Calling all Welsh bakers! The first-ever Wales’ Best Croissant competition is coming, and we want to see our incredible Welsh bakeries getting involved! 🏴󠁧󠁢󠁷󠁬󠁳󠁿✨

As self-confessed Pastry Pilgrims, we’re always on the hunt for the best croissants, so we’re VERY excited to see this one!

🥐 Open to registered bakery businesses across Wales
🏆 Submit six plain croissants to be judged on appearance, lamination, texture and flavour
♻️ Get creative with a Best Off-Cuts Bake using leftover pastry
🧈 No entry fee, plus free cultured butter sheets to help perfect your bakes!

📍 Where: Treberfydd House, Bannau Brycheiniog National Park

Sunday in the kitchen 🥘
Cooking up an Asian Feast
Remembering the late, great Bill Granger who really popularised this cuisine giving it a fresh modern approach.
I love his book pictured here, it’s one for your collection 💕
I had the honour of working with the great man @afoodfestival some years ago, such a talent and a real gent 💕
Loved cooking our feast with guests on Sunday here at 101-
Slow Cooked spiced pork shoulder, plum sauce, pancakes
Beef rendang
Stir fried rice with greens and tofu
Spiced butternut soup with chilli, coconut and Curry Puffs 😋💕

What an inspiring trip last week to @halenmon on Anglesey.
A huge thank you to the wonderful co-founder Alison Lea-Wilson and her beautiful daughter Jess for hosting us.
I remember when this amazing pure product first came to market many years ago, and now it is a well deserved world class ingredient.
Even Barack Obama has sampled it in his favourite chocolate caramels topped with flakes of Smoked Helen Mon Sea Salt!
I just love the stunning book pictured here “The Coastal Armagnac’” that Jess has so brilliantly written, it encapsulates the coastal environment of Wales so beautifully.
I have always loved this sea salt, and had such fun shovelling some of it in the production unit.
The salt tasting reminded me of just how tall it stands alongside other salts, just a little in recipes , both savoury and sweet make the other ingredients sing.
A little relaxation literally turned into a barrel of laughs as we bathed in barrels of warm water and mineral rich seaweed, looking out at the sea and amazing mountains. I had seaweed on my hair, apparently it’s good for it!
I was tagging along with the crew from @castledairies who have collaborated with Helen Mon to create the best butter you can spread on a hot crumpet! And a whole lot more, it is simply delicious 😋
4.5 hours there and back, wow it was worth it, and we loved our car boot picnic featuring some delicious cheeses brought @andcaws_cheesemonger, Menai Bridge.
80’s carpool karaoke also helped.
Big thanks to my lovely sis in law behind the wheel, and my brother for the invite 💕 it was a blast!!

Sometimes I get the opportunity to do something really lovely. Here are some highlights from a beautiful wedding, where I had the honour of preparing the fabulous feast a couple of weeks ago.
Thank you to all the amazing local suppliers in Pembs @trealyfarmcharcuterie @ribnoyster
and our friends @microacreswales
The menu included local lobster and Tomahawks cooked over fire. The wedding cake was an alternative Basque Cheesecake served with local berries in cassis and Olorosso Chantilly cream.
We had a ball preparing and serving it all to an amazing crowd who were the bride and groom’s closest friends and family.
Huge congratulations to Anna and Rich, and Bon voyage !!
Thank you everyone who helped, and thank you lovely people for letting me do this for you. 💕💕💕💕💕

Having worked most weekends for more than 40 years as a chef, Mondays have always been my Saturdays 😊
So yesterday evening I fired up the BBQ and cooked Jerk Chicken, a special recipe from our friend @melissafood , taken from her beautiful book Motherland.
What a feast cooked over branches of bay and pineapple sage,hot smoked with apple wood.
We also pigged out on warm potato salad, using spuds from my @oddboxldn, plus peppers, sweet corn and aubergine.
I also used up some bits in the coffin drawer of the fridge to make fresh shredded pickled veg with dill.
It wasn’t a night out in a club like the old days, but god it was good grub!

So 30 years ago I was in France having just tied the knot with Mr.Gray, an absolute saint. So to celebrate the fact that we are still here, I cooked a feast featuring two of our favourite French dishes.
First, the most delicious croquettes monsieur, oh my it was good!! I have given guidelines below so that you can join in the mmmmmming.
Having not consumed enough calories, I then served up créme brûlée! Oh my it was good.
Croque Monsieur
You need good sliced Farmhouse bread, lightly toasted on either side. Butter well and then smear with Dijon mustard. Top with a dollop of good béchamel sauce, then a good covering of grated Comté cheese and a folded slice of really good ham. Top with another dollop of béchamel, then pop the lid on. Lavish the top with more béchamel, be genorous, and even more generous with a good helping of Comté. Preheat your oven to the max, bake for about 12 minutes until you are looking at a golden bubbling mass. Hurrah! It’s ready!!

Days off recently have been really lovely-

A yummy tomato and olive salad
The essential thrice cooked chips
Baked a cake for someone special
Picked beautiful hydrangeas from my garden.
I am off today after a manic past week, so am dreaming up the next things to do.
Oh, and catching up on my favourite radio show!

Tune in to @bbcradio4 tomorrow morning at 10.30am and hear us literally melting over the airwaves on one of the hottest 🔥🥵☀️days this year! However, the hospitality was great, we were well looked after by Barney and his team @sandfordorchards. As always, great fun to see the gang, and chat molasses, crayfish 🦞 and lots of other ingredients in the mix.

Enjoying a lazy Sunday morning with Mr. Fox ahead of everyone arriving home later this afternoon. So whilst it is beautifully tranquil, I am
catching up on some reading, starting with this lovely treat from @styleofthecitymag. Rosie Harris, the magazine’s founder and editor in chief has created a fabulous mix of lifestyle features that inform and inspire. In the latest issue there is a great focus on the independent fashion retailers in The Vale, including @valepreloved, that I plan to visit very soon. Another gem that caught my eye was @mor_a_sawna, that is definitely a place I want to be, especially after a gruelling week on my feet, the heat and the view will be the perfect antidote to a tired, aching bod!

Oh, and just before I sign off, yours truly contributes regularly to the magazine sharing recipes and my culinary wisdom.
