Moonrise represents one of the most compelling contemporary expressions of UAE culinary heritage, translating memory, place and identity into a refined tasting experience that is unmistakably local in spirit and intent.

Founded in 2021 by Dubai-born chef Solemann Haddad, Moonrise emerged quietly yet confidently, redefining what a Dubai restaurant could be. Perched atop a residential tower in Satwa and seating just a handful of guests, it rejected spectacle in favour of intimacy, storytelling and restraint.

From the outset, Haddad’s vision was rooted not in replicating tradition but in preserving it through reinterpretation, capturing the experience of growing up in Dubai and presenting it through a modern culinary lens.

At the heart of Moonrise is a 12-course tasting menu that functions as a narrative journey through the UAE’s cultural mosaic. Haddad channels childhood memories, local references and familiar flavours into dishes that blend regional sourcing with global techniques. His influences range from Japanese robata grilling to Indian street food and American comfort classics, yet the result is never pastiche. Instead, it reflects the layered reality of life in the emirate, shaped by migration, travel and shared urban experience. This synthesis gives Moonrise a distinct Dubai identity that feels authentic rather than performative, and has proven to be a particular hit with those who grew up in Dubai.

The ongoing commitment to local sourcing further anchors it in place, while the menu’s evolution demonstrates care rather than constant reinvention. As such, each dish has been meticulously refined over time, with increasing precision and ingredient quality, underscoring a long-term dedication to craft.

While it has grown in confidence and recognition, Moonrise has retained its core purpose, a deeply personal exploration of UAE identity, told through food. In a city defined by rapid change, Moonrise stands as a rare and valuable counterpoint, preserving the nuances of heritage not by freezing it in time, but by allowing it to evolve with integrity.

Working alongside Chef @solemann.xyz at @moonrise.xyz was truly inspiring. Together, we crafted 4 Hands that reflect our shared respect for ingredients, refined technique, and the art of culinary storytelling.

A massive THANK YOU to the incredible Moonrise team — Chef Soleman, @ash_rosenberg , @pearll_y , @rezaputrarief @pcamerotti @i_am_salah_ – and everyone else whose names my tired brain couldn’t keep up with 😅. Incredible team, amazing vibes, and hospitality on another level.
