Kaiseki (ζ‡ηŸ³) is a traditional Japanese multi-course dining experience centred around seasonality, balance and respect for ingredients. 懐 (Kai) = bosom, chest or robe 石 (Seki) = stone β€œstone in the robe.” Zen Buddhist monks would place warm stones inside their robes to ease hunger during long periods of fasting. Kaiseki is about selecting ingredients at their peak, preparing it thoughtfully and creating a journey through a series of small dishes served alongside the Japanese tea ceremony. Satisfies without excess Highlights the ingredient rather than the chef’s ego A simple meal served with tea eventually evolved into the refined dining experience known today. Amaranthaceae | Met our greens with @_s.a.b.b.a_ & @groovygreens.cpt last week πŸ₯¬ an incredible β€˜fun-dining’ experience ⭐️ by @_s.a.b.b.a_
Designer @unclesalik , founder of @leafapparel and part of @pot.plant.club, created a once-off limited edition β€œSABBA YOUR GREENS” piece. At @_s.a.b.b.a_ , we believe taste doesn’t only reside in food. It resides in the way we live. In the quality of what we consume, the care behind what we create and the intention we bring to our craft. The attention to detail that Salik brings to LEAF is reflected in the way @groovygreens.cpt cultivates produce and the way we approach food at SABBA. Captured inside The Green Room, surrounded by the microgreens that feed our seasonal menu series, this collaboration represents more than a T-shirt. It’s an invitation to look closer and understand where taste begins. A limited collaboration between SABBA, LEAF and Groovy Greens. DM to reserve. by @_s.a.b.b.a_

TASTE DOESN’T JUST RESIDE IN FOOD. IT RESIDES IN THE WAY WE LIVE. @asu_capsule invited @_s.a.b.b.a_ into the belly of the forest at @derust_hideaway, captured by @nicolasuttle by @_s.a.b.b.a_
Backstage choreography. A working kitchen. Beetroot folded like silk around whipped amaranth feta. Precise and intimate. Can you feel the care in the fingertips? A @groovygreens.cpt juice sharpened into an emulsion. Then the steak frites. Energy shifts. Kitchen at full action. Less delicate, more hungry. Generous. Can you smell the fat, salt and hot oil? Piles of fries, parmesan snowing, chimichurri waiting to cut through the richness. @_s.a.b.b.a_ x @groovygreens.cpt ❀️‍πŸ”₯ by @_s.a.b.b.a_

@_s.a.b.b.a_ x @groovygreens.cpt Volume 01 | Amaranthaceae An opening of the doors to our house and letting people step into this thing we’ve been building quietly for the past long while. There was a lot of care, conversation and hands to it. Considered details that only made sense once the room was full. For a few hours, the Green House became its own little world. Friendly strangers were seated, bread was torn, plates were passed, candles burned low, and it soon started to feel familiar. The dining room exhaled and the night fully loosened its shoulders, exactly as we’d intended. Thank you to everyone there, for allowing the novelty of the evening to unfold slowly, in its own warm and beautiful way. Not as a perfectly polished performance, but as something alive around the table. Gratitude to @_s.a.b.b.a_ for everything πŸͺ„ @asourstory for the bread, @creamofthecropbutter for the dairy & @african_oils_official for the olive oil More soon. by @_s.a.b.b.a_
