Legendary✨ Great food is only as good as the ingredients behind it. For our beloved bread salad, that means starting with exceptional bread from our friends at @acmebreadcompany #breadsalad by @acmebreadcompany
Pithivier au canard: Sonoma County duck and pork wrapped in puff pastry with tomato confit, wild mushrooms, and mesclun salad. A pithivier is a French pastry with a filling enclosed between two layers of puff pastry. They can be sweet or savory. For ours, we made a farce of duck, pork, chanterelle mushrooms, garlic, herbs, and spices. Then it’s pleated, brushed with egg yolk, chilled, brushed again with egg yolk and cream and then baked until golden brown and crisp. The pastry gets nice and flaky while the filling stays juicy and flavorful. My friend Juliet made the vegetables to go with the pithivier. And @acmebreadcompany made the puff pastry. by @acmebreadcompany

Why does fermentation matter so much in bread? 🍞⏳ At Acme Bread in Berkeley, we learned how a long fermentation develops deeper flavor and helps bread hold moisture. When it is rushed, the bread dries out quickly and loses quality. Ever tried rushing bread at home? Yeah… we have too. 😅 Watch the full Acme Bread tour on our YouTube channel to see the complete behind the scenes process. 👀✨ link in bio! by @acmebreadcompany
They go through THIS much flour every week?? 🍞👀 We went on an exclusive behind-the-scenes tour of Acme Bread in Berkeley to see how it all works. Their flour is blended from carefully selected wheat, milled in Utah, and delivered into massive silos. crab season never overstays its welcome, make this little cutie before it’s too late! 🦀 🍞 • local dungeness crab tartine, french butter, green garlic, fresno chili & chive • Recipe: 1 cup cooked and cleaned crab meat 1/2 stick of french butter 1 teaspoon minced garlic 1 tablespoon chopped green garlic 1-2 tablespoons minced Fresno chili Zest and juice of 1 lemon 1 tablespoon chopped chives 1 slice levain or country loaf Salt to taste Add 1 tablespoon of olive oil to a frying pan, once hot add bread and toast on both sides until golden brown. Once browned, pull off and set aside. Shave radishes into an ice bath and set aside. Melt butter in a small saucepan, add garlic and green garlic, stir continuously until melty and fragrant, 1-2 minutes. Add in cooked crab meat and stir until coated in the butter and is fully warmed through. Remove from heat, add in the lemon zest, lemon juice, chili and chives. Taste and adjust with salt as needed. Top the toasted bread with the crab mixture, add picked tarragon leaves, shaved radishes & flaky salt and enjoy! 🧡 by @acmebreadcompany
