Minted Memory “Recipe”

Minted Memory is a delightful collaboration between Chef Hoss Zaré and mixologist Reza Ismaili. This cocktail recipe is inspired by the famous Iranian refresher soft drink, Sekanjebin. Known for its unique combination of vinegar and mint, Sekanjebin helps combat dehydration during hot summer days. The result is a refreshing and sophisticated beverage perfect for any occasion.

Servings: 1

Ingredients

For the Sekanjebin:

• 1 cup water
• 3 cups sugar
• 1/3 cup red wine vinegar
• 3-4 fresh mint sprigs

For the Cocktail:

• Cucumber
• 1 ounce Pimm’s No. 1
• 1 ounce gin
• 1 ounce fresh lemon juice
• Soda water
• 1 mint sprig, for garnish

Instructions

To Make the Sekanjebin:

1. In a small saucepan over medium-high heat, combine the water and sugar. Simmer for 10 minutes until the sugar is completely dissolved.
2. Add the red wine vinegar and simmer for an additional 2 minutes. Remove from heat.
3. Add the mint sprigs and allow the mixture to cool. Strain before using. Sekanjebin can be refrigerated for up to one week.

To Make the Cocktail:

1. Using a wide vegetable peeler or mandolin, slice the cucumber lengthwise to create a long strip. Wrap the cucumber strip around the inside of a Collins glass and fill the glass with ice cubes.
2. In a cocktail shaker, combine the Pimm’s No. 1, gin, lemon juice, and 1 ounce of sekanjebin. Shake gently.
3. Pour the mixture into the prepared Collins glass. Top with soda water and garnish with a mint sprig.
