Our first challenge for the World Class Global competition was to showcase our country/city and our bars, and create a cocktail worth travelling for.

The green flash is a rare sunset people from all over the world travel to the Cayman Islands to try and experience.
Conditions have to be just right- weather and temperature perfect. It is just one of the reasons that Grand Cayman is such a special destination.
Apart from the incredible beaches and perfect sunsets, it is as the sun goes down that the island really comes to life and our incredible hospitality scene wakes up.

Tanqueray No. TEN gin, local fig leaf, ripe banana, dry vermouth and a cold coconut foam layered above it - two perfect environments, coming together.

2000 classes!

Not 2000 perfect classes but 2000 times I showed up. Sometimes happy, rested, celebrating, excited but sometimes tired, sad, recovering, or upset (I highly recommend a rage ryde to turn your day around when life is annoying!)

8 years of 25 classes a month, countless tapbacks, jumps, motor cycles, sprints and climbs, 1 pandemic, 7 Rydeathons, psycho cycles, christmas bingos, charity Rydes, visiting friends and family, Speed Rack Rydes, birthdays and milestones :)

@rydecayman is not just an exercise class, its community and its having something that is always there for you! Thank you so much to everyone who turned up for me today...what a crew and what a vibe! by @ambalamb6

Globals bebeh!!!

15 years I have dreamed of being able to say that…
Words fail to justify how much this means, making @worldclass globals has always been my everest and it took a few years and few go’s.
This year was truly special, seeing the unity of Grand Cayman come together and support each other through this competition was something to behold.
Congratulations to the other finalists and a special mention to @elitecocktails it was truly a pleasure sharing the stage with you till the end.

None of this would have been possible without @ambalamb6 and her constant coaching and support to myself and the other finalists.
And to my wife @zannasm, this award is yours as much as it it mine, you inspire me and push me every single day, we have been a team from our first day and till our last!

We as bartenders can have a tremendous impact on the ecosystem with our everyday actions.

Living on an island surrounded by the Caribbean Sea, I notice how mother-nature is continuously changing and shaping what we use to see as granted natural features: our beaches. Due to global climate changes and the progressive rise of the sea level, coastal erosion is becoming a real threat for those hospitality businesses all around the world who rely and totally depend on their immaculate sandy beaches.

But there is a rising star: glass bottles. Did you know that glass bottles who often are seen as trash, can be crashed into sand and help restore depleted mangroves and seagrass population, helping to directly contrast coastal erosion? Also, did you know that crashed glass sand can be mixed with organic compost to create a fertile low-carbon footprint soil for growing food crops?

Non-profit organisations such as GlassRoots.KY, supported by the UK Darwin Initiative, are strongly committed to create a sustainable and eco-conscious future in the Cayman Islands. Cocktail Of The Day -JW Black Label Pop Up #28

Here we are! 1 whole month of #JWBlackLabel deliciousness 😋

NIGHT NOG
1 1/4oz (37ml) JW Black Label
1/2oz (15ml) Luxardo Angioletti
1 Cup Almond Milk
1 Teaspoon Blume Nut Nog
(Cashew milk powder, Maple sugar, Vanilla, Cinnamon, Nutmeg, Ashwaghanda)

Heat the almond milk and Nut Nog powder in a pot, pour onto the JW Black Label and hazelnut liqueur in a heat proof mug. Garnish with a piece of Scottish shortbread.

Johnnie Walker Black Label has forever been a wonderful night cap! It is even more comforting and warming with the addition of baking spices, adaptogenic ashwaghanda and heated temperature.

Cocktail Of The Day - JW Black Label Pop Up #24

FIX MY SHOES
2 1/2oz (75ml) JW Black Label
1/2oz (15ml) Sumac Syrup
1 Tablespoon Frozen Blueberries
2 Drops Tangerine Oil
2 Drops Grapefruit Oil

Shake all ingredients and double strain into an oversized sour glass filled with crushed ice. Top with frozen blueberries 🫐

This #JWBlackLabel cobbler is icy but sooooo flavourful! The oak character shines through and is so luscious with the deep blueberry flavour and subtle acidity if the Sumac......yum

Cocktail Of The Day - JW Black Label Pop Up #22

LOVE IS SPICY
1 1/2oz (45ml) JW Black Label
3/4oz (22ml) Strawberry, Black Pepper, Honey Syrup
3/4oz (22ml) Lemon Juice

Shake all ingredients and strain into a chilled coupe, garnish with a basil leaf

This spiced up version of a whisky sour gives space for the smoke and spice notes of the #JWBlackLabel to come to the forefront and leave a nice kiss of heat on your lips.

Cocktail Of The Day - JW Black Label Pop Up #19

TOPLESS
2oz (60ml) JW Black Label
4 Dashes @bittered_sling Clingstone Peach Bitters
Limoncello La Croix

Build all ingredients on ice back into the La Croix can that has had the top removed with a @drafttop. Garnish with a dehydrated half moon of orange and a fresh lemon wheel.

As we keep walking towards a brighter tomorrow, by 2030 all production of Johnnie Walker whisky will be net-zero carbon and they will be using 100% renewable energy across all direct operations.

JW is looking at everything ‘from grain to glass-in-hand’ so I was inspired to make a sustainable, repurposed and reusable vessel for this serve 🌟🌟

Cocktail Of The Day - JW Black Label Pop Up #16

MELON-DRAMATIC
1 1/2oz (45ml) JW Black Label
3/4oz (22ml) Cantaloupe Syrup
Top Sparkling Sake

Shake JW Black Label and syrup, strain into a chilled Nic and Nora. Top with sparkling Sake (around 1 1/2oz). Garnish with a green tea pocky stick

The cantaloupe syrup is a beautiful segway between the fruity richness of the #jwblacklabel and the grainy effervescent fruit of the Sake. The green tea binds it all together with an earthy crunch
