Sauerkraut

I had a few heads of cabbage growing in the garden that had split due to rains, so I harvested them and used them to make sauerkraut. I let it ferment for about 2 weeks. My house stays cool in winter and spring, so depending on how warm your space is, and how sour you like your kraut, the fermentation can take longer or less time. It is important for the liquid in the jar to reach a PH lower than 4.0, to ensure that the ferment has enough acidity to preserve the food. My kraut was at a PH of 3.6, when I transferred it into the fridge yesterday for long term storage. The recipe I use includes some grated carrot and ginger, which adds a nice touch. If you like sauerkraut and you have never tried your hand at making it at home, I recommend you give it a shot. It's loaded with lactic acid bacteria that boost your gut microbiome health. There are lots of videos available online. I like the lady that runs the Clean Food Living channel. Unfortunately only available in English.

Chucrut

Split cabbage and flowering broccoli.
This March is the wettest we have seen in a very long time, and while you will never hear me complain about rain, there can be some vegetable garden consequences. I had 2 mature heads of cabbage left over and they have both split due to the rains. Although these would spoil quickly now that they have opened up, I can use them for Sauerkraut. The kraut will be ready in about 3 weeks, and it will keep for months in the fridge. The left over broccoli is flowering, but that has more to do with day length than anything else. Most brassicas are biennial, which means that they will grow and then flower and set seed within a two year cycle. I start the plantings in late summer, they grow through the colder months, form heads, and if not harvested, they will begin to flower as soon as the days grow longer and temperatures warm up. I will generally leave a few to complete the cycle, since the bees love the flowers, and we like to share with all of our garden allies.

Mist and rain. We've had a really good month of rain so far, 4 inches and counting. We depend on our spring rains, and the garden soil is soaking it all up, so I have no complaints, but I could use a few warm and sunny days as well..

Lluvia y niebla.

The patience of cats when hunting.
Something ran behind the barrel, and they have been parked there for about 2 hours, waiting for the prey to come out. It’s not about to.. it’s a standoff..

Celery in the winter garden. I grow celery every winter, mostly for the leaves. The leaves are higher in fiber, vitamins, minerals, antioxidants and polyphenols than the stalks, and pack a flavor punch. They survive well during our fairly mild winters, but I do cover them with row cover fabric when nights dip below freezing. I have noticed that a freeze can rupture the cell walls in the stalks, but doesn’t seem to harm the leaves as quickly, probably because most of the water in the plant is stored in the stalks, and they are therefore more susceptible to freezing. I set out celery in late summer /early fall, so by the time we see our lowest temperatures, the plants have had a while to grow and adapt to the cold. I harvest them a stalk or two at a time, so the plant just keeps on growing. They add a delicious flavor to beans, soups and salads.
