We will be closing our doors for a summer break from the 9th of August to September the 2nd to recharge our batteries. Couple of weeks left to catch us here if not till after the break.

Nous serons en congés d’été du samedi 8 août au 2 septembre pour recharger les batteries. Quelques tables restent disponibles avant cela sinon, nous aurons plaisir à vous recevoir à la rentrée by @_cypsele

No matter how hard we try June will always be remembered for the brutal heatwave we had to pass. Even with the restaurant fully airconditioned there was no escaping the temperatures once you were stood in front of the woodfired oven and the BBQ. It was a proper test, but somehow we made it through, turning out plenty of bright, refreshing plates along the way.
Outside, summer arrived all at once, and it did the same on the menu. Spring quietly stepped aside as some of our favourite fruits started edging towards their best, bringing a welcome shift in flavour. Around the restaurant, things bloomed too, with our floral installations finally going in and giving the space the lift we’d been waiting for.
Most importantly, we got to spend the month cooking for lots of happy guests, serving long lunches, relaxed dinners, and settling into our first June. It’ll probably always be the month we battled the heat, even if, by the sounds of it, we’ll be doing it all over again not before too long. taken in Rue des Deux-Ponts (Paris) by @_cypsele

Many people ask me what my favorite new openings in Paris are, and Cypsele is always one of my answers.

I don’t photograph restaurants simply because I work with them. I photograph them because I genuinely believe in what they are building.

A young, vibrant restaurant that keeps growing every time I return. Each visit feels more precise, more confident, and more alive.

April came round thick and fast chez Cypsele, spring has finally sprung and what is the best season to cook in is really feeling like it, tender shoots and greens have started flicking off of our plates, foraging season kicked off, our road got dug up, we went to our first awards ceremony, new plates got designed , some celebrated their birthdays, some new faces passed through our kitchen, some secret talents got discovered, some bike crashes were had, some very dear friends came by and one of us even had their biggest hero come in and eat (not without getting way too startstruck to work of course). This April certainly has been memorable to say the mleast and it’s crazy to think that we are soon entering our 6th month by @_cypsele

Nous serons exceptionnellement ouverts les lundi 27 et mardi 28 avril afin de permettre à certains de nos amis du secteur de venir dîner chez nous. Les réservations sont ouvertes sur notre site web.
