There's always something noteworthy on the table at Olive Bar & Kitchen (@olivedelhi). Today's highlights were my conversation with Chef Dhruv Oberoi (@chefdhruvoberoi), who has just come back from a weekend spent at Dr Manisha Oraon's farmstay near Ranchi (@journey_2_home), and a wine flight paired with cheese canapés on offer at the restaurant.

Olive has always been a leader in the business of wine promotions - I remember, back in the good old days, the time I spent with @adsingholive, @wineguyindia (Subhash Arora), @sabygorai and @studioculinor (Mohit Balachandran), planning wine events and sampling wines from around the world.

The ongoing wine flight promotion, which features a Prosecco, a crispy White from Bordeaux (Sauvignon Blanc-Semillon) and a smooth, full-bodied Red, also from Bordeaux, is very much a part of Olive's long tradition of promoting a wine culture in the country. Apart from the cheese canapés, the wines paired heartily with Olive's signature beetroot salad and a pesto flatbread.

Top this up with Dhruv's account of his visit to a Jharkhand vegetable market, where he saw people quaffing freshly prepared rice brews together with pork extracted from freshly slaughtered pigs and roasted in makeshift earthen ovens with masalas mixed in the right proportions and kept in banana leaf katoras. You can't get more farm to fingers than that. A wine flight paired with a slice of tribal life - it can't get better than that. taken in Olive Qutub by @adsingholive

Can hospitality change the identity of a city?

The Hidden Club in Delhi.. India’s smallest bar and only true speakeasy.

People talk about The Hidden Club because it’s a four seater space inside @olivedelhi , unofficially the smallest bar in India. But what they should be talking about are the drinks themselves and the whole experience. Because this is easily one of the coolest, most special places to get a drink in the country.

It starts with the fact that it’s the only real speakeasy in the country. No Instagram handle. No videos revealing how to find it and how to get it. No branded bottles (everything is decanted unless the team decides to pop a beer with you). 

Then it comes to the experience itself. You’re going there for a genuine omakase tasting experience. The Hidden Room functioned as the research lab for the Olive Group for a long time under the leadership of Chong and for most of the week that continues to be its primary function. So on the three days that it opens you experience the fruits of this research, drinks that are avant garde and experimental, that aim to push the boundaries, that don’t feel the need to be safe.

It’s a 6 course tasting menu starting with two zero ABV drinks and progressively increasing in strength. The menu changes every month so it’s not point detailing the drinks (though I have listed my menu at the end). But a roasted barley tea that reminded me of a bhutta, banana infused Campari served with tonic and banana foam, a take of Between The Sheets with much more complexity, depth and adventure because they use merlot to tie together the seemingly polar opposites of Cognac and Run and Raisin (with caramel, Angostura bitter & sea salt thrown into the mix)…. these are wildly inventive and balanced drinks. 

But the best part honestly is the interaction with the team. @mr.highballer presides over it all like a wise and funny master of ceremonies, someone who can give you technical perspective or cultural context or industry insights. @sanskari.barman is the life of the party, chatty and constantly entertaining. And @anmol_chettri070 , the quiet one, brings an obsessive perfection to the world of garnishes.

AD Singh(@adsingholive) arrives for our weekday lunch at Olive Café & Bar(@olivecafebkc) in a pale teal blazer and white shirt. He’s just back from Japan via Delhi, looking as breezy as the room’s vibe, and he settles in with the ease of someone who has spent decades making restaurants feel like home for everyone. He asks his team to send out a few of their greatest hits to our table, and eats with focus and curiosity, as if it were not his own restaurant, as if he had not already done a dozen tastings of all of this just this year. After 35 years in this industry, it is quite something to watch.
