Whole baked sea bass fresh out of the oven — crispy skin, juicy flesh, and loaded with garlic, herbs, lemon, and chili. I stuffed it, slashed it, and let the oven do the rest.

Served with a bright lemon-parsley drizzle at the end for that extra freshness. Simple ingredients, big flavor, no fuss.

🐟 Baked Whole Sea Bass (Serves 3 fish)

Ingredients:

Fish + base:

* 3 whole sea bass, gutted and cleaned
* 3–4 tbsp olive oil (plus more for drizzling)
* Salt, to taste
* Black pepper, to taste
* 1–2 lemons, sliced
* 2 shallots, thinly sliced

Garlic herb stuffing:

* 6–8 cloves garlic, finely minced
* 1 large handful fresh parsley, chopped
* 1 tsp chili flakes (adjust to taste)
* Zest of 1 lemon
* Salt & pepper, to taste
* 1–2 tbsp olive oil (to bind mixture)

Finishing drizzle:

* 2–3 tbsp olive oil
* Juice of 1 lemon
* Salt & pepper, to taste
* Small handful fresh parsley, chopped

⸻

👩‍🍳 Instructions:

1. Prep the fish:
 Rinse the sea bass, then pat completely dry with paper towels.
2. Score & season:
 Cut 3 diagonal slits on each side of each fish. Drizzle generously with olive oil inside and out. Season the cavity and skin well with salt and pepper.
3. Make the garlic herb mix:
 Combine minced garlic, parsley, chili flakes, lemon zest, salt, pepper, and olive oil into a thick paste.
4. Stuff the fish:
 Rub the garlic herb mixture all over the fish — inside the cavity and pressing it into the slits.
5. Prepare the tray:
 Lay sliced shallots and lemon in a large baking dish. Place the fish on top (they can be snug, just make sure heat can circulate).
6. Bake:
 Bake at 450°F (230°C) for about 25–35 minutes, depending on size. The fish should be opaque, flaky, and the skin lightly golden.
7. Finish:
 Mix olive oil, lemon juice, salt, pepper, and parsley. Spoon or drizzle over the hot fish right after baking.
8. Serve:
 Best served immediately with rice, potatoes, or fresh bread to soak up the juices.

Juicy roast chicken with crispy skin, basted in buttery drippings and finished with homemade gravy 🤤 The secret is seasoning butter under the skin and letting those pan juices do their thing.

Pat the chicken dry really well. Season the inside with salt and pepper, then stuff it with lemon, onion, celery, a whole head of garlic, and fresh rosemary.

Mix softened butter with your favorite seasoning blend (I’m using a signature roast chicken spice blend I made 👀) Carefully loosen the skin and spread most of the butter underneath the skin. Melt the remaining butter, mix it with a drizzle of olive oil, and brush it all over the outside for crispy skin.

Pour some broth into the pan around the chicken. Roast at 375°F for about 1½ hours, basting every 30 minutes with the pan juices.

Broil for about 2 minutes at the end until the skin is golden and crispy. Let the chicken rest, then use the drippings and broth in the pan to make a rich homemade gravy.

Best Thanksgiving Turkey Recipe! 🦃🍋

If you’re making turkey this Thanksgiving, I highly recommend dry brining it a couple of days ahead! It makes such a difference in flavour and gives you that beautiful golden, crispy skin.

🦃 Lemon Garlic Herb Turkey (6.5 kg / 14 lb)

Dry Brine:

* 2½ tbsp Himalayan salt
* 1 tbsp each garlic powder, black pepper & 7 spice
* 1 tbsp each fresh rosemary, thyme & sage, chopped
* Zest of 1 lemon

Feel free to use your favourite seasonings or dried herbs instead!

Compound Butter:

* ½ cup unsalted butter, softened
* Zest of 1 lemon
* 3–5 garlic cloves, minced (or more!)
* ½ tsp black pepper

For Roasting:

* Olive oil
* Optional: onions, carrots, celery, lemons & fresh herbs

Instructions:

1️⃣ Prep: Make sure your turkey is fully thawed and remove the giblets. Pat it VERY dry with paper towels, especially around the wings and legs. Removing moisture is key to crispy skin!

2️⃣ Dry brine: Mix all dry brine ingredients and rub all over the turkey, including underneath the skin where possible.

3️⃣ Refrigerate: Place on a rack over a tray and refrigerate uncovered for 24–48 hours. This helps dry out the skin even further!

4️⃣ Compound butter: Mix butter, lemon zest, garlic and pepper. Pat the turkey dry again wherever needed without removing the seasonings. Gently loosen the skin and spread the butter underneath and lightly over the outside.

5️⃣ Prepare to roast: Drizzle with olive oil. Optionally, add chopped vegetables, lemon and fresh herbs underneath the turkey for extra flavour.

6️⃣ Roast: Cook breast-side up at 425°F for 30 minutes, then reduce to 325°F until the internal temperature reaches 180°F (82°C) in the thickest part of the thigh, without touching bone. Check the breast as well. For a 6.5 kg turkey, allow approximately 3½–4½ hours total. If the skin browns too quickly, loosely cover with foil.

7️⃣ Rest: Let the turkey rest for 30–40 minutes before carving to keep it juicy!

