Always in the mood for pancakes 🥞

Dry:
1 cup flour
2 tsp baking powder
1/4 tsp each of cinnamon, cardamom, ginger, and nutmeg
1/4 tsp salt

Wet:
1/2 cup Delica pumpkin puree
1/3 cup Greek yogurt or skyr
1/3 to 1/2 cup milk of choice
1 egg

Cooking/Serving:
Butter
Maple syrup

For thick fluffy pancakes:
• Combine the dry and wet ingredients separately, then fold them together until just combined (a few lumps are fine).
• Let the batter rest for 10 minutes.
• Cook over medium-low heat with the pan covered for a couple of minutes, then flip and cook the other side uncovered.
