Tenuta La Novella Chianti Classico Dinner!

Perched at 500 metres in the heart of Tuscany, Tenuta La Novella is a beautiful estate within the Chianti Classico appellation. The 188-hectare estate was once abandoned, before being brought back to life.

Since 2015, Simone Zemella has been at the helm, further developing the estate with a strong focus on organic and biodynamic farming. The vineyards cover 13.5 hectares, planted between 350 and 650 metres above sea level across 15 parcels. The soils are a mix of schist and sandstone, offering ideal conditions for producing rich, balanced and terroir-driven wines.

Novella focuses on 100% Sangiovese for their Chianti Classico wines, with Simone also experimenting with whole bunch fermentations across different wines.

Come join us as we look at three vintages of Chianti Classico, two of which are magnums, with one being a Riserva. Plus, we’ll take a deep dive into their brilliant Sambrena range.

It’s an honour to be working with the lovely wines of Jérôme Blin.

Let’s talk about Jérôme Blin Champagne Colette Rosé, the first wine I fell in love with from the range.

100% Meunier from the Vincelles terroir in the Marne Valley. The vines average 45 years of age, planted on clay-limestone soils with south and southwest exposure and farmed according to organic principles. Harvested by hand.

A blended rosé incorporating 22% old-vine red Meunier from the Sablonnière parcel. Vinified without filtration or fining, with natural malolactic fermentation. Bottled in April 2023, aged 12 months on lees and disgorged in April 2024. Zero dosage.

Aromas of small red fruits and pomegranate lead into black cherry, blackberry, blueberry, and blackcurrant, with notes of fig, subtle vanilla oyster shell with a chalkiness.

On the palate, vibrant juicy sweet and sour cherry and blackberry with dashes of cinnamon and vanilla. Lively effervescence and fine, chalky tannins give the wine structure and lift. Gastronomic Champagne at its best.

Striking and unconventional, this is a substantial yet fresh and vibrant rosé. Powerful, textural, and distinctive, but still carried by an elegant lightness.

What a line-up! 
The upcoming Champagne Jérôme Blin Masterclass is one not to miss.

Jérôme Blin works his 2ha of parcels around the Vallée de la Marne entirely by hand, with a firm commitment to biodiversity and biodynamics. Pinot Meunier, Pinot Noir and Chardonnay are supplemented by tiny quantities of Champagne's lesser-seen varieties Petit Meslier, Pinot Blanc and Pinot Gris.

He uses a variety of vessels for vinification and ageing, including amphorae, stainless steel, oak barrels and terracotta eggs. Fermented with natural yeasts and undergoing long lees maturation, his wines marry laser-like minerality with generous layers of fruit and a deeply more-ish, savoury character.

Alongside his benchmark Pinot Meunier cuvées, each year Jérôme releases just a few hundred bottles of his sublime single-parcel wines 'Les Ports' and 'Le Champs de l'Epinette', as well as his gastronomic, mineral-driven rosés, 'La Pluchotte' and ‘Colette'.

Few regions in the world capture the imagination quite like Ribera del Duero. Home to ancient bush vines, dramatic high-altitude vineyards and traditional field blends.

I've wanted to host this dinner for a long time. Bringing together the wines of Dominio del Águila and Bendito Destino offers a rare opportunity to explore two of Ribera del Duero's most compelling producers. At Dominio del Águila, Jorge Monzón returned to his family vineyards after honing his craft at Domaine de la Romanée-Conti, combining one of the world's greatest winemaking educations with the traditions of Ribera. At Bendito Destino, former UK Sommelier Of The Year winner Terry Kandylis who worked at London's Ledbury, Fat Duck, head sommelier at 67 Pall Mall and now is a beverage director at acclaimed restaurant group Noble Rot,  has created a deeply personal project centred around very old vineyards and minimal intervention. Both estates share an unwavering commitment to authenticity, tradition and expressing the unique terroir of Ribera del Duero. 

Throughout the evening we'll explore wines from vineyards over 100 years old, co-fermented reds and whites, traditional clarete rosés and rare indigenous white varieties that have all but disappeared. It will also be the first time a bottle of Peñas Aladas has been opened in Australia at a public event, making this a truly special opportunity to experience one of Spain's most sought-after wines alongside the remarkable Bendito Destino range.
