A hearty dish for a cool evening : homemade potato pancakes made from well-drained, grated potatoes, spelt flour, salt, pepper, eggs, breadcrumbs, and onions, fried until crispy in a pan. Served with homemade creamed savoy cabbage with onions in a creamy sauce and Bavarian meatloaf. I wish you all a good start to the new week.

A sweet start to the day : fresh, still warm sourdough bread made with lievito madre, spelt flour, and semolina, filled with hazelnuts, caramel cream, and chocolate. It underwent autolyse and a cooked oat mixture was added. The long, cool fermentation results in a complex aroma, a light and airy crumb, and a crisp crust. I topped mine with pistachio cream. Wish you a wonderful day.

Hot and crispy : chicken wings, marinated in a spicy, homemade marinade of honey, soy sauce, olive oil, ginger, chili, salt, pepper, and garlic, were baked until crispy after resting in the oven. They were served with a fresh cucumber and bell pepper salad with mayonnaise, oil, milk, vinegar, mustard, salt, and pepper. Delicious and fresh.

Delicious and fresh : homemade potato pancakes made from boiled potatoes, spelt flour, egg, salt, and Italian herbs. After shaping, they were coated in breadcrumbs and then fried until crispy in olive oil. They were served with fresh spinach and a creamy béchamel sauce, seasoned with salt and pepper. A very tasty vegetarian combination. Have a wonderful day.

A sweet treat : homemade skoleboller or skolebrød. Here, the classic version is made with a warm and mild sourdough starter , Lievito madre, instead of yeast. Fluffy pastries, a spicy cardamom aroma, creamy vanilla pastry cream, icing, and coconut flakes harmonize perfectly. A few pastries were also refined with white chocolate chunks and freeze-dried raspberries. I wish you a lovely Saturday.

A twist on a classic : lasagna with a homemade Bolognese sauce, made especially flavorful with lots of fresh carrots, tomatoes, and onions, layered and topped with a homemade béchamel sauce. Comfort food for these increasingly cold days. Have a wonderful day.

Fresh from the oven : airy and fluffy sourdough ciabatta made with lievito madre, spelt flour, and semola rimacinata. The high hydration and the first warm, then long cold fermentation ensure an airy crumb and complex aromas. The ciabatta loaves were then baked at a high temperature after being dusted with semolina flour and allowed to rest briefly. Have a wonderful day.

Comfort food on a stormy and rainy day : chicken strips with fresh brown mushrooms in a creamy sauce with cooking cream, mustard, passata, honey, Italian herbs, salt, pepper and onions, thickened with flour, served with rice and iceberg lettuce with a homemade mustard dressing.

Spicy and flavorful : the weekend kicked off with tender beef goulash. The meat was briefly seared in oil and plenty of red onions, then tomato paste, spices, and broth were added. The beef simmered for five hours over low heat, during which time orange, green, and red bell peppers were added. The goulash was seasoned again and then served hot with fresh bread. I wish you all a great start to the weekend.
