There’s something especially wonderful about seeing a chef you’ve known and admired step into a new kitchen—and we couldn’t be more excited to hear that our dear friend, Chef Rupert Garcia, is now Chef de Cuisine at The Post Hotel in Lake Louise.

We’ve known and worked with Rupert during his years at Hotel Arts and Fairmont Palliser, and we’ve watched his career take him from Calgary to some of the most prestigious kitchens in North America, including Michelin-starred restaurants in New York and San Francisco.

Originally from the Philippines, Rupert began cooking professionally at just 16. After graduating from SAIT, he earned his Red Seal Chef certification and membership in the Chaîne des Rôtisseurs. His cooking draws on contemporary, French and Asian influences—and now, he’s bringing that experience to one of Canada’s most storied mountain retreats.

The Post Hotel’s newest culinary experience, Chef’s Stübli (Stübli means “cozy room” in Swiss German), is an intimate six-course tasting experience in the hotel’s former fondue room.

Only 20 guests are welcomed each evening, Thursday through Saturday, giving Rupert and his team the freedom to create something personal, seasonal and deeply connected to the Rockies.

And there’s a lovely detail I especially love: Rupert or a member of his culinary team will make a “table touch” with each course.

The six-course menu is $180 per person, with optional wine pairings, including a $120 pairing or a special sommelier pairing selected from The Post’s extraordinary cellar of more than 28,000 bottles.

Chef’s Stübli runs November 12, 2026 through March 31, 2027.

Congratulations, Rupert! We can’t wait to see—and taste—what you create in this beautiful new chapter. ❤️

Sunday Recipe Share:

Chipotle Bison Chili from @eatalbertafirst ©

Ingredients:
1 Tablespoon olive oil (and more as needed)
2 Ibs of bison steak/roast cut into small pieces and/or extra lean ground bison (it’s nice to use a mixture and if you like a meaty chili by all means use a total of 3 Ibs of meat)
4 carrots - peeled and diced
2 cups peppers - seeded, diced (use green, yellow or orange)
3 stalks celery - diced
2 large yellow onions - diced
2 chipotle peppers in adobo, diced (Tip: I tried 3 in my recipe testing but that quantity overpowered the dish.
Stick with 2 for balanced flavour.)

An unforgettable evening at @hawthorndiningroom , nestled inside the iconic @fairmontpalliser

From beautifully plated starters and perfectly executed mains to exquisite desserts and handcrafted cocktails, every course was thoughtfully prepared and full of flavour. But what made the experience truly exceptional was the impeccable service: attentive, genuine, and perfectly paced from beginning to end.

As someone who appreciates aesthetics as much as taste, I loved how every plate felt like a work of art before becoming a memorable meal.

A heartfelt thank you to the team at Hawthorn for such a wonderful collaboration and for creating an evening we’ll be talking about for a long time.

🍗🥕 KAREN’S KITCHEN TIPS: EPISODES 7 & 8 : A TWO-IN-ONE SPECIAL!
Why throw away perfectly good ingredients when you can turn them into something delicious?

This week, Karen is sharing two kitchen tips that go hand in hand!

🥕 Tip #7: Save Your Scraps!
Keep two separate bags in your freezer:
1. One for vegetable scraps like onion skins, celery ends, and carrot peels.
2. One for leftover chicken bones and carcasses.

🍲 Tip #8: Make Your Own Chicken Stock!
Once you’ve collected enough scraps, it’s time to put them to good use! Combine your chicken bones and vegetable scraps with water, let everything simmer, and you’ve got a rich, flavourful homemade chicken stock.

It’s a simple way to reduce food waste, save money, and add incredible flavour to your soups, sauces, and favourite recipes.

A little planning today makes for delicious cooking tomorrow!

Do you make your own chicken stock, or is this something you’d like to try?

REPOST from our friends @thecalgaryteafestival - will we see you there?

SO, WHAT EXACTLY DO YOU GET AT THE CALGARY TEA FESTIVAL?

For starters... a lot of tea.

We’re bringing together 20 tea vendors from across Canada and one from Alaska, giving you the chance to wander, taste, discover and meet some of the people who know tea best.

And we’ve made sure you’re properly equipped.

