Looking forward to see how the patina over time develops on this ones.
Cured with hassui, so far the very best finish I’ve tried for daily used objects.

-> Mardi 18h45 à miam14 paris 14ieme
-> Mercredi 18h30 à la ferme amapdespresneufs@gmail.com

❤️Want the proper Paris list with vibe check and how to book? Comment “PARIS” and I’II DM you the full Gin & Bone article to save for future trips 🇫🇷 and hopefully I’ve got you covered.

Yes, yes Paris is full of wonderful food on practically every corner. If I included every restaurant worth eating at, we’d be here until Bastille Day.

These are simply the ones making headlines, turning heads, filling tables and currently giving us something to talk about - from the institutions we’ll probably never tire of to the new openings everyone suddenly has an opinion on.

And before anyone starts sharpening their steak knives: it’s a grid, not the Michelin constitution. Other suggestions are positively encouraged.

Tell me what I’ve missed, what you’d move and the Paris table you’d defend with your life.

On se voit près des escargots. Bisous. 💋

Cypsèle recently delivered my favorite restaurant meal I’ve eaten all year: an 85-euro lunchtime prix fixe (available even on Saturdays!) that proved innovative but never challenging, encapsulating perfectly the “joy” in the word enjoyable.

Amuse-bouches included a lightly poached oyster with a light beurre blanc, a tempura-fried bit of veal as silky as custard within the thin layer of batter, a small bit of tender eggplant draped with a silky sheet of veal carpaccio and settled in a bed of lactic buttermilk, and a corn soup that was certainly the corniest corn I’ve ever had in my life. And in France, that’s saying something.

For the first course, silky, barely cooked red mullet was stuffed with foie gras and sat in a puddle of torched yeast sauce with a small pile of spinach alongside.

The next course was listed as the first on the menu, but one bite made it easy to see why a change was made. Caramelized green beans, pistachio, and silky raw squid proved the perfect palate cleanser between the richer bites before and after.

Several textures of duck came together with a wedge of butter-fried bread topped with a duck liver parfait, and a quenelle of mustard-infused pistachio sauce was topped with just a touch of fermented nectarine. A small pile of sautéed mustard greens added a bit of relief to this delicious plate.

Dessert was a plummy play on a Saint-Honoré with reine-claude compote and both yellow and black mirabelles wedded with a judiciously clove-infused chiboust paired with exquisite pine nut ice cream.

The mignardises, too, were an ode to the season: jammy poached fig with whiskey zabaglione, bay-infused shortbread lunettes sandwiched around the blackberriest blackberry jam I’ve ever tried, and two chewy cherry caramels it was impossible to eat neatly unless you licked them right off the paper.

On the whole, I found Cypsèle both playful and refined, both true to ingredients and unapologetically technique-driven. And it’s no small detail to add that I also found the front-of-house staff to encapsulate the harmony between being omnipresent yet never overpowering, which really makes the experience.
