POSTS STORIES REELS TAGGED
During the Coffee Science and Education Summit we asked 20 coffee professionals to write down (in 60 seconds) what comes to mind when they think of Gen Z & coffee.

The answers drew a surprisingly narrow, aesthetic-heavy persona:

Iced. Colourful. Shareable.
Fun first. Ritual later.

This post aims to highlight the mental shortcuts we all might carry before designing for a generation that is far more complex than this first image suggests.

This was the before. The real work started afterwards during the workshop at ZHAW Coffee Excellence Center. taken in Geneva Switzerland by @andre_eiermann

In the last 24 hours, we received more than 100 survey responses. From Gen Z, and from this week’s Coffee Science & Education Summit workshop participants.

We did a first quick comparison.

🌈 Some answers made us laugh out loud (I am sure you will find them).
🌈 Some surprised us.
🌈 Some showed very clearly where our blind spots still are.

We realised:
☀️ We haven’t looked deeply enough at mental health Coffee Foundation
☀️ We underestimated formats without caffeine
☀️ We didn’t fully consider people joining coffee spaces without drinking coffee at all

Before the workshops, we’ll do a proper comparison to understand how we compare to Gen Z: Sun Huang and Frédéric Lamon, you will need to do some more number crunching.

Research - ONCE AGAIN! - did what it should do: CHALLENGE OUR ASSUMPTIONS! We still have so much to learn. Let’s learn, share and grow together.

Looking forward to continuing this exploration at ZHAW Coffee Excellence Center. taken in Geneva Switzerland by @andre_eiermann

World Barista Championship Analysis 2021 to 2025

What a journey it has been. From face masks in 2021 to Milan 2025: five years of watching, tasting, and above all documenting every competitor.

This project started with a simple goal: Analyse all competitors, share the insights, and help our coffee community learn, share, and grow together.

The full analysis is now out; from Panama Gesha espressos festivals to the evolution of milk beverages, origins, brew ratios, and post-harvest processing.

And at the end, I share four pages from my book Inspire and Get Inspired. I hope it will serve you as a little helper for everyone who wants to experiment with espresso and milk recipes.

Shall we? 1, 2, 3… let’s collaborate and learn together. taken in æmē.cafe by @andre_eiermann

On 24 November, I will be speaking at the European Coffee Symposium in Berlin. But I won’t be alone.

More than 1,000 Gen Z survey participants will be speaking through me, together with Henry, my digital twin.

It all started at home when I asked Isabella for an espresso and she handed me an Iced Matcha Latte instead. That was the beginning of a fascinating journey into the world of Gen Z and coffee.

Since then, we’ve listened to young people, explored their habits, needs and desires, and learned more than I could ever have imagined.

Together with Sun, Frédéric, and Henry, we’ve spent months making sense of what they shared with us.

Isabella is delighted that her generation finally gets a voice in the coffee industry. And Henry is already wondering whether he needs his own speaker badge. 😂

Looking forward to sharing our findings at Allegra ECS+COHO in Berlin!

Some people told us Functional Coffee was a fantasy!

... that we were overthinking it.
... that coffee should just stay coffee.
... that we were probably spending too much time in the mountains.

Fair enough. 😇

So while riding the train down from the Alps toward civilisation... on our way to Deloitte to talk about the Future of Coffee, we looked out of the window and thought:

Wait a second…
First Nespresso gives us Coffee+.
Then Lavazza launches Coffee& with Collagen + Zinc and Vitamin B6.

Suddenly the thing that was supposedly “crazy” starts looking suspiciously… real. 👀

... almost as if coffee is no longer just about coffee.
... almost as if coffee is becoming a functional platform.
... almost as if the future arrived while some people were still comfortably discussing yesterday. ☕️

To be fair: they may have the bigger titles, the bigger salaries, the bigger meeting rooms.

But we have something else: We get to watch the category move in real time.

And honestly, that is much more fun.

Our read is still simple:
🔍 Nespresso put function inside the coffee
🔍 Lavazza is now doing the same
🔍 Oatly put function into the “milk”
🔍 Satisfy built function around the whole beverage

So no, we were not crazy.

We were just annoyingly early. 😂
T
o everyone who told us this was not going to happen: come join us tomorrow morning for a coffee at Moody in Chamonix.

We’ll be nice. Mostly 🤣.

And after that, we go back to the mountains... because unlike a few boardroom conversations, fresh snow actually moves things forward. ❄️ by @andre_eiermann

The future of coffee is not always coming. Sometimes it is already here: When will Espresso Concentrates finally arrive in B2B coffee?

Many people keep asking us this. And we keep thinking:

Where have you been the last years?

The conversation today often points to recent at-home launches from Nestlé or JDE Peet’s brands and assumes the “next step” will be coffee shops.

But two years ago, we were already looking at Blue Bottle Coffee pop-up at Hong Kong Airport, operating with espresso concentrates based on Blue Bottle Craft Instant Coffee.