Every attendee receives their own
Calgary Tea Festival tasting cup to use as you sample teas throughout the festival.

You’ll also receive a branded festival tote bag-ready to carry all those teas you swore you weren’t going to buy.

Both are yours to keep as souvenirs from Calgary’s very first Tea Festival.

Taste before you buy.

Discover something new.

Ask questions.

Fill the bag.

Calgary Tea Festival
Saturday, October 24 11 AM-4 PM
Parkdale United Church
General Admission: $15 in advance.

And yes, you’re allowed to bring home more tea than will fit in the bag.

🥧 SUNDAY RECIPE: STONEPOST FARMS’ PUMPKIN PIE

Pumpkin pie season is here, and this one is made from scratch.

This Eat Alberta First recipe from Stonepost Farms pairs a crisp, flaky crust made with their ethically raised pork lard with a rich sugar pumpkin filling. Lightly spiced with ginger, cinnamon and nutmeg, and made extra creamy with milk, butter and eggs, it’s a true taste of fall in Alberta.

One tip from Karen: you really only need a small sugar pumpkin! The first time she made this recipe, she ended up with enough pumpkin for four pies and a coconut pumpkin soup.

Stonepost Farms’ Pumpkin Pie

Makes: Two 9-inch pies
Prep: 60 minutes
Bake: 60 minutes

For the crust:
- 5 cups all-purpose flour
- 2 tsp salt
- ½ tsp baking powder
- 1 lb lard
- ¾ cup ice-cold water
- 1 egg
- 1 Tbsp vinegar

For the filling:
- 1 small sugar pumpkin (about 4 cups mashed)
- 2 cups milk
- ½ tsp nutmeg
- ½ tsp ground ginger
- ½ tsp cinnamon
- 1 tsp salt
- 4 Tbsp melted butter
- 1½ cups sugar
- 4 eggs, beaten

Method:
1. Mix flour, salt and baking powder. Cut in the lard with a pastry blender until the mixture resembles small peas or lentils.
2. In a separate bowl, combine water, egg and vinegar. Add to the dry ingredients and bring together into a ball. Cover and chill while preparing the filling.
3. Preheat oven to 350°F.
4. Cut the pumpkin in half and remove the seeds. Cut into smaller pieces, peel and steam until tender. Mash—you’ll need about 4 cups.
5. Roll out the chilled dough and fit into two 9-inch pie plates. Trim and crimp the edges, then bake for about 10 minutes, until the bottoms are lightly golden.
6. Increase oven temperature to 425°F.
7. Heat the mashed pumpkin in a large saucepan over medium heat. Slowly stir in the milk, followed by the nutmeg, ginger, cinnamon and salt. Stir in the melted butter, sugar and beaten eggs until thoroughly combined.
8. Divide the filling between the prepared pie crusts.
9. Bake at 425°F for 15 minutes, then reduce the oven to 350°F and bake for another 45 minutes.
10. Serve with whipped cream or ice cream and enjoy!

Save this recipe for your next fall gathering. 🍂

🌻 Food Artisan Friday: Prairie Gardens & Adventure Farm

What started as a family farm has blossomed into a place where food, fun, and community come together! 🌱

Meet Tam Andersen, the owner, farmer, and self-proclaimed "Director of Fun" at Prairie Gardens & Adventure Farm in Bon Accord, Alberta.

The farm's roots stretch back to 1898, when the land was first homesteaded along the historic Athabasca Landing Trail. In 1956, the Chedzoy family established Prairie Gardens, and today, Tam continues its legacy of hospitality with a passion for local food and agri-tourism.

In 2008, Tam launched the farm's first Community Supported Agriculture (CSA) program, growing vegetables on just two acres. Since then, Prairie Gardens has expanded to 25 acres, producing everything from pumpkins and strawberries to apples and fresh vegetables. 🍓🎃

But what makes Prairie Gardens truly special is its commitment to community. The farm supports more than 10 local farmers, partners with food banks, gives back to local charities, and welcomes families to experience the joy of farm life through festivals, workshops, and hands-on activities.

For Tam, farming is about more than growing food. It's about bringing people together, supporting local agriculture, and creating memories that last a lifetime.
