Nothing quite like that vortex energy to start off an incredible road trip! 🚙🏜✨

Two weeks ago, @akruisheer and I packed up our bags (and my @nutribullet for celery juice of course!!) & headed out on a week long adventure to celebrate my 27th birthday.

Sedona was out first main stop and we decided to check out Cathedral Rock after grabbing some delicious organic vegan food at @chocolatree (p.s. check them out if you’re in the area, you won’t be disappointed!!)

@Alltrails rated this hike as “moderate” but there were definitely some super sketchy parts we had to scramble up (see the video in the next slide!) but it was SO worth it 😅

Here’s a peek inside my refrigerator after a major trip to @wholefoods & @jimbosnaturally ✨

My current “must have in the fridge at all times” items include: @grindstonebakery GF Flax bread, avocados, @hukitchen Hunks, celery, potatoes, blueberries, spinach & cashew milk.

I almost didn’t want to share this because my first thought was “There is way too much plastic in my fridge!” - but this is reality 🤷🏽‍♀️

Reducing your plastic intake can be tough. I always bring reusable produce bags for things like loose beets and fresh herbs as well as recycle the plastic produce containers when I am done using them ♻️

I would love to be completely plastic free and buy all my organic produce locally but that isn’t quite realistic for me at the moment and that’s ok! You don’t have to be perfect in your pursuit of being eco-friendly & helping the environment. Do what you can, be conscious and GO VEGAN 😜✌🏼🌱

Loving the little bit of rain we got over the weekend here in San Diego 🌧 It doesn’t rain here too often and after the major heat wave we’ve had over the last couple months, the rain is such a treat!!

It’s time to break out the fuzzy socks & cozy sweaters and swap out my @birkenstock for boots! Actually... who am I kidding.. I’ll just wear the fuzzy socks with the Birks unless it’s like, legit pouring 😂

8 Million tons of plastic is dumped into our oceans EVERY YEAR 😳 At this rate, our oceans could contain more plastic than fish by 2050!

Reducing your plastic intake can be challenging but you don’t have to be completely “plastic free” or practice sustainability perfectly to start making a difference.

First and foremost, when you’re out in nature, leave nothing but footprints. Make sure to take all your trash with you & pick up a few extra pieces if you see them!

Try to reduce your use of plastic by using reusable bags, bottles, straws and utensils & educate yourself on what can and can’t be recycled and put them in the proper bins.

Also be sure to take a look at the products you are purchasing and the companies you are purchasing them from. Are those companies making efforts to solve the problems or are they contributing to it?

I recently discovered the new H20Yeah! Collection at @Nixon that is made with recycled ocean plastics. Not only is their ’Stash’ bag perfect for on the go, but it helps support our environment and reduce the amount of plastic in our oceans which is fuckin awesome! ♻️🙌🏼✨

Weekend plans??

Ill be in the kitchen making the most delicious, fudgy, rich Sweet Potato Perfect Pecan Brownies 👩🏼‍🍳🤤

These AMAZING brownies are vegan, gluten free and do not contain refined sugar 😍✨ & they are surprisingly simple to make too!!

Here’s how to recreate them at home:

- Peel & chop one cup of sweet potatoes and boil them until soft and blend in a food processor
- In a large mixing bowl, combine sweet potato purée, 1/2 cup of almond butter, 1/2 cup maple syrup, 1/8 cup coconut sugar and 2 small scoops of powdered monk fruit, 2 tbsp melted coconut oil, 2 tbsp of melted @miyokoscreamery vegan butter, 2 tbsp vanilla extract and mix until smooth
- Slowly mix in 1/2 cup of @navitasorganics cacao powder, 2/3 cup of @bobsredmill All Purpose GF Flour and 1 tsp baking powder
- Chop 1/2 cup of Simply Sweet Perfect Pecans and mix in to the brownie mix (raw pecans or walnuts will also work for this!)
- Line an 8”x8” baking pan with parchment paper and pour in the brownie mix
- Bake at 350 for 20 minutes then add a few Perfect Pecans on the top and bake for another 5 minutes and you are good to go!

Doesn’t get better than homemade, gluten free, vegan & NO REFINED SUGAR donuts! 🍩🤤

I legit used to be addicted to donuts. I grew up within very short walking distance of a delicious bakery inside the Raley’s grocery store that made the most amazing cake donuts with chocolate frosting and rainbow sprinkles.
⠀⠀⠀⠀
Every time I went grocery shopping with my mom I’d get at least one donut, sometimes more if I was lucky and on my 14th birthday, instead of a cake, my parents got me 14 of my favorite donuts.
⠀⠀⠀⠀
When I first started eating healthy and changed my diet a little over 7 years ago, I thought things like donuts were off the table but trust me when I say, there are substitutes for just about everything!! 😄
⠀⠀⠀⠀
I followed the @minimalistbaker ‘s vegan & GF 30-Minute Chocolate Donut recipe (with a few substitutions/edits) and they turned out SOOO effing good. I even had some of my non-vegan/non-healthy-eating friends try them out and they couldn’t believe they were actually healthy!

As we are entering a new season and are almost halfway through the year, I’ve been taking some time to reflect on the last 6 months and get super clear on my intentions for the next 6.
⠀⠀⠀⠀⠀⠀⠀
Traditionally, the Summer Solstice is aligned with the element of fire, passion, will & drive. It represents a time of renewal, new beginnings and embracing the sun & its electrifying energy.
⠀⠀⠀⠀⠀⠀⠀
I have taken this time to begin writing down my goals and create a plan of action that will not only help me to achieve these goals but also help me continue to grow and step into the version of myself that I am desiring to create. I am using this time to connect with my intuition and embrace change & new opportunities. I am continuing practices of meditation, manifesting and caring for body physically, mentally & emotionally while letting go of things that no longer serve me (as cliche as that sounds hah)

2020 has undoubtedly been a bit of a rollercoaster thus far but it has been such an incredible opportunity for self reflection, growth and expanding our knowledge & consciousness. So let’s celebrate this powerful day embrace the new energy surrounding us all ☀️🔥✨

There is no better feeling than being able to go out to you garden and pick fresh herbs or veggies to use in your meals. Gardening is something I picked up about four or five years ago and if you’ve never grown your own plants, let me tell you, it’s super rewarding! 😄👩🏼‍🌾
