passion might take him.

He entered his first Omnium unsure of how he would stack up as a Cat 4 track cyclist even with the experience of being a Cat 2 road cyclist.

He walked away with a clean sweep and the top step of the podium.

It may seem like he came out of nowhere, but behind the scenes, he’s been consistently and relentlessly putting in the work with a whole lot of passion and heart.

Warm Thank You

I am humbled to see so many friends here. Thank you for your support with Palm & Pedal! 

We are all in this world together. I choose to see a world where everyone comes together, regardless of pace or what their sport is. My passion is triathlon, and Camden’s is cycling and track cycling, so we share our passions with the hope of sharing the joy of sport. 

Outside of safety, the most important part is finding joy in movement. 

Sport is movement. Our bodies are designed to move. Finding the joy in a movement that fills your cup. That’s what matters. 

We can come together for the love of movement and celebrate that love together. 

My goal with Palm & Pedal is to create a positive place where I can share my journey (along with Camden’s) and perhaps inspire someone else to start their own journey exactly where they are to discover the movement that fills their cup.

Today I’m celebrating releasing, “Starting is the Hardest Part- Part 3,” today, which brings the series to a close.

There is something special about gardening. It quietly teaches some of life’s best lessons. 🌹

A healthy rose bush starts over every season after going dormant over the winter. Some years it puts on an incredible show. Other years it can be set back by storms, bugs, or disease. Sometimes it’s even cut all the way to the ground to start over. 

But it never stops being a rose bush. 

Most days, it’s honestly pretty ordinary. Just green leaves. Then one week there’s a new branch. The next, a few buds. Before you know it, it’s blooming again.

Sometimes it doesn’t bloom the way it did the year before. Sometimes it takes longer than expected. And sometimes, while it looks like nothing is happening above the surface, the most important growth is happening where no one can see.

This week I’ve been thinking about some of my own roses—fun races, unforgettable adventures, and the friendships that made them special. She Tris 2025 in Mount Pleasant keeps coming to mind this week. ❤️

For now, I’ll be over here admiring and celebrating everyone else’s roses. Getting to cheer for friends as they chase their dreams and celebrate their victories is a gift, and I’m incredibly grateful to have so many amazing friends to celebrate.

I want to express my deep gratitude for my season with MinuteClinic.

I started with MinuteClinic as a new grad as a FNP in 2014 and returned in 2020 to be part of the community’s frontline response during COVID. Over the years, I transferred from Knoxville to Greenville, graduated from the Emerging Leader Program, and grew tremendously as both a provider and a person.

MinuteClinic has some of the most dedicated and caring providers and nurses I know. I am proud to have served our communities alongside them.

While I am excited to step into my next career chapter, I pause to appreciate the good times, friendships, and memories made along the way.

A year ago my life shifted thanks to REDs. 💥

I was a newer triathlete enjoying life and finally free to chase the passion of triathlon. I was grooving, and in my third ever triathlon I got 3rd in my age group at State Championship qualifying to go to USA Triathlon Age Group Nationals. Then I had to put training on pause. 

REDs is also known as Relative Energy Deficit in Sport impacting both men and women. It is caused by a deficiency in energy intake that doesn’t match training load and recovery needs. It’s not just about fuelling the work. 

I started working with a dietitian, and my life dramatically changed with newfound energy I hadn’t experienced in my entire life. I learned REDs impacts men and women of all body types, not just lean athletes. 

Fast forward, I’m still passionate for the sport. More now than ever. The phrase, “absence makes the heart grow fonder” rings very true to my heart. 

I’m extremely grateful for my team for the last year I’ve leaned on. My team has over time shifted to meet my needs, but I’m extremely grateful for their impact in my life.

2026 is a curve ball year. Can’t believe we are half way through. 

Camden and I are learning to press pause and reprioritise. 

While this year has been a curve ball year, one the goals Camden set out to do this past year was to get back to Category 2 for Road Racing. He has been going to numerous races in the South to race for upgrades points. 

Last night he reached his goal, and he is BACK to a Category 2! 🎉 This is a huge celebration, because since Camden moved back to Greenville his goal was getting back his fitness on the bike and having fun racing. 

A bitter sweet moment, because recent life events caused us to press pause on National Level events. Looking forward to trying again for 2027 as life settles again. 

Congrats, Camden! So proud of you, and I know how hard you worked for this moment 🎉🩷

🚴‍♂️Hincapie Spring Series Weekend One 🚴‍♂️

We had so much fun celebrating Camden’s first weekend racing with Team MACK. Team MACK is an Elite Masters Racing Team. The goal of road racing as a team is getting your team to the podium. 

Team MACK broke away from the field and got 2nd and 3rd in the Masters 40+ Field on Sunday. 🥈🥉

I had fun celebrating and cheering for friends racing! Way to go, Betties! Congrats again to all the racers for such a fun racing weekend! We love our cycling community ❤️ 

Podiums are fun, but we just simply love cycling. Seeing more people trying cycling and racing is so fun to see. Riding bikes is fun. 🤩
