Prepping is half the fun! We are getting in touch with our South African heritage in preparation for our collaboration with @edge.africa this weekend. Purposefully culled fresh local springbok carpaccio from Morester farm is on the menu on Saturday as well as Chef Vusi’s take on local lamb from De Glebe and west coast mussels from Saldanha Bay. Marianna’s authentic Malva pudding made the traditional way with indigenous geranium. An absolute treat. Join us if you can there are some seats left for our late lunch on Saturday. DM for details. #farmtotable #heritageday🇿🇦 @voyagerpiquetberg @v4vusi @absiep taken in Voyager Boutique Homestead Retreat by @absiep

EDGE is leaving Cape Town for the weekend.

🇿🇦 On Heritage Day Long Weekend (26 & 27 September), we’re heading to Piketberg for a two-day collaboration with The Flying Fig Garden Bistro at The Voyager.

Saturday
lunch 1pm-3pm / dinner 7pm-9pm

Sunday
lunch 1pm-3pm

Two kitchens, one table, and a menu built around the landscape: fresh seafood, farm-to-table produce, venison and outdoor cooking.

For R695 per person, you’ll get a four-course meal and welcome cocktail, with EDGE joining The Flying Fig for something we don’t get to do very often — cook outside our usual four walls, in their world, with their produce and their approach.

And if Piketberg feels a little far for lunch or dinner, we’ve sorted that too.

A shuttle will run from Cape Town CBD to Piketberg on both days. Simply request a seat when making your booking.

Seats are limited and advance booking + payment are required.

From the fires of Africa, we mean every word.

Every flame. Every coal. Every ember. Every ingredient has a purpose.

At EDGE, fire isn’t just a cooking method—it’s the thread that ties together the stories, flavours and traditions of a continent. Drawing on Pan-African ingredients, time-honoured techniques and the transformative power of live fire, every dish is crafted to honour where it comes from while creating something unmistakably our own.

This is food shaped by fire, rooted in Africa, and made to be shared.

This week we welcome South Africa’s roaming restaurant concept, EDGE, onto the guest chef pass.

The brainchild of duo, Vusi Ndlovu and Absie Pantshwa, whose mission is to unite the cornucopia of flavours that make up the entire African continent, one dish at a time.

Cooking almost exclusively over coals, EDGE presents a thrilling celebration of Pan-African cooking and heritage, this is food that connects cultures and regions, in full-throttle technicolour, think knockout dishes like ‘Torched Mackerel, Jollof ‘Consommé’, Tomato Fondue’, ‘Grilled Asparagus, Mussels, Beer Broth, Ginger’ and ‘Goat Chops, Butternut Masala, Watercress’.

At the heart of it all is the magnetic Absie, who joins us to talk about the importance of concepts like EDGE and what it means to share the richness and diversity of the African pantry with the wider world.

Don’t miss your chance to catch EDGE in action this week on Charlotte Street. taken in Carousel London by @absiep

Happy Africa Day from all of us at EDGE AFRICA ❤️

EDGE was built on one simple mission:
to celebrate the beauty, ingenuity and depth of African gastronomy, and to bring the fires of Africa to your plate.

From the ingredients, to the stories, to the people behind it all — we’ve always wanted to create something that feels proudly African while pushing forward into new territory.

Today we just want to say thank you.
To every guest, every collaborator, every supplier, every chef, every artist, every friend and every person who has supported this vision along the way — thank you for helping make EDGE what it is becoming.

We’re incredibly proud of what’s been built so far, and even more excited for what’s still to come.

Vusi Ndlovu is the award-winning South-African chef on a mission to unite the cornucopia of flavours that make up the African continent, one dish at a time.

Cooking almost exclusively over coals, Vusi presents a thrilling celebration of Pan-African cooking and heritage, putting under-the-radar, heirloom ingredients front and centre and reimagining what’s possible in the process.

One minute you’re in Nigeria, eating ‘Smoked Suya Spiced Carrot, Iru Yoghurt, Peanut-Chilli XO, Guanciale’, the next you’re in South Africa by way of ‘Goat Chops, Butternut Masala, Watercress’. This is food that connects cultures and regions, in full-throttle technicolour.

As Vusi puts it “We’re not trying to hide ingredients, we want to celebrate them and keep the flavours clean, focused and potent”. Get set for a residency that honours and uplifts the vibrant diversity of the African pantry into something groundbreakingly delicious. taken in Carousel London by @absiep