Even Modbar reached out to us, asking for the photos (we are good at making photos, André kind of worked as a fashion photographer 🤣 ).

So maybe the question is not: “When will this happen?”

Maybe the better question for you is: “Why did so many people working on ‘the future’ fail to notice when it was already happening?”

Yes, we sometimes have naughty thoughts 😈 !

That is the problem with looking at innovation only through the lens of your own category, equipment architecture or personal preference.

You just have to open your eyes.

The future of coffee is not always coming. Sometimes it is already here.

Capsule Coffee is on the MOVE!

We are currently working on three keynotes: The Gen Z Day Rhythm (4F & 2R Model), Functional Add-ins & Espresso Concentrates, as well as... CAPSULE COFFEE (which is still somehow the closest to our hearts).

Ennio Cantergiani from Académie du Café asked us about the EXTRACTION YIELD of the new Nescafé Dolce Gusto NEO and Nespresso Vertuo capsules.

First of all, we firmly believe, that, as a coffee professional you should have both machines at home. Then you just need a refractometer and a scale. That’s all equipment you need. Hence no need to send us naughty private messages about industry espionage (that made us laugh a lot 🤣). ANYONE CAN DO THIS AT HOME. The dose-in is written on the packaging, and you have the scale for the dose-out. The stopwatch should be on your phone, and a refractometer is only USD 200.

MILK/ICE CHANGES THE (N)ESPRESSO RECIPE. New capsules systems deliberately build higher TDS-shots for milk and ice.

If you want to discuss... you know where to find us. We sit over a cup of coffee at Moody in Chamonix. Why do you not join the discussion, so this is a two-way conversation. Coffee is on us, muffin on you 🎁 .

PS: Do not ask whether we have tasted the coffees. We have, and we have tasted them with oat, dairy, matcha, collagen, Vitamines, Red Bull, Monster, Fruit Juices, etc. 😈

Let’s celebrate espresso diversity ❤️!

There is a rather big gap between the highest and the lowest TDS we measured over the last ten years 💥.

We love looking at the TDS and we firmly believe we should play with espresso recipes to the absolute max 🫯! taken in Chamonix, France by @andre_eiermann

Dear Nescafé Dolce Gusto, Nespresso, CoffeeB & Lavazza: I think you may have accidentally made our 10-year coffee experiment much more interesting. 😈

In 2016, capsule coffee lived in a remarkably narrow TDS world. Over the last ten years we measured you over and over again.

We were surprised that the median moved from 2.9% → 3.3% TDS.

👀 Have a look at the spread. That is the interesting part.

New capsule systems are stretching coffee in both directions, from below 1% to around 9% TDS.

After ten years of measuring coffee around the world, this is exactly why we keep carrying a refractometer. 🤣

The boxplot tells the story. The capsules explain why. by @andre_eiermann

Over ten years, we collected 2,000 TDS measurements across 64 countries and 223 cities, providing a broad observational view of espresso strength across markets.
Now it is the time to look into the data to prepare for our talk at @zhaw.coffee.excellence.center.

What would you like to know about our project and what are the questions you have regarding our TDS measurements.

We are happy to answer, and your question might end up on a slide (with the answer, of course). by @andre_eiermann

Dear Nestlé Nespresso SA & Nestlé: I think you may be starting to regret giving us access to the internet. 😈

First, we analysed your NESCAFÉ Espresso Concentrate format.

Then we built our own Functional Coffee Behavioral Operating System from proprietary Gen Z research, mapped need states, functional permissions, and the white spaces still open in the category.

Now we looked at your Coffee+ for Vertuo: added caffeine to support focus, Vitamin B12 to support immunity, Vitamin B6 to reduce fatigue, and ginseng for a mindful morning.

At which point, we obviously had to map the whole thing. 🤣

Nespresso is starting to build jobs around ingredients: FOCUS. ENERGY. FATIGUE. IMMUNITY. MINDFULNESS.

Which is remarkably close to what our research kept telling us: Functional Coffee starts with the job, not the ingredient.

But now comes the dangerous part. YES! Henry thinks this can get dangerous. 👻

Once you map the existing portfolio against the full consumer need-state system, the white spaces become very visible.

While BOOST is taking shape, REGULATE still has room.

And between need state, ingredient permission, format, occasion, and geography… there is a lot more territory left to play with.

So, Nespresso, if you’re reading this: I think we need coffee. Again. 😂

Come to Chamonix to Couloir.

The coffee is on us. You will pay for the cheese toasties. 🧀

And you can explain why you keep launching products that make our consumer labs this much fun to analyse.

Henry will behave. Most probably... and we believe you need a Henry too 🔍

Henry & André On The Road.

Yesterday we introduced our slightly unusual way of studying coffee-shop operations.

Today, a clarification:

The Ray-Bans are to look cool 😎.

The horses are for scalability. 🐎🐎

We are still looking for 20 to 30 coffee shops willing to let us test and refine the system.

Analysis is free. You receive your own operational report.

Clothing remains negotiable. We come on horses 🤣 by @andre_eiermann
