Almost every week since the beginning of 2022, the @etal.tulsa team has operated high-level and creative food concept pop-ups out of Foolish Things Coffee Company, creating a loyal community and attracting a cult-like following in the culinary world of Tulsa and beyond.

“I don’t know how else to describe this concept besides [Japanese] homestyle. It’s not an omakase (a chef’s choice dining concept); It’s a meal that is basically structured around how Japanese families usually eat — you always have rice, pickles, miso soup. And then usually a menu will include dishes of different kinds of preparations, like a little something fried, a little something raw, a little something pickled, something off the grill, something simmered. We’re still playing with it, but the idea is to offer a very affordable set menu where you can come in and eat this big, beautiful, varied spread of all these homestyle Japanese foods.”

Named after a Japanese term that describes the feeling of nostalgia through a sensory experience — most often from food — @natsukashii.tulsa will be coming to fruition in the summer of 2025.

In the meantime, be sure to stop by their Hong Kong Diner Lunar New Year pop-up in collaboration with @rabbitholenwa in Tulsa, OK on February 3rd, from 5pm-1pm at @foolishcoffee or in Fayetteville, AR on Wednesday February 5th at @arsagasmilldistrict.

I love my job and I love Tulsa // @notcairo111 saw a photo @streetjuicefilm shot of @chloe__butter and I’s Butter Bar promo shoot and was inspired to make this painting based on it.

Please hire and/or admire these artists for their incredible work. I can’t appreciate them enough. I’m so grateful for this community and the work we get to do together.

Had the pleasure of serving the cast and production crew of @outsidersmusical for their visit to Tulsa in January. Truly a night I’ll never forget. And wishing these amazing folks the best for opening weekend. Break a leg, y’all.

I’m extremely excited and honored to be collaborating with @chloe__butter on the next Butter Bar menu.

Chloe pitched the idea a while back and I had no idea how it would come together given my very limited experience with pastry. But I would never doubt her talent, vision and taste, so after just one manic idea/riff session, she showed me how it could. Can’t wait to share this with all who can make it.

Come try it with your valentine on Saturday 2/17 or once a month for the next lil bit. It’s gonna be wild. by @_sam.luna_

I got to live out a dream last weekend. I met @joeldanielphillips and @christinearia (of @litescalates) at Dumpling Night 6 months ago and nerded out hard about our shared love of @piercebrownofficial’s books. When they said they were planning a fan convention for the Lightbringer book tour and wanted to host a fan dinner with Pierce, I said they’d found the right cook if they needed one. Fast forward to Friday night, I got to cook and serve a book-inspired menu to my favorite author and some wonderful friends and fans.

Thanks to @chloe__butter, @tannermccord and Josh Knorr for helping me pull it off. Thanks to Joel and Christina for working with me and congratulations for knocking it out of the park with HowlerCon. A bit of personal news - today was my last day in the engineering world as I’m joining the talented team of chefs at @etal.tulsa !