Crispy golden skin, juicy meat and so much flavour. Trust me, dry brining is worth the extra prep! 🤎

Football season is here and you can’t watch the game without wings 🏈🍗 Honey garlic is always a crowd favourite, and this version is so easy to make at home with just a handful of ingredients.

I made the sauce right in my ZWILLING MILANO frying pan. The ceramic non-stick coating is perfect for sticky sauces like this, it’s made without PFAS, also known as forever chemicals, and cleanup is super easy.

Honey Garlic Chicken Wings

For the wings:
• 1 lb chicken wings
• 2 tsp olive oil
• ½ tsp garlic powder
• ½ tsp onion powder
• ½ tsp paprika
• ½ tsp lemon pepper
• ¼ tsp salt
• 2 tsp cornstarch

For the sauce:
• 1 tbsp butter
• 2 cloves garlic, minced
• 2 tbsp honey
• 2-3 tbsp soy sauce

For topping:
• Sesame seeds
• Green onion
• Chili flakes
• Extra drizzle of honey

Pat the wings dry, then toss with the olive oil, garlic powder, onion powder, paprika, lemon pepper, salt and cornstarch.

Air fry at 425°F for about 20 minutes, flip, then cook for another 8–12 minutes, or until golden, crispy and cooked through.

Once the wings are done, melt the butter in a frying pan over medium-low heat. Add the garlic and cook briefly until fragrant, then stir in the honey and soy sauce. Let it cook for a minute or two until glossy and slightly thickened.

Add the crispy wings to the pan and toss until fully coated.

Plate the wings, then finish with sesame seeds, green onion, chili flakes and an extra drizzle of honey.

Friendsgiving on a budget 🍂🧀

This grazing board came together for under $25 with a little help from the Armstrong cheese promo at FreshCo and a few staples I already had in my fridge and pantry.

Armstrong Cheese Bars (400 g) and Shreds (320 g) are on sale for $4.88, so I used the cheese as the base of the board and filled everything else in from there. I already had things like hummus, jam, olives and crackers at home, then picked up a few extras like seasonal fruit, salami and some festive touches to bring the whole thing together.

That’s my favourite part about making a grazing board — you really don’t need to buy everything from scratch. Use up the spreads, crackers, fruit, nuts or little snacks you already have, then add a few fresh ingredients to make it feel special.

And don’t forget to scan your Scene+ card at checkout to save even more.

Officially entering the time of year where all I want is a big pot of something warm and cozy for dinner. This one is so comforting, comes together in one pot, and is definitely going into the fall dinner rotation.

Save this one for a cozy night at home 🍂

Creamy Sausage Tortellini Soup

* 1 small onion, chopped
* 3 cloves garlic, minced
* 2 tbsp tomato paste
* 2 cups fresh spinach, roughly chopped
* 4 cups chicken broth
* 1 cup milk
* 1 package cheese tortellini (about 300–350 g)
* Salt & black pepper, to taste
* Chili flakes, optional

Instructions

1. Add the carrots and onion to a large pot with a little oil and cook over medium heat for about 4–5 minutes, until they begin to soften. Add the garlic and cook for another minute.
2. Add the hot Italian sausage, breaking it apart as it cooks. Once fully browned, carefully drain any excess fat.
3. Stir in the tomato paste and cook for about 1–2 minutes.
4. Add the chopped spinach and stir until it begins to wilt.
5. Pour in the chicken broth and bring everything to a boil. Reduce the heat and let it simmer for about 10 minutes, or until the carrots are tender.
6. Stir in the milk, then add the tortellini.
7. Simmer according to the tortellini package directions, usually another 3–5 minutes, until tender.
8. Taste and season with salt, pepper and chili flakes if you want a little extra heat.

Serve warm and enjoy! 🤍

Greek Chicken Noodle Soup 🍋🥣

Chicken noodle soup with a little Greek-inspired twist. The lemon, fresh herbs and egg finish make this broth so flavourful, and it’s a simple way to make a classic feel a little different.

Ingredients

2 chicken breasts
1 carrot peeled and sliced
2 celery stalks, diced
1 onion, diced
3–4 garlic cloves, chopped
6–8 cups chicken broth
Pasta of your choice
2 eggs
Juice of 1–2 lemons, plus extra for serving
Fresh dill
Fresh parsley
Olive oil
Salt & pepper
Your favourite chicken seasoning
Instructions

Season the chicken breasts with salt, pepper and your favourite chicken seasoning.
Add a drizzle of olive oil to a large stock pot and sauté the onion, garlic, carrots and celery until they begin to soften.
Pour in the chicken broth and add the seasoned chicken. Bring to a gentle simmer and cook until the chicken is cooked through.
Remove the chicken, shred it and set aside. Bring the broth back to a simmer and add your pasta. Cook according to the package directions.
While the pasta cooks, whisk the eggs and lemon juice together in a bowl.
Slowly whisk about 1 cup of hot broth into the egg and lemon mixture. This tempers the eggs before they go into the soup.
Slowly stir the mixture back into the pot over low heat. Add the shredded chicken, dill and parsley. Don’t let the soup come to a boil once the egg mixture is added.
Serve with extra lemon, fresh herbs and a drizzle of olive oil.
The pot 🤌🏼

I made this in the ZWILLING MILANO stock pot, and the heavy-gauge aluminum heats quickly and evenly, which is especially nice for keeping the broth at a gentle simmer. The tempered glass lid also makes it easy to check on everything while it cooks.
