If I could only eat one thing for the rest of my life, it would be tomatoes 🍅 

Not just any way though. Timatim (a simple Ethiopian tomato salad, fresh and bright) on spongy injera or a slice of crusty sourdough bread. As I'm writing this, my mouth is already watering.

Tomatoes were the first thing I ever planted in my garden, and they never disappointed me. 
And they're so versatile, adding flavor, texture, and color to salads, sauces, and stews. Over the years I've fallen in love with Sun Gold, heirloom, and zebra varieties.

These photos are my reminder to get outside, get my fingers dirty, and start planning this season's garden.

What tomato variety do you always come back to? I'm always looking for some inspiration for my next favorite!

I was @taste.washington and had @delasoilrestaurant beet tartare and it made me crave Key Sir so bad I had to make this 🫜

Save this for the weekend 🔖

Key Sir — Root Vegetable Stew

Ingredients 
• 3 Tbsp avocado oil 
• 1 red onion, diced 
• 4 cloves of garlic, minced 
• 1 thumb sized fresh ginger, grated 
• 2 carrots, sliced 
• 2 beet roots, sliced 
• 4 medium potatoes, sliced 
• 2 jalapeños, for garnish 
• Salt & pepper, adjust based on preference 
• Water, as needed for a desired consistency

Method 

1. Build the base: Add oil then onion, garlic, and ginger to a pot over medium-low heat. Cook 8–10 minutes, stirring, until fully soft and glossy
2. Add vegetables: Add carrots and beets, cook for 5 -10 minutes and add potatoes 
3. Simmer gently: Pour in enough water to just cover. Cover and simmer on low 15 - 20 minutes, until vegetables are tender and the liquid has reduced to a thick, spoonable stew
4. Finish: add salt & pepper and garnish with jalapenos 

How it’s served: Spoon onto injera and eat with your hands. It’s often part of a larger fasting platter alongside lentils or greens.

the farm literally grows what ends up on your plate. 🌿

@acreresort might be one of the most beautiful places I’ve eaten in my life. A working farm, orchard, and restaurant tucked into the Cabo jungle, where the open kitchen hangs dried chilies and heirloom corn from the ceiling, and every dish tastes like it was pulled from the ground hours ago.

Charred octopus. Yellow corn tacos. Ceviche with edible flowers. Chips with mole. All of it landed on those iconic blue tile tables and I genuinely didn’t know where to look first.

If you’re going to Cabo, save this post for your next trip. 📌
